- In 4-quart Dutch oven, cook linguine as directed on package. Drain; rinse with hot water. Return to Dutch oven to keep warm.
- Meanwhile, in 2-quart saucepan, melt butter over medium heat. Add shallot and garlic; cook and stir 1 minute. In medium bowl, beat half-and-half and flour with wire whisk; add to saucepan. Heat to boiling, stirring frequently. Beat in sour cream with wire whisk. Reduce heat to low; cook 1 to 2 minutes or until heated. Remove from heat; stir in 1/4 cup cheese, the salt and pepper.

- Bring a large pot of salted water to a boil over high heat. Cook the linguine according to package instructions until al dente. Reserve ¼ cup of pasta water, then drain the pasta in a colander.
- Melt the butter in a large saucepan over medium-low heat. Add the garlic and cook, stirring often, until aromatic, about 30 seconds.
- Add the heavy cream and simmer for 2 minutes. Add ½ teaspoon of salt, the pepper, and Parmesan and stir until the cheese has melted.
- Add the drained pasta and 1 tablespoon of reserved pasta water to the alfredo sauce and use tongs to toss until well coated, about 1 minute. If the sauce is too thick, add more pasta water, 1 tablespoon at a time.
- Remove the pan from the heat, top with parsley, and serve immediately.

HELEN'S SHRIMP LINGUINE ALFREDO

- Prepare linguine according to package directions. In large skillet over medium-high heat cook shrimp, mushrooms and garlic in butter 5 minutes until shrimp turn opaque, stirring frequently. Remove mushrooms, and shrimp from pan and add enough cream to make a sauce. Add Parmesan to taste. Cook, stirring constantly to deglaze. Thicken with cornstarch as desired and add salt and pepper to taste. Drain linguine. In large serving bowl combine shrimp mixture, linguine, and sauce. Toss gently to coat well. - Saute garlic in oil, in a sauce pan 1-2 minutes.
- In small bowl mix flour and broth together until there are no lumps. Add to pan and simmer until it thickens.
- Turn off heat. Stir in yogurt, pasta, optional meat/veggies and half of the parsley and half of the cheese. Add salt and pepper to taste.
- Stir again and top with remaining parsley and cheese.
- We love this with chicken. I usually serve it with a salad and bread.

- 1. Cook pasta to desired doneness as directed on package. Drain; rinse with hot water. Drain well.
- 2. Meanwhile pat shrimp with a paper towel until completely dry. Sprinkle with salt and pepper.
- 3. Heat a large, deep skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and add shrimp. Cook the shrimp until pink and cooked through, about 5 minutes. Transfer the shrimp to a bowl.
- 4. Reduce heat to medium low. Melt remaining butter in skillet, add garlic to sauté. Add heavy cream, stirring constantly. Stir in salt, pepper, nutmeg, and grated Parmesan cheese. Stir constantly until cheese is melted, then mix in egg yolk.
- 5. Simmer over medium low heat for 3 to 5 minutes, stirring often until thickened. If sauce is too thick, thin with milk. Add the shrimp and cooked pasta, and toss well. Garnish with additional grated Parmesan cheese and fresh chopped parsley, if desired.

- Melt spread in 2-quart saucepan over medium heat and cook walnuts 3 minutes or until golden. Stir in garlic and cook 30 seconds. Stir in sauce. - In a large skillet, saute onion in oil. When softened add in chicken. Cook until no longer pink.
- While you are cooking the chicken, you should be boiling your water for the pasta. Try to time it when they are done about the same time.
- Remove chicken from pan with slotted spoon and set aside. Keep warm.
- Turn the heat down as to not burn the butter. Add butter to skillet. Let it melt, add the garlic and cook for 1 minute.
- Add the wine or broth.
- Stir in the parmesan cheese until melted.
- Return chicken and the pasta to the "sauce", and toss.
