CREAMY CHICKEN ON LINGUINE



Creamy Chicken on Linguine image

Sliced chicken with a creamy onion sauce layered on linguine. Good reheated the next day, too! Serve with garlic toast or bruschetta!

1 tablespoon olive oil
2 tablespoons butter
1 clove garlic, minced
6 skinless, boneless chicken breast halves
1 (16 ounce) package linguini pasta
1 onion, chopped
1 cube chicken bouillon, crumbled
½ cup water
1 ¼ cups heavy cream
¾ cup milk
4 green onions, sliced diagonally into 1/2 inch pieces
1 cup grated Parmesan cheese

Steps:

  • In a large saute pan, heat oil, butter and garlic over medium heat. Add chicken and cook until juices run clear. Remove chicken from pan let cool and slice diagonally into long strips. Reserve oil in pan.
  • Meanwhile, cook pasta according to directions on package. Drain.
  • Reheat oil in pan, add onion and saute, stirring often, until onion is soft but still white. Add bullion cube and water; bring to a boil and simmer uncovered for approximately 10 minutes. Stir in cream, milk, green onions and Parmesan cheese.
  • Place pasta in a bowl, layer chicken slices in a decorative pattern over pasta, pour sauce over top of chicken and around pasta. Garnish with parsley or any herbs you desire. Serve immediately.

This is modified from an old magazine recipe. We've been making this version for years. We prefer the lighter sauce now and often I double the sauce ingredients to make more.

4 (4 ounce) boneless skinless chicken breast halves
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons butter, divided
1 teaspoon olive oil
1 1/2 cups white wine, divided
4 tablespoons fresh lemon juice, divided
2 tablespoons capers
1/2 cup chopped fresh parsley
8 ounces linguine, cooked (4 cups cooked)

Steps:

  • Place each chicken breast half in a large zip bag, one at a time.
  • Flatten to 1/4 inch thickness using a meat mallet or a rolling pin.
  • Remove from the bag, set aside and repeat with the remaining chicken breast halves.
  • Combine flour, salt and pepper; dredge chicken in flour mixture.
  • Heat 1 tsp butter and oil in a large skillet over medium-high heat.
  • Add chicken; cook 3 minutes on each side or until golden brown.
  • Add 3/4 cup wine, 2 tbsp lemon juice and capers to pan with chicken, scraping up brown bits and cook 2 minutes.
  • Remove chicken from pan and keep warm.
  • Stir in 3/4 cup wine, 2 tbsp lemon juice and cook until reduced to about 1/2 cup (about 5 minutes).
  • Stir in 1 tsp butter.
  • Return chicken to pan and place 1/4 of the chopped parsley on top of each chicken breast half.
  • Divide the pasta into 4 pasta bowls.
  • Place a chicken breast half on top of each drizzle about 2 tbsp sauce over each.

This is a delicious meatless pasta dish. I was very pleasantly surprised when I tasted this for the first time. It was much better than I thought it would be!

8 ounces dreamfields low-carb linguine or 8 ounces whole wheat linguine
1 medium onion
1 garlic clove
1 (15 ounce) can black beans, rinsed and drained
1 tablespoon olive oil
2 (15 ounce) cans stewed tomatoes, presliced
1/2 cup medium Pace Picante Sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried oregano
4 ounces shredded low-fat monterey jack and colby cheese
1/4 cup chopped fresh cilantro

Steps:

  • Cook pasta using package directions; drain. Rinse with cool water; drain again. Cover to keep warm.
  • Chop onion coarsely. Mince garlic. Drain and rinse black beans.
  • Heat oil in a large skillet over medium-high heat until hot. Add onion and garlic and mix well. Sauté until onion is tender (about 3 minutes).
  • Add undrained tomatoes, picante sauce, black beans, chili powder, cumin and oregano and mix well. Bring to a boil, stirring occasionally. Reduce heat to low and cover.
  • Simmer the sauce, stirring occasionally, for 15 minutes; remove cover. Increase heat to medium-high. Cook, stirring frequently, until of the desired consistency, about 5 minutes.
  • Place hot cooked pasta on a serving platter. Spoon sauce over pasta. Sprinkle with Colby Jack. Top with cilantro (optional) serve with garlic bread on the side.

Hot pepper sauce and a jalapeno pepper give this snappy sauce just the right amount of zip. It makes a great dip for tortilla chips or a tangy sauce for tacos and fajitas.
