The freshest corn is so delicious that you don't need to bother cooking it. Simply toss the kernels with vinaigrette, tiny heirloom tomatoes, and steamed lobster. What's not to love? It's no question.

2 cups roughly chopped ripe tomatoes
2 cups dry white wine
1/2 cup water
1 cup thinly sliced onions
3 black peppercorns
2 sprigs fresh tarragon
1 (1 1/2-pound) lobster
2 tablespoons minced shallot or red onions
2 tablespoons champagne vinegar or white wine vinegar
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon grated lemon zest
1/3 cup plus 1/2 teaspoon extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/8 teaspoon cayenne pepper
1 1/4 cups Silver Queen (or other regional variety) fresh corn kernels (from about 2 ears)
1 pint mixed tiny heirloom tomatoes, such as cherry, cherub, grape, or pear, of different colors and sizes
2 tablespoons chopped fresh tarragon leaves
1 tablespoon chopped fresh parsley leaves
8 Bibb lettuce leaves, rinsed and patted dry
Freshly ground black pepper

Steps:

  • Fill a large bowl with ice and cold water, and set it aside.
  • In a 4- to 6-quart Dutch oven, or other heavy-bottomed pot with a tight-fitting lid, combine the chopped tomatoes, wine, water, onions, peppercorns, and tarragon sprigs. Bring to a boil over high heat, uncovered; then reduce the heat to a simmer and cook for 15 minutes.
  • Raise the heat to high, add the lobster to the pot, and cover the pot immediately with a heavy, tightfitting lid. Steam the lobster for 13 minutes, until it is bright red and the long feelers are easily removed from their sockets. Immediately plunge the lobster into the bowl of ice water, and let it cool for 5 minutes.
  • Remove the lobster from the ice water and set it on a rimmed baking sheet. Using kitchen shears, remove the lobster meat from the tail and claws. Use a knife to chop the lobster meat into bite- size pieces. You should have about 1 cup; set it aside.
  • In a medium non-reactive mixing bowl, combine the shallot, vinegar, lemon juice, and lemon zest. Whisk in the 1/3 cup extra-virgin olive oil, 1/2 teaspoon salt, and the cayenne. Add the corn kernels and mix together. Set aside for 10 minutes.
  • Cut the tiniest heirloom tomatoes in half, and quarter the larger ones. Add the tomatoes to the corn mixture. Add the lobster, tarragon, and parsley, and mix gently to combine.
  • In a medium bowl, gently mix the Bibb lettuce leaves with the remaining 1/2 teaspoon extra-virgin olive oil, and season them lightly with salt and black pepper. Stack 2 lettuce leaves on each of four plates. Divide the lobster salad evenly among the lettuce cups, and serve immediately.

4 (1 1/2-lb) live lobsters or 1 1/2 lb cooked fresh lobster meat
1 lb small red potatoes
3 ears corn
For vinaigrette
2 1/2 tablespoons fresh lemon juice
1 1/2 to 2 tablespoons chopped fresh tarragon
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 cup extra-virgin olive oil
2 cups grape or cherry tomatoes, halved
1 cup coarsely chopped frisée (French curly endive)
1/3 cup sliced scallion

Steps:

  • Prepare lobster, potatoes, and corn:
  • Plunge 2 live lobsters headfirst into an 8-quart pot of boiling salted water. Cover and cook lobsters over moderately high heat 9 minutes from time they enter water, then transfer with tongs to sink to cool. Return water to a boil and cook remaining 2 lobsters in same manner. Leave water boiling in pot.
  • Simmer potatoes in lobster cooking water until just tender, 15 to 20 minutes. Transfer with a slotted spoon to a colander, reserving boiling water in pot.
  • Boil corn in same water until crisp-tender, about 3 minutes, then drain.
  • When lobsters are cool, remove meat from claws, joints, and tails, reserving shells for another use.
  • Cut meat into 1-inch pieces. Cut potatoes into 3/4-inch pieces, and cut corn from cobs.
  • Make vinaigrette:
  • Whisk together lemon juice, tarragon, mustard, and salt until combined, then add oil in a thin stream, whisking.
  • Assemble salad:
  • Just before serving, toss together lobster meat, potatoes, corn, vinaigrette, tomatoes, frisée, and scallion in a large bowl and season with salt and pepper.

