2 cups chicken stock
4 medium celery stalks, sliced
3 medium carrots, sliced
½ cup chopped yellow onion
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 teaspoon ground thyme
½ teaspoon paprika
salt and ground black pepper to taste
1 bay leaf
1 pound chopped cooked chicken
4 cups sliced yellow squash

Steps:

  • Combine water, stock, celery, carrots, onion, garlic, parsley, thyme, paprika, salt, black pepper, and bay leaf in a pot. Bring to a simmer, cover, and cook until vegetables are soft, 20 to 30 minutes.
  • Add cooked chicken and squash to the pot and simmer until squash is tender, about 10 minutes more.

½ cup butter
1 cooked chicken breast, cubed
1 small white onion, finely chopped
3 cloves garlic, finely chopped
1 ½ pounds fresh mushrooms, sliced
3 cups chicken stock
3 tablespoons chopped fresh tarragon, divided
salt and freshly ground black pepper to taste
2 cups heavy whipping cream

Steps:

  • Melt butter in a Dutch oven over medium-high heat. Add chicken; saute until lightly browned, about 3 minutes. Add onion and garlic; saute until softened, about 5 minutes. Stir in mushrooms; saute until tender, 5 to 10 minutes. Pour in chicken stock and 2 tablespoons tarragon; reduce heat to low. Season with salt. Cover and simmer soup until flavors are combined, about 25 minutes.
  • Stir cream into the soup; cook until heated through but not boiling. Serve soup with pepper and the remaining tarragon on top.

1 tablespoon olive oil
4 bone-in chicken thighs, skin removed
4 carrots, cut into 1/2-inch pieces
4 stalks celery, cut into 1/2-inch pieces
1 small onion, chopped
1 (32 fluid ounce) container chicken stock
2 cups water
2 cups chopped fresh green beans
2 cups frozen riced cauliflower, thawed and drained
2 cups finely chopped broccoli
½ (8 ounce) can tomato sauce
2 teaspoons chicken soup base (such as Better Than Bouillon®)
1 large bay leaf
salt and ground black pepper to taste

Steps:

  • Heat oil in a 6-quart Dutch oven over medium-high heat. Add chicken thighs and sear, 2 to 3 minutes per side. Remove and set aside.
  • Add carrots and celery to the pan. Reduce heat to medium and cook until softened, about 10 minutes. Add onions and cook until translucent, about 5 minutes. Reduce heat to low and add chicken stock, water, green beans, riced cauliflower, broccoli, tomato sauce, soup base, bay leaf, salt, and pepper. Add chicken thighs and simmer until no longer pink at the bone and the juices run clear, 30 to 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

I ate it along with a green salad. If you're not low-carbing, you can add corn, beans or serve with tortilla chips.

This mexican inspired soup is filling, delicious and low in fat and carbs! You can also add rice, corn or beans and top it with slices of avocado to make it a heartier meal, if you prefer. I found this recipe online and doubled the chicken to meet my diet. Enjoy!

2 tablespoons olive oil
1 medium yellow onion
2 stalks celery
1 medium jalapeno (seeds removed)
3 garlic cloves
1 1/2 lbs chicken breasts
8 cups chicken broth
1 (14 1/2 ounce) can diced tomatoes with green chilies
1 teaspoon oregano
1 1/2 teaspoons cumin
1 medium lime
1/2 bunch cilantro
salt, to personal taste

Steps:

  • Dice the onion, celery and jalapeno. Mince the garlic. Heat the olive oil in a large pot over medium heat. Add the onion, celery, jalapeno and garlic and cook for about 5 minutes or until tender.
  • Add the chicken breast, broth, can of tomatoes, oregano and cumin to the pot. Bring the mixture to a boil, reduce heat to low, cover and simmer for 1 hour.
  • remove the chicken from the pot, shred with 2 forks and return to the pot. squeeze the lime juice into the soup.
  • Rinse the cilantro and roughly chop. add salt as desired. Stir and serve!

1 head cauliflower, chopped, divided

I came up with this recipe during my first phase of Atkins and I needed a break from straight meat and green beans (God, would I love a piece of pizza right now) Nevertheless, I basically just used what I had available at the time, however, my roommate tried this soup and thought it was great. So, I thought I would share it with the rest of you.

2 lbs chicken breasts
1 cup bell pepper (chopped)
3 garlic cloves
1 small sweet onion (chopped)
1 1/2 cups chicken stock
1/4 cup butter
1 chili seasoning mix (I use McCormick Hot taco seasoning)
1 (14 ounce) can tomatoes (canned or chopped or stewed)
1/2 cup green chili (canned or fresh)

Steps:

  • Cut chicken breast into chunks, sized to your liking (bite-size).
  • Sauté bell pepper, garlic and onion in butter.
  • Add chicken to the pan with bell pepper, garlic, onion, and butter. (season to taste) cook chicken just to to the point where it begins to change color (cooked-color).
  • Preheat crock pot and add chicken stock, tomatoes, green chilies and the remaining ingredients from the pan.
  • Stir in taco or chili seasoning.
  • Set crock pot to high for around 45 minutes and reduce heat to low until ready to serve.
  • Garnish with sharp cheddar and sour cream.
  • NOTE: If you would like a little thicker more chili like consistency, cook uncovered, and maybe add a small can of tomato paste.

1 tablespoon butter
5 skinless chicken thighs
2 tablespoons chicken base (I like the chicken base that moist and paste like)
3 (14 ounce) cans chicken broth
1 onion, finely chopped
1 bunch celery, chopped
4 carrots, peeled and chopped
1 pinch garlic salt
1 pinch pepper

Steps:

  • Season both sides of the chicken thighs with the garlic salt and pepper.
  • In a 5 qt sauce pan, heat butter and be careful not to burn it.
  • Brown both sides of thighs in the butter and add chicken base.
  • pour broth over the chicken and bring to a boil and keep boiling until chicken is cooked through.
  • chop all vegetables.
  • remove chicken from the broth, and add veggies to the pot.
  • chop the chicken into chunks and remove bones and return to the broth.
  • simmer until the veggies are tender and season the broth to taste.
  • (i sometimes add another tablespoon of butter to the broth to make it more rich).
