1 1/2 cups Splenda granular (sugar substitute)
4 large eggs
4 large egg yolks
1 tablespoon vanilla
6 tablespoons cocoa

Steps:

  • Preheat the oven to 350 degrees.
  • Melt the chocolate and butter together on stovetop or in microwave.
  • Add the splenda, eggs, egg yolks, vanilla and cocoa, stirring until well blended.
  • Pour into a 9 X 13 inch pan (spray with vegetable spray and dust with cocoa).
  • Bake at 350 degrees for 50 minutes.

1 cup finely ground almonds
1 3/4 cups Splenda sugar substitute
1/2 teaspoon baking powder
1/2 teaspoon salt
4 ounces unsweetened chocolate, chopped
1 cup unsalted butter
4 extra large eggs (beaten)
2 teaspoons vanilla
1 cup toasted & chopped pecans (or walnuts)
5 ounces cream cheese (optional)
2 tablespoons Splenda sugar substitute (optional)
1 tablespoon cream (35% or heavy) (optional)
1 cup whipped cream (35% or heavy - whipped stiff) (optional)

Steps:

  • Preheat oven to 350.
  • Grease well a large baking pan (9 x 13).
  • Over a medium bowl, sift ground almonds 3 times.
  • Add Splenda, salt& baking powder- mix well.
  • Meantime over double boiler or in microwave, melt butter& chocolate.
  • Once melted, remove from heat& quickly whisk in eggs (should be pudding-like consistency).
  • Add melted chocolate/butter/eggs mixture to dry ingredients.
  • Mix well then add chopped nuts, mix well again.
  • Pour into well greased pan& bake for 15-20 minutes (check after 15 minutes- do not over bake).
  • While brownies are baking prepare topping: Allow cream cheese to come to room temperature.
  • (Using hand mixer) blend in Splenda& add cream.
  • Fold in whipped cream.
  • Mixture can rest in fridge while brownies cool then either shmear onto cut brownies, or pipe rosettes.
  • These brownies also freeze well (even with topping).
  • For those than can afford additional carbs, drizzle a small amount of chocolate sauce on top of the rosette& scatter a few fresh raspberries on the plate.

1/3 cup agave nectar
1/3 cup cocoa powder (unsweetened)

1 large egg
2 tablespoons mini chocolate chips
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and grease a 12-cup muffin tin.
  • Combine the first seven ingredients (beans through baking powder) in a blender or food processor until smooth.
  • Stir in the egg, chocolate chips, and walnuts (if desired).
  • Pour into muffin tin, bake at 350 for 20 minutes.
  • Cool for 10 minutes before serving.

I was given a pamphlet on recipes that use beans and the original recipe for these brownies was included. I switched the sugar to Splenda, the eggs to egg substitute (or the same amount of liquid egg whites) and the vegetable oil to canola oil. They're just as good as a traditional brownie but you won't feel bad letting your kids eat them (and eat them they will)!

1 (15 1/2 ounce) can no salt added black beans, rinsed and drained
3/4 cup egg substitute
3 tablespoons canola oil
1/2 cup cocoa powder
1 pinch salt

1 teaspoon instant coffee granules (optional)

Steps:

  • Preheat oven to 350.
  • Spray an 8x8 square baking dish with cooking spray.
  • Combine the black beans, egg substitute, canola oil, cocoa powder, salt, vanilla extract, Splenda and instant coffee granules (if using) in a blender; blend until smooth.
  • Pour the mixture into the prepared dish. At this point, you can also sprinkle chocolate chips over the top of the mixture, if you're not watching your calories.
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the side of the pan, about 30 minutes.
  • I've also noticed that the texture gets better after being refrigerated.

It's not the best thing in the world, but when you have to have something kind of sweet and you haven't had your soy protein yet, give it a shot--you might like it.

3 tablespoons baking cocoa
2 small apples
4 large egg whites
1 teaspoon vanilla extract
1/4-1/2 cup Splenda granular, to taste
1/2 cup soy protein isolate, that can be used in baking
1/4 cup wheat gluten flour
1/4 cup rye flour (this is just one that I had around, you can use others I'm sure it would work)
1/4 teaspoon mortons low sodium salt
1 cup chopped nuts (I used almonds)

Steps:

  • Core apples (do not peel everyone can use more fiber).
  • Chop the apples up in your food processor into 'minced garlic' sized bits add a bit of water to help the process.
  • Toss the apple bits in a pot or a skillet and heat up just before the juice boils then add the cocoa powder.
  • Mix it all together so the cocoa is all melted and well blended set aside to cool.
  • Mix the flours, soy protein and salt and sift.
  • In a separate bowl beat egg whites vanilla and Splenda until soft peaks appear.
  • Add flour mixture to the egg mixture and blend well then add the apple-cocoa sauce and blend.
  • Mix in the chopped nuts if desired.
  • Bake in a non-stick 8-inch square pan for 20-25 minutes at 350°F.

1 1/4 cups plus 1/2 tablespoon soy flour
4 ounces unsweetened baking chocolate
1/2 cup unsalted butter
2 cups sugar substitute (recommended: Splenda)
1/2 cup heavy cream
5 large eggs
1 tablespoon no sugar added vanilla extract
2 teaspoons baking powder
1/2 cup chopped walnuts
Low Carb Chocolate Frosting, recipe follows
3 tablespoons unsalted butter, softened (not melted)
5 tablespoons unsweetened cocoa powder
1 cup sugar substitute (recommended: Splenda)
1/3 cup heavy cream
1 teaspoon no sugar added vanilla extract
Few drops hot water, as needed, to thin consistency

Steps:

  • Preheat oven to 325 degrees F.
  • Spray pan with nonstick vegetable oil cooking spray. Set aside. Mix wheat bran and 1/2 tablespoon soy flour together and sprinkle evenly over the inside of the greased pan, also coating the sides.
  • Place the unsweetened chocolate and butter in a steel bowl and melt over a saucepan of simmering water. Whisk in 1 cup sugar substitute and 1/4 cup heavy cream. Once thoroughly blended, turn off heat and keep warm until needed.
  • With an electric mixer on high, beat the eggs, 1 cup sugar substitute and the vanilla extract just until blended. Reduce to low speed and then blend in the chocolate mixture.
  • With a wooden spoon, mix in the baking powder, 1 1/4 cups soy flour, walnuts, and 1/4 cup heavy cream. Spread evenly into the prepared pan and bake on the center rack for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. (Do not over-bake or brownies will be dry and hard.)   • Place all ingredients in a medium bowl and whisk until well combined. Use to frost brownies, but make sure brownies are completely cooled, or the butter in the frosting will melt.
