2 russet potatoes
2 teaspoons olive oil
½ cup sour cream, plus more for serving
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup shredded cheddar cheese, divided
½ cup scallions, thinly sliced, divided
2 strips bacon, cooked, crumbled

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Rub each potato with 1 teaspoon of oil, and prick the top with a fork.
  • Place the potatoes on a rimmed baking sheet and bake for 1 hour.
  • Transfer potatoes to a cutting board, and cut in half.
  • Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a medium bowl. Reserve the skins.
  • Add the sour cream, melted butter, salt, pepper, ½ of the shredded cheese, and ½ of the scallions, and combine with a hand mixer until smooth.
  • Use a spoon to transfer the potato mixture back into the scooped out potato skins.
  • Bake for 10 minutes.
  • Sprinkle the potatoes with remaining cheese, and bake for 5 more minutes, until the cheese is melted.
  • Top with sour cream, bacon, and the remaining scallions.
  • Enjoy!

That's why I've enlisted bacon, lime, jalapeno, green onions, and sharp Cheddar to make these twice-baked sweet potatoes more addictive than in any Thanksgiving past. You can prep them ahead of time and then bake when you're ready to serve.

4 orange-fleshed sweet potatoes
½ tablespoon olive oil
1 (8 ounce) package bacon, diced
⅓ cup sliced green onions
¼ cup diced jalapeno peppers
salt to taste
freshly ground black pepper to taste
cayenne pepper to taste
½ cup shredded sharp white Cheddar cheese
2 tablespoons creme fraiche
2 teaspoons fresh lime juice
2 tablespoons shredded sharp white Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes on a baking sheet. Prick with a knife and drizzle with olive oil; rub to coat. Space sweet potatoes evenly apart.
  • Bake in the preheated oven until completely tender, about 35 minutes.
  • Meanwhile, add bacon to a pan over medium heat. Cook and stir until bacon starts to get crispy and the fat turns foamy, 4 to 5 minutes. Add green onions and jalapeno; cook and stir for 1 minute. Remove from heat and set aside.
  • Let sweet potatoes cool until safe to handle. Leave the oven on. Cut off the top 1/3 of each potato, holding the knife at a 45-degree angle. Scoop out sweet potato flesh from both the top and bottom halves, leaving at least 1/4 inch flesh in the bottoms to make the shells.
  • Season the sweet potato flesh with salt, pepper, and cayenne. Add 1/2 cup cheese, creme fraiche, and lime juice. Mash with a potato masher. Add the bacon mixture and mix until combined. Spoon filling into the sweet potato shells. Lightly scatter remaining cheese on top.
  • Bake until heated through and tops have started to brown, 20 to 25 minutes.

Steps:

  • Pre-heat oven to 350.
  • Chop cooked cauliflower into very small pieces.
  • Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
  • Stir in the cauliflower.
  • Place in medium baking dish and sprinkle remaining cheese and bacon on top.

  • Position an oven rack in the top third of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment paper and arrange the bacon slices in a single layer on top.   • 2. Use a fork to poke several holes in each sweet potato. Rub with 2 Tbsp oil; season with salt. Bake on a rimmed baking sheet until tender, 40 to 50 minutes.
  • 3. Split sweet potatoes open; mash lightly with a fork. Top with greek yogurt, sliced avocado, green onions, and bare Toasted Coconut Chips. Season with flaky salt and black pepper. Dig in!

Try these baked potatoes with spring onion, sweetcorn and cheese for a filling family meal. Serve with our healthy homemade coleslaw and a dollop of yogurt

4 baking potatoes (about 700g)
1 tbsp olive oil
30g butter
150g plain 0% fat yogurt , plus extra to serve
6 small spring onions , washed, outer layer removed and finely sliced
200g can no added sugar sweetcorn , drained
150g reduced-fat strong cheddar , grated
small bunch chives , finely chopped
125g plain 0% fat yogurt
½ tsp wholegrain mustard
½ small white cabbage , about 400g
2 medium carrots , about 150g
1 small red onion

Steps:

  • Heat oven to 180C/160C fan/gas 4. Wash and pierce the skins of the potatoes a few times with a sharp knife. Rub the skin with a little olive oil and bake for 1 hr 30 mins until soft inside and crisp on the outside.
  • Meanwhile, make the coleslaw. Mix the yogurt and mustard together in a bowl. Then, use a grating attachment on a food processor, or a box grater, to grate the cabbage and carrots. Either grate the onion or chop as finely as you can. Tip all of the vegetables into the bowl and stir through the yogurt and mustard.
  • Once the potatoes are crisp on the outside and soft inside, remove from the oven and cut in half. Scoop out the flesh and mash with the butter and yogurt, stir in the spring onion and sweetcorn and most of the cheese, reserving a little of the cheese for topping. Season if needed.
  • Turn the oven up to 200C/180C fan/gas 6. Load the filling back into the crisp potato skins, top with the remaining cheese and put them back in the oven on a baking sheet for about 10-15 mins, or until the cheese is melted and the edges are browning. To serve, sprinkle with chives and serve alongside the coleslaw with a dollop of natural yogurt.

