These special stuffed baked potatoes are a hit with my whole family, from the smallest grandchild on up. I prepare them up to a week in advance, wrap them well and freeze. Their flavorful filling goes so nicely with juicy ham slices. -Marge Clark, West Lebanon, Indiana

3 large baking potatoes (1 pound each)
1-1/2 teaspoons canola oil, optional
1/2 cup sliced green onions
1/2 cup butter, cubed, divided
1/2 cup half-and-half cream
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon white pepper
1 cup shredded cheddar cheese
Paprika

Steps:

  • Preheat oven to 400°. Scrub and pierce potatoes. Rub with oil if desired. Bake until tender, 50-75 minutes. When cool enough to handle, cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell; set aside. Reduce oven temperature to 375°., In a small skillet, saute onions in 1/4 cup butter until tender. In a large bowl, mash potato pulp. Stir in sauteed onions, cream, sour cream, salt and pepper. Fold in cheese. Stuff into potato shells., Place on a baking sheet. Melt remaining butter; drizzle over potatoes. Sprinkle with paprika. Bake until heated through, about 20 minutes.

24 small red potatoes (about 2-1/2 pounds)
1/4 cup butter, cubed
1/2 cup shredded Parmesan cheese, divided
1/2 cup crumbled cooked bacon, divided
2/3 cup sour cream
1 large egg, beaten
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika

Steps:

  • Scrub potatoes; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain., When cool enough to handle, cut a thin slice off the top of each potato. Scoop out pulp, leaving a thin shell. (Cut thin slices from potato bottoms to level if necessary.), In a large bowl, mash the potato tops and pulp with butter. Set aside 2 tablespoons each of cheese and bacon for garnish; add remaining cheese and bacon to potatoes. Stir in the sour cream, egg, salt and pepper. Spoon mixture into potato shells. Top with remaining cheese and bacon; sprinkle with paprika., Place in an ungreased 15x10x1-in. baking pan. Bake at 375° until a thermometer reads 160°, 12-18 minutes.

These are so easy and yummy. They can be made ahead of time and refrigerated. Just bake and serve with your favorite steak.

Number Of Ingredients 6

8 baking potatoes
1/3 cup milk
3 teaspoons butter or 3 teaspoons margarine
salt and pepper
1 (4 ounce) package garlic & herb spreadable cheese
paprika (optional)

Steps:

  • Preheat oven to 425°F.
  • Prick potatoes and bake about an hour or until tender.
  • Let cool until they can be handled.
  • Cut 1/3 off the top of the potato, horizontally.
  • Scoop put cooked potato leaving 1/4 inch thick shell.
  • Mash scooped potatoes with milk, butter, salt and pepper.
  • Stir in garlic and herb cheese.
  • Spoon mashed potatoes back into the shells.
  • Sprinkle with paprika.
  • Place on an ungreased cookie sheet.
  • Bake at 375°F for about 30 minutes or until hot and lightly browned.

ASIAGO POTATOES

16 small Red Bliss potatoes (about 2 inches in diameter)
12 garlic cloves
1/2 cup olive oil
10 large basil leaves
1/2 lb Asiago cheese, grated
1 cup mayonnaise
Garnish:
paprika

Steps:

  • Generously cover potatoes and 1 tablespoon salt with cold water in a medium pot, then simmer until tender, about 12 minutes. Drain potatoes and rinse with cold water. Cool to room temperature in refrigerator, about 40 minutes.
  • Meanwhile, cook garlic in oil at a bare simmer in a small heavy saucepan, stirring occasionally, until tender and golden, about 12 minutes.
  • Drain garlic, reserving oil for another use, then mash to a paste.
  • Preheat oven to 350°F with rack in middle.
  • Mince basil, then stir together with garlic paste, cheese, mayonnaise, and salt and pepper to taste.
  • Using a small melon-ball cutter or a teaspoon, scoop out a hole in each cooled potato, leaving a 1/4-inch shell.
  • Stuff potatoes with cheese mixture and bake in a pan until cheese is melted and bubbling, about 20 minutes.

12 to 15 baby red-skinned potatoes, washed, skins on
2 tablespoons olive oil
2 cups sour cream
5 tablespoons finely sliced scallion or chives
2 to 3 strips crisply cooked bacon, crumbled or finely chopped
freshly ground black pepper

Steps:

  • Preheat oven to 400°F. Cut potatoes in half crosswise. Mix with oil in bowl. Place cut side down on a baking sheet. Bake potatoes until just tender, about 25 minutes, and cool completely.
  • In a medium bowl, combine the sour cream, 4 tablespoons scallion or chives, and bacon. Add pepper to taste. Cut a thin slice off rounded end of each potato so that it will sit upright. Turn the potatoes over and, using melon baller or small spoon, scoop out some of the center of each potato (reserve for later use in potato pancakes or gnocchi). Fill with 1 tablespoon of the sour cream mixture, and garnish with the remaining scallion or chives. Serve immediately or cover and chill until needed.

4 potatoes, medium size
1 cup low-fat ricotta cheese, smooth
1 teaspoon garlic, minced
2 tablespoons chives, chopped
2 teaspoons parsley, chopped
salt and pepper
2 tablespoons sweet chili sauce (optional)

Steps:

  • Heat the oven to 220 degrees celcius. Prick the potatoes with a fork, coat with cooking spray and place on a baking tray. Bake for 1 hour or until cooked.
  • When the potatoes are cooked, cut the tops off and scoop out the flesh, leaving a 1cm shell. Return the shells to the oven for 10 minutes.
  • Combine the ricotta with the potato flesh, garlic, chives and parsley and season to taste with salt and pepper. Fill each potato shell with the ricotta and herb mixture and return to the oven for 10 minutes. Top with the sweet chili sauce if desired.

This recipe came with my Kitchen Aid mixer. It was a little time consuming, but worth the effort. I made them for Easter dinner and my family loved them. Some of them even topped the potatoes with bacon bits.

8 small red potatoes, boiled
1/4 cup sour cream
1 tablespoon melted butter
1/4 teaspoon garlic salt
1/4 teaspoon dried thyme leaves
1/4 cup finely chopped green onion
1/4 cup cheddar cheese
paprika

Steps:

  • Cut potatoes in half and scoop cut insides elaving 1/8 inch shells.
  • Place insides in mixer bowl.
  • Mix for 1 minute at speed 2.
  • Add sour cream, butter, garlic salt, and thyme.
  • Mix for 30 seconds at speed 2.
  • Stop and scrape bowl.
  • Turn to speed 2 and mix another 30 seconds.
  • Add onions and mix until just blended.
  • Spoon potato mixture into shells.
  • Place filled shell in a shallow baking dish.
  • Bake at 375 for 20-25 minutes or until thoroughly heated.
  • Sprinkle with cheese and paprika.
  • Bake 5 minutes longer or until cheese is melted.
