8 slices bacon (I find that thin bacon works better)
16 dates
4 ounces goat cheese
toothpicks

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
  • Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
  • Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
  • Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it's laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

15 Medjool pitted dates
1 pound aged Manchego, cut into 15 blocks
5 slices bacon, cut into thirds
1/2 cup maple syrup

Steps:

  • Preheat the oven to 400 degrees F.
  • Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
  • Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

8 slices bacon (cut in half)

Steps:

  • Cut the dates open along one side and remove the pits.
  • Stuff the dates with their filling and wrap each in a slice of bacon.
  • Place the bacon wrapped dates into a baking pan with the seam of the bacon down.
  • Bake in a preheated 425F/220C oven until the bacon is cooked and slightly crispy, about 12-16 minutes, flipping once in the middle.

1 pound pitted dates
4 ounces blue cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.

18 (1- by 1/4-inch) sticks Parmigiano-Reggiano (from a 1/2-lb piece)
18 pitted dates (preferably Medjool)
6 bacon slices, cut crosswise into thirds

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Stuff 1 piece of cheese into each date, then wrap 1 piece of bacon around each date, securing it with a pick. Arrange dates 1 inch apart in a shallow baking pan.

This is a great appetizer for guests. We were originally taught this recipe with chorizo, but we like it better with Linguiça. Just use regular inexpensive bacon. For some reason, we think it just tastes better than the fancy thick cut bacon.

12 medjool dates
1 (6 ounce) package linguica sausage
6 pieces of regular bacon
11 toothpicks

Steps:

  • Preheat oven to 350 degrees.
  • Take a small knife and cut a slit down the side of each date and remove the seed. Do not cut the date in half.
  • Cut the sausage into 6 thin slices (maybe 1/4 inch thick). Now, you have 6 round 1/4 inch slices of sausage. Cut these in half. So, now you have 12 "slivers" of sausage.
  • remove 6 slices of bacon and cut them in half.
  • Take one sliver of sausage and place it into the date. It should fit in nicely and not be to big or small (remember, you want to taste the sausage). Now, take one of half slices of bacon and wrap it around the date so that the bacon holds the sausage in the date. The bacon should wrap all the way around the date. Now stick a toothpick through the date to hold it all together.
  • Repeat this until all the dates are stuffed and wrapped.
  • Now, place the wrapped dates on a cookie sheet and put them in the oven for 20 minutes (or until the bacon looks crisp).
  • Let them cool and enjoy.