POACHED LOBSTER OVER CORN AND CHERRY TOMATO SALAD

1/2 bottle white wine
1 lemon, halved and juiced
1/4 cup coriander seeds
1 bundle fresh thyme
1 bulb garlic, cut in half equatorially
Kosher salt
One 1 1/4-pound lobster
Splash red wine vinegar
Splash olive oil
Olive oil
2 cloves garlic, smashed
Kosher salt
Pinch red pepper flakes
6 cherry tomatoes, cut in half
1 ear corn, kernels removed
1 zucchini, cut into brunoise
4 leaves basil, cut into chiffonade
1 small handful baby arugula
Splash red wine vinegar

Steps:

  • For the lobster: Fill an 8-quart stockpot halfway with water and bring to a boil over high heat. Add the wine, lemon juice, coriander, thyme, garlic and enough salt to taste like the ocean. Boil for 10 minutes.
  • Add the lobster, cover the pot and cook for 8 minutes. Remove and let cool. Crack the lobster and remove the meat from the claws, knuckles and tail; cut the tail meat in half vertically. Toss the lobster meat with a splash of red wine vinegar and olive oil. Set aside.
  • For the salad: Drizzle some olive oil in a large saute pan over medium heat, swirling to coat the pan; heat until shimmering. Add the garlic and a pinch of salt and red pepper flakes and cook until the garlic is golden brown; remove the garlic. Add the tomatoes, corn kernels and zucchini, toss to combine, and season with salt. Cook until the tomatoes start to burst, just a few minutes. Toss with three-quarters of the basil chiffonade.
  • Place the arugula in a bowl, season with a pinch of salt, and lightly dress with a splash of red wine vinegar and olive oil. Transfer the arugula to a plate, top with the corn and cherry tomato mixture and then with the lobster meat. Garnish with the remaining basil chiffonade.

2 bay leaves
6 tablespoons coarse salt (preferably sea salt)
two 2 1/2-pound live lobsters
4 ears corn
1/4 pound sugar snap peas
2 bell peppers (preferably yellow)
3 large shallots
2 tablespoons olive oil
2 tablespoons fresh lemon juice, or to taste
Accompaniments:
basil-mint oil
lemon wedges

Steps:

  • In a 10- to 12-quart kettle bring 8 quarts water to a boil with bay leaves and coarse salt. Plunge 1 lobster into water headfirst and simmer, covered, 12 minutes. With tongs immediately transfer lobster to a bowl to cool. Return water to a boil and cook remaining lobster in same manner.
  • When lobsters are cool enough to handle, break off claws at body of each lobster. Crack claws and remove meat. Reserve some claw meat, covered and chilled, for garnish if desired and cut remainder into bite-size pieces. Twist tails off lobster bodies and discard bodies. With kitchen shears remove thin hard membrane from underside of each tail by cutting just inside outer edge of shell. Remove meat from each tail and cut into bite-size pieces. Transfer claw and tail meat to a large bowl and chill, covered.
  • Shuck corn and cut kernels from cobs. Trim sugar snap peas and diagonally cut into 1/4-inch-thick slices. Cut bell peppers into 1- by 1/4-inch-thick strips. Finely chop enough shallots to measure 1/3 cup.
  • In a large non-stick skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking and sauté peas and bell peppers with salt and pepper to taste, stirring, until crisp-tender, about 2 minutes. Transfer sautéed vegetables to a plate and cool completely. Add remaining tablespoon oil to skillet and sauté corn and shallots with salt and pepper to taste, stirring, until just tender, about 2 minutes. Transfer corn mixture to another plate and cool completely. Add all vegetables with salt and pepper to taste to lobster, tossing to combine. Chill salad, covered, until cold and up to 1 day.
  • Toss salad with lemon juice and serve with basil-mint oil and lemon wedges.

When I was growing up, my mom and sister were obsessed with lobster. My father and I just never got it. But on both their birthdays, my father would take us all to the chosen lobster spot of the moment. While Jessica and my mom happily cracked their way through dinner, hardly glancing up from their plates, Dad and I would glumly saw through our landlubber specials. I admit I felt a little envious watching Jessica and Mom picking apart their matching dinners, knowing that I would never have that lobster bond with my mother. Normally, my mother prefers her lobster plain and simple-steamed and served with lemon and drawn butter. But one Mother's Day, I took liberty, hoping to entice her with this rendition of a classic chopped salad. It worked; while we're still on opposite sides of the table at the lobster shack, we both get excited about this salad.

