1 (2 lb) bag frozen hash brown potatoes, thawed
1 (8 ounce) carton sour cream
8 ounces softened cream cheese
1/4 cup chopped chives
1 cup bacon bits
1 (10 3/4 ounce) can cream of chicken soup
2 cups shredded sharp cheddar cheese
2 cups corn flake crumbs
1/2 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • Thaw potatoes.
  • Combine soup, sour cream, softened cream cheese, 1/4 cup melted butter, bacon bits, chives and cheese.
  • Mix in potatoes.
  • Spray 3 quart casserole dish with Pam and add mixture.
  • Mix remaining 1/4 cup melted butter and crumbs and sprinkle on top.
  • Bake 1 hour.

WAFFLED AND LOADED HASH BROWNS

Cook shredded potatoes in a waffle iron for crispy hash browns that get topped with sour cream, Cheddar and more.

2 small all-purpose potatoes
2 tablespoons unsalted butter, melted, plus more, for the waffle iron
1 tablespoon chopped fresh chives, plus more, for serving
Kosher salt and freshly ground black pepper
Sour cream, shredded Cheddar, chopped tomato and chopped pickled jalapeno, for serving

Steps:

  • Preheat a waffle iron to medium-high heat. Preheat the oven to 200 degrees F.
  • Peel the potatoes, then shred on a box grater. Squeeze the excess liquid into a bowl and reserve.
  • Put the shredded potatoes, butter, chives, 2 teaspoons of the potato liquid, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl and toss to combine.
  • Lightly brush the top and bottom of the waffle iron with melted butter. Put a scant 1/2 cup of the potato batter into the waffle iron, close gently and cook until golden and crisp, 4 to 8 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Top the waffled hash browns with sour cream, Cheddar, tomato and pickled jalapeno.

8 ounces bacon
16 ounces potatoes, shredded (frozen works well)
3 green onions, chopped
4 ounces cheddar cheese, shredded

Steps:

  • In cast iron skillet, cook bacon until crispy. Set aside to cool, do not drain bacon fat.
  • Spread potatoes evenly in skillet. Cook potatoes and green onions in bacon fat. Do not stir, let brown on one side before flipping over and browning on other.
  • Crumble bacon over top of potatoes. Sprinkle cheese on top. Place under broiler until cheese melts.

1 large onion, chopped
1 large green bell pepper, diced
1 large tomatoes, seeded and diced
1/4 cup flour
1 cup chicken broth (or beef broth)
1 1/4 cups milk
30 ounces frozen shredded hash browns, thawed
2 cups cooked cubed ham
1/4 teaspoon pepper
1/2 teaspoon salt (or more, to taste)
1 tablespoon parsley flakes
1 1/2-2 cups shredded monterey jack and cheddar cheese blend (or just cheddar, or just monterey jack)

Steps:

  • Preheat oven to 350°. Lightly grease/spray a 13x9-inch baking pan.
  • In a large skillet over med-high heat, melt butter; add onion, green pepper, and tomato and sauté for 5-7 minutes.
  • Add flour to skillet and stir briskly until flour is absorbed.
  • Add broth, milk, hashbrowns, ham, pepper, salt, and parsley to skillet. Cook for about 5 minutes, stirring often.
  • Stir in the cheese; stir to combine well.
  • Pour into prepared baking dish.
  • Bake, uncovered for about 30 minutes or until sides bubbly and top is slightly browning.

This is another recipe I got from my friends magazine. I'll be uploading several more recipes that I found in this old magazine of hers. This recipe can be used as a simple brunch dish. You can top each hash brown serving with a fried egg or serve alongside scrambled eggs. You can cook this on high for 4-4.5 hours or put in at night and let it cook for 8 hours on slow and get up the next morning and you'll have your breakfast ready. You can also serve this as a dinnertime meal, too.

1 pound(s) bulk pork sausage
1/2 cup(s) chopped onion
5 cup(s) frozen diced hash brown potatoes
1 cup(s) monterey jack cheese with jalapeno peppers
1/2 cup(s) chopped red sweet peppers
1 can(s) (4-oz) sliced mushrooms, drained
1 can(s) (10.75-oz) condensed fiesta nacho cheese soup
1/4 cup(s) water
- shredded monterey jack cheese with jalapeno peppers
8 large fried eggs (optional)

Steps:

  • In a large skillet cook sausage and onion over medium heat until sausage is brown and onion is tender, using a wooden spoon to break up sausage as it cooks. Drain off fat.
  • In slow cooker combine sausage mixture, potatoes, the 1 cup cheese, the sweet pepper, and mushrooms. In a medium bowl, combine soup and the water. Pour soup mixture over potato mixture in cooker; stir to combine.
  • Cover and cook on low-heat setting for 8 to 9 hours or on high setting for 4 to 4.5 hours. Stir before serving. If desired, top each serving with a fried egg.