This is out of one of my old weight watchers cookbooks back in 2000. Called "Just like Home". It was one of my favorite dished to make. Only has 5 points. Save the leftovers to make recipe #210213. I'll post that recipe also.

4 large baking potatoes (about 3 pounds)
1/2 cup 1% low-fat milk
1/2 cup crumbled feta cheese
1/3 cup about 3 oz reduced-fat cream cheese, softened (Neufchatel)
2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup thinly sliced green onion
2 slices hickory smoked bacon, slices cooked and crumbled

Steps:

  • Preheat oven to 400 degrees.
  • Bake potatoes for 1 hour or until tender. (I have zapped them in the microwave, but the oven is best).
  • Let cool slightly.
  • Cut each potato in half lengthwise; scoop out pulp into a large bowl, leaving a 1/4-inch-thick shell.
  • Mash pulp with a potato masher.
  • Add milk and next 5 ingredients; stir well.
  • Spoon potato mixture into shells.
  • Place on a baking sheet; bake for 15 minutes or until thorougly heated.
  • Sprinkle each potato half with 1 1/2 teaspoons green onions; top evenly with crumbled bacon.

10 baking potatoes (about 5 pounds)
1 pound smoked bacon, chopped
Kosher salt and freshly ground black pepper
1 bunch broccoli, cut into florets
10 tablespoons (1 1/4 sticks) unsalted butter
2 cups (1 pint) sour cream
2 1/2 cups grated extra-sharp yellow Cheddar
1/2 cup plus 2 tablespoons chopped chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Use a fork to poke holes in the potatoes and place on a baking sheet. Bake until cooked through, about 1 hour. Use a sharp knife to test for doneness; it should easily cut into the center.
  • Meanwhile, in a large skillet over medium heat, cook the bacon until crisp, 8 to 10 minutes. Drain on a towel-lined plate, then crumble and set aside.
  • Bring a large pot of lightly salted water to a boil; prepare an ice water bath. Cook the broccoli florets in the boiling water until crisp-tender, 2 to 3 minutes. Drain and transfer to the ice bath, then drain again.
  • To serve the potatoes, make a cut through the top of each and push both ends together to fluff the potatoes. Season with salt and pepper, then top each with 1 tablespoon butter, a dollop of sour cream, 1/4 cup broccoli, 1/4 cup Cheddar, 2 tablespoons crumbled bacon and 1 tablespoon chopped chives. Return to the oven until the cheese melts, about 10 minutes.

3 medium red potatoes, cooked and mashed with skins on (I cook mine in the microwave, approximately 4 minutes on high, make sure to stab them with a fork or)
1 tablespoon butter (optional) or 1 tablespoon margarine (optional)
2 -3 tablespoons plain low-fat yogurt
2 teaspoons fresh chives
1 tablespoon shredded colby or 1 tablespoon colby-monterey jack cheese
1/2 tablespoon bacon, crumbles (optional)

Steps:

  • Preheat waffle iron to high heat. Combine all ingredients in a mixing bowl. When the iron is ready, pile one serving's worth of potato mix in the middle of the waffle iron and close.
  • The top should be slightly browned and crispy when it's done - otherwise the potatoes will fall apart. Fortunately, if the potato waffle starts to crumble as you try to take it out, you can just shut the iron again and let it cook some more.

Loaded Twice Baked Potatoes Recipe - (4.5/5) image

POTATOES:
6 large Russet baking potatoes
3 tablespoon butter
1/2 cup cream
1/3 cup sour cream
1/2 teaspoon salt
Black pepper, to taste
12 ounces medium or mild cheddar cheese (about 3-cups)
Seasoned salt, to taste
8 to 10 slices bacon, cooked and crumbled
6 green onions, chopped (chives work also)
1 recipe ranch dressing, recipe follows
RANCH DRESSING:
1 heaping tablespoon ranch seasoning mix
1/4 cup sour cream
1/4 cup mayonnaise
1/4 cup milk

Steps:

  • Wash and scrub potatoes, poke each one several times with a fork. Place in oven and bake 400°F for 65 to 70 minutes, or until soft when squished. Remove baked potatoes from oven (reduce oven temperature to 350°F), slice potatoes in half lengthwise and scoop out flesh into a large mixing bowl, leaving about 1/4 inch of flesh so potato maintains it's shape. Place potato skins on a baking sheet. Add butter to hot potato flesh in mixing bowl and mash potatoes with a potato masher until no longer chunky. Add in cream, sour cream, salt and pepper and beat potato mixture with an electric mixer until potatoes are smooth and fluffy about 2 to 3 minutes (Note: if you like your potatoes any thinner just add a little bit of milk a few tablespoons at a time to reach desired consistency). Fill potato skins with mashed potatoes and smooth out tops with a spoon. Sprinkle filled potatoes with cheddar cheese. Sprinkle each potato with about 1/8 teaspoon seasoned salt (you could do more or less to your taste) and fresh ground pepper to taste. Bake filled potatoes for 15 to 20 minutes (depending on how gooey or crispy you like your cheese). Remove from oven, sprinkle potatoes with crumbled bacon and chopped green onions, and drizzle with ranch dressing. Serve immediately. Ranch Dressing: Combine all ingredients in a mixing bowl, mix well. Cover and let rest in refrigerator 1 hour.
