STRAWBERRY LIME MOUSSE

One 14-ounce can sweetened condensed milk
1 cup frozen strawberries
1 tablespoon sugar
1 lime, zested and juiced
One 8-ounce carton frozen whipped topping, thawed
Vanilla wafer cookies, for serving

Steps:

  • Put the sweetened condensed milk, strawberries, sugar and lime juice in a blender. Blend until smooth and well mixed. Transfer to a bowl. Using a rubber spatula, fold in the lime zest and thawed frozen whipped topping until thoroughly combined.
  • Scoop into 6 pretty glasses and add a vanilla wafer to each serving.

Lisser Sue's Strawberry Pie (Fruit Juice Sweetened) image

I've been thinking about this pie for a long time and when I saw 4 pound packages of strawberries for $4.99 at the store I knew today was the day! This is inspired by Recipe #262164 and Recipe #280726. You can also make the strawberry layer with 12 ounces of white grape juice concentrate and add food color. It's a little sweeter that way. I used 3 drops of the neon pink and 3 drops of red and got a really nice color.

1 quart strawberry, trimmed and quartered
12 ounces apple juice concentrate (I used apple-kiwi-strawberry but Zaar wouldn't allow that description)
1 pinch salt
3 tablespoons cornstarch
8 ounces neufchatel cheese, softened
6 tablespoons white grape juice concentrate
1 pie crust, baked

Steps:

  • Mix strawberries through cornstarch and cook over medium heat, bringing to a boil then reducing heat.
  • Cook for 5 minutes, stirring to prevent sticking.
  • Separately combine the softened cream cheese and grape juice concentrate in a food processor.
  • Pour the cream cheese mixture into an already-baked pie shell.
  • Top with the cooked strawberry mixture.
  • Chill before serving.

This recipe is so simple and delicious!! The recipe is one that I got from The Georgia Farm Bulletin. When my sweet Mother was alive she got their bulletin each month. They have such good recipes. Strawberries are so plentiful and sweet this time of year. I needed something quick (and of course yummy) for a covered dish...

1 can(s) sweetened condensed milk
1/4 c fresh lemon juice
8 oz cool whip, thawed
1 large angel food cake (or 2 small rectangular ones)
4 c fresh strawberries (sliced, mashed and sweetened)**
fresh strawberries for garnish
** I DIDN'T SWEETEN THEM -THEY WERE ALREADY SWEET -AND THE CONDENSED MILK IS SWEETENED. I ALSO DIDN'T MASH MINE -JUST SLICED THEM AND CUT EACH SLICE INTO ABOUT 4-6 PIECES. I LIKE IT A LITTLE CHUNKY.

Steps:

  • 1. Gather all ingredients.
  • 2. Mix sweetened condensed milk and lemon juice together. Then fold in thawed Cool Whip.
  • 3. Tear cake into pieces, or slice smaller cakes into approximately 1-inch pieces.
  • 4. Layer 1/2 of the cake pieces in 9x13 inch baking dish.
  • 5. Pour 2 cups of strawberries over cake.
  • 6. Spread 1/2 of Sweetened Condensed Milk mixture over strawberries. Repeat by layering with other half of ingredients -beginning with the cake and ending with the topping (sweetened condensed milk mixture).
  • 7. Garnish with fresh strawberries, if desired. Cool in refrigerator until ready to serve. Best when made a few hours in advance.
  • 8. Enjoy a piece of heaven -"Strawberry Heaven."

PEACH FREEZER JAM (FRUIT JUICE SWEETENED)

I like this jam since it is fruit juice sweetened. Most jam recipes using sugar are to sweet. This recipe is very easy to make.

1 (1 3/4 ounce) package no sugar needed fruit pectin
1 3/4 cups apple juice
1 tablespoon fresh lemon juice
3 cups peeled pitted, and finely chopped ripe peaches (about 6 medium)

Steps:

  • Gradually stir in pectin into apple and lemon juice in a medium saucepan until dissolved. Bring to a full rolling boil that cannot be stirred down, over medium high heat, stirring constantly. Remove from heat.
  • Stir in peaches and stir for 1 minute. Ladel jam into clean plastic containers leaving 1/2 inch headspace. Put on caps and let jam sit in fridge until set. Put in the freezer for up to 1 year or keep in the fridge for up to 3 weeks.

1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
1 carton (12 ounces) frozen whipped topping, thawed
1 quart fresh strawberries, sliced, divided
2 graham cracker crusts (9 inches)

Steps:

  • In a large bowl, combine milk and lemon juice. Fold in whipped topping. Set aside 1/3 cup strawberries for garnish; stir remaining strawberries into filling. Spoon into crusts. Refrigerate for at least 4 hours before serving. Garnish with reserved strawberries.
