LOMI LOMI SALMON

Steps:
- Cure the salmon: Mix the salt and sugar in a bowl. Place 2 long pieces of plastic wrap on a work surface, overlapping them to form a cross. Put half of the cilantro sprigs in the middle of the plastic wrap and top with half of the salt-sugar mixture. Press the salmon into the mixture, making sure the bottom of the fish is covered with salt and sugar. Sprinkle the salmon with the remaining salt-sugar mixture and rub it in, then place the rest of the cilantro on top. Wrap tightly in the plastic and refrigerate for 24 hours.
- The next day, unwrap the salmon, rinse off the salt and pat dry. Cut into 1/4-to-1/2-inch cubes.
- Make the salad: Toss the salmon, cilantro, tomatoes, scallions, jalapeno, vegetable and sesame oils and lime juice in a bowl. (Traditionally, the cured salmon is flaked and "massaged" with the other ingredients by hand.) Garnish the salad with chopped macadamia nuts, if desired.

- In a large bowl, cover the salt salmon with water and soak overnight. Drain and rinse the salmon.
- In a large bowl, add the salmon, tomatoes, onions and green onions, and mix well. Add sea salt to taste. Chill. Just before serving, add the crushed ice.

- Place salmon on a wire rack and season with salt on both sides. Cover and refrigerate for 2 hours.
- Take cured salmon out of the refrigerator, rinse and pat dry. Slice into cubes. Set aside in a bowl.
- Dice the cucumber and add into the bowl with the salmon.
- Dice the tomato and add into the bowl.
- Slice the scallion and add into the bowl.
- Dice the onion and add it into the bowl. Mix until combined.
- In another bowl, combine the ingredients for the shoyu sauce. Add sugar as early as possible so all the grains are dissolved.
- Spoon shoyu dressing on poke bowl. Mix to coat.
- In a small bowl, add cooked rice, top with poke ingredients, and spoon additional shoyu dressing to taste.
- Slice nori into small strips.
- Garnish with sliced nori and serve immediately!
- Enjoy!
LOMI SALMON SALAD

- Please note that this recipe takes 36 hours to complete.
- Begin curing the salmon the day before. Combine the salt and sugar and mix well. In a shallow nonreactive container which is large enough to accommodate the salmon fillets in a single layer, spread half the salt/sugar mixture, reserving the balance. Lay the salmon fillets on top of the mixture and use the rest of the salt/sugar mixture to completely cover the fish fillets. Cover and refrigerate for 24 hours to salt-cure.
- Early the next day, microwave the limes in a small bowl to release the essential oils, and set aside until they are just cool enough to handle. Soak the salmon fillets in cold water to remove most of the salt. Rinse and dry the same non-reactive container in which you cured the salmon. Place the fillets in the container and squeeze the lime juice over, cover and refrigerate for 6 to 8 hours to allow the acids in the lime juice to chemically cure the fish.
- Dice the lime cured salmon into small cubes, keeping in mind that the completed salad will resemble the texture of salsa. Add red onion, scallions, and tomato and gently fold in. Season, to taste, with black pepper and chill.
- Transfer salad to serving dish and sprinkle with fresh dill.
SALTED SALMON AND TOMATO SALAD WITH ONIONS (AKA LOMI LOMI SALMON
This is a traditional modern Hawaiian dish. It is perfect for those dog days of summer when you want a cool salad. ***NOTE*** Salted Salmon is also known as cured salmon. If it's not available at our supermarket, there is a recipe here Recipe #136947 that I have never tried, but looks just right! By the way, "lomi-lomi" meand massage-massage in Hawaiian, and that's what you do to make this salad.

- In a large bowl, mix together salmon, tomatoes, onions and salt.
- Refrigerate until ready to serve. Right before serving, add crushed ice.
- ***NOTE*** Please taste your salted salmon before making this recipe. If it's too salty, you have to soak it over night in cold water. If it's not salty enough, add more salt. Also, some people (like my father) like to add some spice to this, so, you could add some Hawaiian red chili peppers, or red pepper flakes to kick it up a bit.

- Make sure you use the freshest salmon you can get, preferably, it jumped right into your kitchen from the ocean.
- Place salmon in glass dish, cover completely with salt( you may not need all two cups)and refrigerate overnight.
- Drain salmon in the morning and pat dry - do not rinse.
- Dice salmon and place in favorite serving bowl.
- Chop tomato, green onions, placing on salmon.
- Sqeeze juice from half of the lime, removing seeds.
- Cover salmon mixture; placing freshly chopped cilantro on top. Refrigerate 3 hours before serving.

