A popular Brazilian appetizer. Adapted from Planet Barbecue. Try to find the straightest sausage links possible. Other cooked sausage may be substituted; kielbasa is a good alternative.

1 1/2 lbs linguica sausage (or other cooked sausage)
6 ounces coarsely grated cheese (mozzarella, jack, gouda or other soft cheese)

Steps:

  • Slice the sausage in half lengthwise.
  • Preheat grill to medium-high.
  • Brush and oil grill grate.
  • Grill sausage, cut side down, until sizzling and golden brown, 3-5 minutes.
  • Turn sausage over.
  • Thickly sprinkle cut side with cheese.
  • Close grill lid and continue grilling until sausage is browned on uncut side and cheese is melted and bubbling, about 3 minutes more.
  • Using a spatula, carefully transfer the linguica to a cutting board, keeping the cheese on top.
  • Cut crosswise into 1" pieces.
  • Serve on toothpicks.

When I couldn't figure out what to do with a roll of bulk chorizo sausage, this recipe was born. It may sound similar to other dip recipes, but don't let that fool you...the flavor of this dip definitely sets it apart from the rest. This also reheats well. Enjoy!

10 ounces bulk chorizo sausage
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) package processed cheese (such as Velveeta®), cubed

Steps:

  • Cook and stir chorizo sausage in a skillet over medium heat until cooked completely, 5 to 7 minutes; drain and transfer to a slow cooker.
  • Stir diced tomatoes, cream cheese, and processed cheese in with the chorizo.
  • Cook on Low until cheese is melted, stirring occasionally, 1 1/2 to 2 hours.

Potatoes, hot turkey sausage and carrots equal a family pleasing concoction. It's spicy, flavorful, and simple to put together. My two sons and husband all liked this meal, which is a real accomplishment in and of itself! If spicy is not your thing, feel free to use mild or sweet sausage links in its place. *Picture is of dish before being placed into oven*

2 tablespoons olive oil
1 tablespoon chopped fresh parsley
4 potatoes, cooked and cubed
1 (20 ounce) package spicy smoked pork sausage links
1 tablespoon chopped fresh cilantro
2 whole carrots, sliced
1 dash salt and pepper, to taste

Steps:

  • Preheat oven to 350*F (175*C).
  • Grease the bottom of an 8X8X2inch baking dish with 1 TBS olive oil.
  • On this layer the cubed cooked potatoes and sliced cooked carrots.
  • Evenly distribute the sliced hot links.
  • Top with parsley and cilantro.
  • Drizzle with 1 tbsp of olive oil.
  • Place in the pre-heated oven for 45 minutes.
  • Serves 4.