Number Of Ingredients 14

2 live Maine lobsters, 1 3/4 to 2 pounds each
10-ounce slab applewood-smoked bacon
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 1/2 cups fresh corn (from about 2 ears)
1 teaspoon thyme leaves
2 tablespoons finely diced shallots
3 tablespoons lemon juice
Pinch cayenne pepper
2 ripe avocados
3/4 pint cherry tomatoes, mixed colors if possible
1 large head butter lettuce, leaves separated, cleaned, and dried
2 tablespoons chopped flat-leaf parsley
2 tablespoons sliced green and opal basil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Insert the tip of a large chef knife just below the eyes of each lobster-this will kill them instantly. Add the lobsters to the pot of boiling water, making sure they are completely submerged. Cook the lobsters 10 minutes, and then remove them immediately to a bowl of ice water.
  • When the lobsters have cooled, twist off the tails and claws from the bodies. Save the bodies for another use, or discard.
  • Place the tails on their sides, and crush gently with the heel of your hand to break open the shells. Carefully pull out the tails. Cut the tails in half lengthwise, and remove the intestinal tract and any green tomalley. Cut each half crosswise into six or seven pieces.
  • Use the back of a large not-precious knife to break open the shell on the claws. Remove the claw meat, and cut each claw into three or four pieces. Carefully crack the shells of the knuckles and remove the meat. You should have about 12 ounces of lobster meat total.
  • Slice the bacon into 3/8-inch-thick slices. Arrange the bacon strips in two stacks, then cut the strips crosswise into 3/8-inch even-sided rectangles or lardons. Heat a large sauté pan over medium heat for 1 minute. Swirl in 1 tablespoon olive oil, add the bacon, and cook about 5 minutes, stirring frequently, until the bacon is tender and lightly crisped. Using a slotted spoon, remove the bacon to a plate lined with paper towels. Reserve the fat in the pan.
  • Return the pan to medium-high heat. Add the corn, thyme, 1/4 teaspoon salt, and a pinch of black pepper. Sauté over medium heat 3 to 4 minutes, until the corn is just cooked and tender. Remove to a platter or baking sheet to cool.
  • While the corn is cooling, make the vinaigrette: Place the shallots, lemon juice, and 1/4 teaspoon salt in a small bowl, and let sit 5 minutes. Whisk in the 1/3 cup olive oil and a pinch of cayenne. Taste for balance and seasoning.
  • Cut the avocados in half lengthwise. Remove the pit and peel. Dice the avocados into 1/2-inch cubes and season with 1/4 teaspoon salt. Slice the cherry tomatoes in half, and season with 1/4 teaspoon salt.
  • Place the lobster, corn, avocados, tomatoes, and bacon in a large salad bowl. Toss with 5 tablespoons vinaigrette and taste for seasoning, adding a little more vinaigrette if you like. Place the lettuce leaves on a large chilled platter and spoon a little vinaigrette over them. Toss the parsley into the lobster salad, and arrange it over the lettuce. Scatter the basil over the top.
  • You can boil and prepare the lobsters, make the vinaigrette, and sauté the bacon and corn ahead of time. Prepare the avocado and tomatoes just before serving.

2 (1.5 pound) live Maine lobsters
3 ears sweet corn
1 ripe mango, peeled, pitted and diced
1/2 red bell pepper, diced
1/2 red onion, diced
2 stalks celery, diced
2 tablespoons fresh, chopped cilantro
salt, to taste
white pepper, to taste
1 head iceberg lettuce, shredded
For the dressing:
1 cup watermelon, seeded
2 tablespoons grapefruit juice
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
3/4 cup canola oil
whole cilantro leaves, for garnishing

Steps:

  • 1. Cook the lobsters in a large pot of boiling salted water for 12 minutes. Let cool and remove the meat from the shells. 2. Chop the tail and joint meat into 1/2 inch pieces and reserve the whole claw meat for garnish. 3. In a medium pot of boiling salted water, cook the corn until tender, about 10 to 15 min. Let cool and cut the kernels from the cob. 4. Toss the lobster meat, corn, mango, red pepper, onion, celery, and cilantro in medium mixing bowl and season with salt and pepper. 5. To make the dressing, puree the watermelon, grapefruit juice, vinegar and Dijon mustard in a food processor or blender for 1 minute. With the motor running, slowly add canola oil. 6. Add about 1/2 cup of dressing to salad mixture, season with salt and white pepper and refrigerate for 2 hours. (Reserve the leftover dressing for another use.) Serve the salad over shredded iceberg lettuce on individual plates and garnish with a lobster claw and whole cilantro leaves.

