MINI-REUBEN APPETIZERS
These are great little appetizers and so easy to make. Prepare in advance and pop in the oven just before serving.

Steps:
- Drain sauerkraut.
- Place coctail ryes on cookie sheet in single layer.
- Carefully place corn beef on each slice of rye.
- Add 1 tablespoon saurerkraut on top of corn beef.
- Squeeze a dash of thousand island dressing on top of saurkraut.
- Top with swiss cheese.
- Preheat oven to 350 degrees.
- Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

- Press wonton wrappers into miniature muffin cups coated with cooking spray. Bake at 350° for 6-7 minutes or until lightly browned. , Meanwhile, in a small bowl, combine the corned beef, sauerkraut and dressing. Spoon into wonton cups. Sprinkle with cheese., Bake for 8-10 minutes or until filling is heated through. Serve warm.

MINIATURE REUBEN APPETIZERS
I made these this year as one of the many appetizers for our Christmas Eve get together. Perfect!

Steps:
- 1. Preheat oven to 350º.
- 2. Place all bread slices on an ungreased cookie sheet.
- 3. Spread each slice with Thousand Island dressing, followed by a slice of corned beef or pastrami, folded in square to fit bread slice, followed by a tablespoon of sauerkraut, followed by a square of Swiss cheese.
- 4. Bake in preheated oven at 350 degrees for 10 to 12 minutes or until cheese is melted.
- 5. They're best warm from the oven,but still very good after they cool off. ***My tip or trick is to place a heating pad on low. Set the tray of sandwiches on this while the party is going on.*** This keeps them a nice temperture for eating.

- For each sandwich, spread 1 slice bread with about 1/2 to 1 t mayonnaise and another with 1/2 to 1 t mustard.
- In each sandwich, layer slices of corned beef, cheese and 1/2 T sauerkraut, close the sandwich.
- Brush butter on the outside of the sandwiches and cook in a nonstick skillet over medium heat until golden on both sides.
- Wrap sandwiches in foil until guests arrive, then place on a plate and pass for hors d'oeuvres.

- Unroll dough into 16 triangles; cut each triangle lengthwise into thirds and place one Little Smokey on each piece; If using hot dogs, leave dough in original size and place one hot dogs on each crescent roll.
- Place 1 tbsp.(for hot dogs) or 1/2 tablespoons (for Smokies) sauerkraut around meat, and roll up --ending with point of triangle. Place on ungreased cookie sheet; Bake at 375° for 12 minutes or until golden brown.
- Mix dressing and horseradish; Serve as dipping sauce.

These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them. A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

- 1. Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.
- 2. Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.
- 3. Bake for 10 to 12 minutes or until cheese is melted and bubbly. Serve warm from the oven.