POI BLINI WITH SMOKED SALMON "LOMI LOMI" AND DILL CREME FRAICHE

- First, make the Dill Creme Fraiche. In a non-reactive mixing bowl, stir together all the ingredients. Cover with plastic wrap and chill in the refrigerator for 2 hours.
- For the Poi Blini, in a mixing bowl, stir together the flour, baking powder, salt, and fresh herbs. Stir in the buttermilk, milk, and egg. Fold in the melted butter and the mashed taro. Cover the bowl with plastic wrap and let the batter rest in the refrigerator for 1 hour.
- To make the blini, heat a nonstick griddle or skillet over medium heat. Spoon the batter onto the griddle 2 tablespoons at a time to form 3-inch pancakes and cook them until golden, 1 to 2 minutes per side, flipping them over when bubbles appear on the top. You should have a total of 16 blini.
- Put 2 poi blini on each serving plate. Spread them with the creme fraiche. Drape smoked salmon over each blini. Garnish with ikura, daikon sprouts, and micro greens, then drizzle lightly with olive oil. Serve immediately.

This is a great little recipe that Tom came up with to use your left over salmon with. We lived for several years in Hawaii and lomi lomi salmon was one of his favorite Hawaiian dishes.

TASTY LOMI SALMON DIP
This is one of my diabetes group recipes. I was a bit skeptical at first but boy was I surprised at the flavors in it. It looks a fit funky but just try it once and you'll be hooked! It's very low in carbs but the salt is high ... just drain most of the liquid in the lomi salmon. I wouldn't completely drain it because a lot of the flavor is in the juice. I would advise making this with a pair of powder-free gloves.

- Pour lomi salmon in large bowl (large for ease of mixing).
- Pour out liquid from tofu packaging. Break into six pieces, then squeeze most of the liquid out of each piece. Add to bowl of lomi salmon as you finish with each piece. Don't worry about the pieces breaking up.
- When done draining the tofu (hope you have your gloves on), squish the tofu into the lomi salmon. It's a mess but fun : ).
- This dip is great with veggies and sometimes chips. I enjoy it with Milton's Gluten Free Crispy Sea Salt Baked Crackers. Enjoy!
- I just tried it with some Cilantro -- it's even better.

- Cure the salmon in salt by putting a layer of Hawaiian salt in the bottom of a glass dish. Lay a salmon in it and gently press down. Sprinkle more salt on top and rub it all over the salmon. Top with even more salt, cover, and place in the refrigerator for 24 hours to pull out the water. Table salt is not recommended for this process.
- Rinse the salmon thoroughly in cold water to wash away a lot of the salt then blot dry. Cut the salmon in cubes and place in a bowl and add tomatoes, Maui onion, green onion and chiles. Cut the pineapple in half lengthwise. Make crisscross cuts in the flesh and scoop out the inside pineapple chunks; add to the bowl. Squeeze in the lime juice, add oil and black pepper, then toss the mixture to combine all the ingredients. Cover and chill for 1 hour. Scoop the mixture into the split pineapple shell and display as a decorative bowl. To eat, spoon the salmon salad into a lettuce cup.
"LOMI" STYLE SALMON TARTARE WITH LILIKOI BROWN BUTTER VINAIGRETTE
Steps:
- To make the vinaigrette, heat the butter in a small skillet over low heat until it browns, 15 to 20 minutes. Watch carefully as the butter can burn quickly. The butter should have a nutty aroma. In a blender, combine the passion fruit juice, orange juice, shallots, ginger, mustard, and sugar and blend until pureed. While the machine is running, slowly add the browned butter to make an emulsion. Be careful, as the mixture may foam up when the hot butter is added. Season with salt and pepper and set aside. The vinaigrette should be served slightly warm.
- Divide the rice into the 4 lightly greased metal ring molds. Press the rice firmly into the molds to form cakes. Sprinkle the bottom of the cakes with the ground nori and the toasted sesame seeds. Prepare a skillet coated with the canola oil over medium heat. With the rice still in the mold, place the mold in the skillet. Sear the rice cakes on the bottom until they are brown and very crispy. Set the cakes aside without removing the ring molds.
- In a non-reactive bowl, combine the salmon, tomatoes, scallions, lime juice, hot pepper sauce, and canola oil. Season to taste with the sea salt and pepper. The salmon should be well seasoned, and be prepared no longer than 15 minutes before serving.
- In a small bowl, whisk together the vinegar, mirin, sesame oil, and canola oil. Season with salt and pepper. Just before serving, drizzle some of the vinaigrette over the mache and toss gently. Fill a small heavy pot one-third full with the oil and heat to 300 degrees. Add the taro root to the oil and fry until golden brown and crispy. Remove the taro with a large-mesh spoon and drain on paper towels. Season with the salt, to taste, while hot.
- PLATING: Spoon equal amounts of the salmon mixture onto each rice cake. Place each mold in the center of a serving plate and gently remove the ring mold. Drizzle the warm vinaigrette around each rice cake and sprinkle with ground nori and toasted sesame seeds. Garnish the top of the salmon with the dressed mache and the crispy taro strings. Serve immediately.

- 1. •••(Preparation: This is the most basic recipe for Lomi Lomi Salmon. Additional ingredients can be added based on personal taste. Wash hands thoroughly. Shred the salmon into small pieces with your hands. Add onions and tomotoes. Massage this mixture with your hands until all ingredients are broken up and thoroughly mixed. Chill. (You can actually add 6-8 ice cubes and chill.) If you can only find unsalted salmon, rub the salmon with rock or kosher salt and let stand overnight.