1 teaspoon minced garlic
1 teaspoon fresh thyme leaves
2 cups fresh corn kernels (about 4 ears corn)

4 medium tomatoes, cored and cut into eighths
Freshly squeezed lemon juice as needed
1 1/2 pounds cooked lobster meat or shrimp, cut into chunks, at room temperature
1 teaspoon grated lemon zest
Chopped fresh parsley leaves or chives

Steps:

  • Put 2 tablespoons olive oil in a medium saucepan over medium-high heat; a minute later, add shallot or onion and garlic; cook for a minute, stirring occasionally, until soft. Add thyme and corn and cook, stirring occasionally, for about 10 minutes, until corn begins to brown and tastes cooked; season with salt and pepper.
  • Toss tomatoes with 1 tablespoon lemon juice, 1 tablespoon olive oil, and salt and pepper; taste and adjust seasoning, adding more lemon juice, olive oil, salt or pepper as needed.
  • Make a bed of corn on each of 4 plates, then top with a portion of tomatoes and their juices, and lobster or shrimp. Sprinkle with a bit more lemon juice and olive oil, the lemon zest and the parsley or chives, and serve.

1 teaspoon grated lemon rind
4 teaspoons balsamic vinegar
1 teaspoon Dijon mustard
3/4 teaspoon salt, divided
l/4 teaspoon freshly ground black pepper, divided
5 tablespoons extra virgin olive oil, divided
1 cup thinly sliced red onion
2 l/2 cups fresh corn kernels (about 3 ears)
1/2 cup fresh or frozen peas
1 pint grape tomatoes, halved
1/2 cup thinly sliced fresh basil
1 (5-ounce) bag gourmet mixed salad greens

Steps:

  • Bring a large pot of water to a boil. Add lobsters, head first; cover and return water to a boil. Boil, partially covered, 10 minutes or until lobster shells are bright red. Using tongs, transfer lobsters to a large bowl of ice water; cool 2 minutes, and drain. Twist off the claws and tail, and remove meat. Reserve the meat of 4 claws, and cut remaining meat into 1/2-inch pieces. Cut tail meat into 1/4 inch-thick slices, and add to 1/2-inch claw meat pieces. Combine shallots and next 3 ingredients in a small bowl. Add 1/2 teaspoon salt and 1/8 teaspoon pepper. Slowly whisk in 4 tablespoons of oil. Set aside. Heat remaining 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add onion, and cook 2 to 3 minutes or until beginning to soften. Stir in corn; cook 4 to 5 minutes or until beginning to brown. Add peas, and cook 2 minutes. Stir in the cut claw and tail meat mixture and tomatoes; cook 2 minutes or until lobster is warm. Remove from heat, and stir in 2 tablespoons shallot mixture, basil, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper. Toss salad greens with 2 tablespoons shallot mixture and divide among 4 dinner plates. Top with lobster mixture. Return skillet to medium-high heat. Add reserved, uncut claw meat and remaining shallot mixture. Cook, stirring occasionally, 1 to 3 minutes or until claw meat is thoroughly heated. Top each salad with equal amounts of shallot mixture and reserved claw meat. Serve immediately. Makes 4 servings.

