FRIED CAJUN CHICKEN TENDERS



Fried Cajun Chicken Tenders image

Chicken tenders with a kick! Breaded just right and full of flavor that's better than anything from a box.

Number Of Ingredients 9

2 pounds boneless skinless chicken breasts (cut in to 1" thick strips)
1 1/2 cups all purpose flour (gluten free flour blend works too)
2 tablespoons cajun seasoning (*see notes)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 egg
1/2 teaspoon hot sauce (optional)
1 tablespoon water
3 cups refined coconut oil (for frying (you may also use another high heat oil of your choice) )

Steps:

  • In a large, shallow bowl or dish with sides, add the flour, cajun seasoning, onion and garlic powders. Stir to mix. Taste it to see if you want more spice. Add more if you do, but don't taste it once you've dipped any raw chicken in it. Set aside.
  • In a second bowl, beat the eggs, hot sauce and water. Set aside.
  • Dip one chicken tender at a time into the flour then the eggs, and then back into the flour, pressing to coat the chicken well. Repeat with the remaining tenders and set them aside while you heat the oil. Allow the chicken to rest 3 or 4 minutes before frying so the breading can "set".
  • If using a 12 inch skillet, pour oil to a depth of 2 inches and heat on high to 375 (you can use a thermometer to check if you aren't sure). Slowly add three to four pieces of chicken, reduce heat to medium high, and allow them to fry until just brown on one side--about 5 minutes--then turn and cook until golden on the second side--6 to 7 minutes more. Transfer to a paper towel lined plate to drain and repeat with the other tenders. **Make sure to stay by the stove! If your oil starts to smoke, turn the heat down or pull the skillet off the burner carefully for a minute or two. If your chicken is cooking too slow and the breading is soggy or falling off, turn the heat up.

1 teaspoon poultry seasoning
3/4 teaspoon garlic salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-in. strips
2 tablespoons butter
Italian parsley and chili peppers, optional

  • In a large resealable plastic bag, combine the first six ingredients. Add chicken, half at a time, and shake to coat. In a large skillet, cook chicken in butter for 8-10 minutes or until the juices run clear. Garnish with parsley and peppers if desired.

These chicken strips have plain bread crumbs as well as panko bread crumbs for a nice breading.

nonstick cooking spray
½ cup panko bread crumbs
¼ cup plain bread crumbs
2 tablespoons Cajun seasoning
¼ teaspoon ground black pepper
2 large eggs
1 ½ pounds chicken breast tenderloins
¼ cup all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x11-inch baking pan with cooking spray.
  • Mix panko and plain bread crumbs together in a shallow bowl. Add Creole seasoning and pepper; mix thoroughly. Beat eggs in another bowl.
  • Cover tenderloins in flour, then dip in egg mixture, following with a heavy coating of bread crumb mixture. Place the breaded chicken pieces in the greased pan.
  • Bake in the preheated oven until golden and no longer pink in the centers, about 20 minutes, turning chicken pieces halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 (3 pound) whole chicken, cut into 6 pieces
2 eggs, beaten
1 (12 fluid ounce) can evaporated milk
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 ½ cups all-purpose flour
1 ½ cups vegetable oil for frying

Steps:

  • In a medium size bowl mix together the eggs and milk. Add ALMOST all of the salt, pepper, garlic powder, and onion powder (reserve a dash of each for seasoning the chicken pieces). Set aside.
  • Sprinkle a dash of the remaining salt, pepper, garlic powder and onion powder onto both sides of the chicken pieces.
  • In a large skillet, heat the oil over medium heat. Put the flour in a plastic bag. One piece at a time, dip the chicken into the egg/milk mixture then add to the plastic bag. Shake the bag so that the flour is covering each piece of chicken.
  • You can check to see if the oil is hot enough by sprinkling a little flour in the skillet. If it fries, it's hot enough! Place the chicken pieces in the skillet. After about 5 minutes, turn the chicken over. Let chicken fry for about 15 minutes or until the meat is cooked through and the juices run clear. Enjoy!

This is one of my favourite chicken recipes - tasty, low fat, spicy and easy to prepare. I found it in "Pol Martin's Supreme Cuisine" and have made it many times over the years. Hope others enjoy it too.

1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon ground sage
1/4 teaspoon ground ginger
1/4 teaspoon fresh ground black pepper
1/4 teaspoon thyme
1 teaspoon oregano
1 1/2 tablespoons olive oil
4 boneless skinless chicken breasts, cut in strips
1 1/2 cups chicken stock, heated
1/4 cup black bean sauce (I prefer black bean) or 1/4 cup soy sauce (I prefer black bean)
1 1/2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Mix spices, herbs and oil together in small bowl and set aside.
  • Heat heavy fry pan over medium heat. When hot, add spice mixture to pan and cook about a minute.
  • Add chicken strips, salt lightly if desired (doesn't really need salt)and brown 3 minutes over medium heat. Remove chicken from pan and set aside.
  • Pour chicken stock and bean sauce into pan, mix well and cook about 3 minutes.
  • Dissolve corn starch in cold water, stir into sauce and cook 1 or 2 more minutes, stirring constantly.
  • Return chicken to pan, stir and simmer another 3 to 5 minutes.
  • Serve over hot rice.