2 lobsters, weighing 1 1/4 to 1 1/2 pounds each
12 ears of fresh baby corn
2 sweet red peppers
1 sweet yellow peppers
1 hot green poblano chili
1 head of radicchio
3 small heads of oak-leaf lettuce
3 or 4 small heads of other lettuces, such as green leaf, limestone, bibb or baby red
1 bunch of fresh marjoram
3/4 cup of extra-virgin olive oil
2 tablespoons lime juice
12 small Italian plum tomatoes, red and yellow if available, cut in half
1 lime, cut into wedges

Steps:

  • In two inches of water, steam lobsters approximately 12 minutes, until shells turn bright red and antennae can be pulled out with a sharp tug. Drain lobsters immediately, and set aside until cool enough to handle. Shell lobster tails, remove black intestinal vein and slice tail meat into half-inch slices. Shell claws, but leave claw-meat intact. Set lobster meat aside in a cool place.
  • Bring another pan of water to a boil. Shuck baby corn ears, and carefully drop into boiling water. Cook 1 minute, then drain and cool. Set aside.
  • Holding peppers and chili with a long-handled fork, turn them briefly over a high flame. Alternately, place under a broiler, turning when necessary. When skin is blackened and peeling, place in a paper bag for 5 minutes. Rub skin off peppers and cut flesh in julienne strips.
  • Wash all greens and dry carefully.
  • Make dressing in a large bowl: Mix olive oil, 2 tablespoons lime juice and finely chopped marjoram. Turn salad greens in dressing and remove from bowl. Arrange greens on four dinner plates, alternating colors for presentation.
  • Toss corn ears in dressing and remove. Arrange in spokes on greens. Place pepper and chili strips between corn ears.
  • In the center of each plate, place an intact lobster claw, removed from shell. Arrange a quarter of the lobster slices around claw. Garnish with tomato halves and wedges of remaining lime.
  • Pour extra dressing on lobster.

4 zucchini (about 2 pounds)
1 1/2 cups fresh corn (cut from about 3 ears)
12 boiled or steamed 1 1/4-pound lobsters
1/2 cup mayonnaise, or to taste
3 to 4 tablespoons white-wine vinegar or fresh lemon juice
1/2 cup finely shredded fresh basil leaves
Garnish: fresh basil sprigs and finely shredded basil leaves

Steps:

  • With a small (about 1/4-inch) melon-ball cutter scoop outer flesh of zucchini, reserving remaining zucchini for another use if desired. (There should be about 1 1/2 cups zucchini pieces.) In a saucepan of boiling water blanch zucchini and corn 1 minute and drain well. Let vegetables cool and transfer to a large bowl.
  • Break off claws at body of each lobster. Crack claws and remove meat. Cut claw meat into 1/2-inch pieces and add to vegetables. Twist tails off lobster bodies, keeping them intact, and discard bodies. With a pair of kitchen shears remove thin hard membrane from each lobster tail by cutting just inside outer edge of shell. Remove meat from tail and reserve tail shells for serving. Cut tail meat into 1/2-inch pieces and add to claw meat mixture.
  • In a small bowl whisk together mayonnaise, vinegar or lemon juice, and salt and pepper to taste and add to lobster mixture. Toss salad gently just to combine well. Salad may be prepared up to this point 8 hours ahead and chilled, covered.
  • Just before serving, stir shredded basil into salad. Mound about 1/2 cup salad into each reserved lobster tail and arrange on a platter. Transfer remaining salad to a serving bowl and garnish platter and bowl with basil.

Steps:

  • 1 Fill a large bowl with ice and cold water, and set it aside. 2 In a 4- or 6-quart Dutch oven, or other heavy-bottomed pot with a tight-fitting lid, combine the chopped tomatoes, wine, water, onions, peppercorns, and tarragon sprigs. Bring to a boil over high heat, uncovered; then reduce the heat to a simmer and cook for 15 minutes. 3 Raise the heat to high, add the lobster to the pot, and cover the pot immediately with a heavy, tight-fitting lid. Steam the lobster for 13 minutes, until it is bright red and the long feelers are easily removed from their sockets. Immediately plunge the lobster into the bowl of ice water, and let it cool for 5 minutes. 4 Remove the lobster from the ice water and set it on a rimmed baking sheet. Using kitchen shears, remove the lobster meat from the tail and claws. Use a knife to chop the lobster meat into bite-size pieces. You should have about 1 cup; set it aside. 5 In a medium nonreactive mixing bowl, combine the shallot, vinegar, lemon juice, and lemon zest. Whisk in the 1/3 cup extra-virgin olive oil, 1/2 teaspoon salt, and the cayenne. Add the corn kernels and mix together. Set aside for 10 minutes. 6 Cut the tiniest heirloom tomatoes in half, and quarter the larger ones. Add the tomatoes to the corn mixture. Add the lobster, tarragon, and parsley, and mix gently to combine.
