LIME NUT JELLO SURPRISE

Another Jello dish that is popular at holidays in my hometown, especially with my Tanner friends. They just call it "The Green Stuff." My Southern friends call it "Lime Nut Congealed Salad." We just call it "delicious." =^..^=

Number Of Ingredients 6

1 large (6 oz.) package of lime jello mix
2 c boiling water
1 1/2 c cold water (or use the pineapple juice as part of this)
8 oz block of cream cheese
20 oz can of crushed pineapple, well-drained
1 c walnut pieces

Steps:

  • 1. Boil 2 cups of water. In a medium-sized bowl, stir together the boiling water and the lime Jello mix. With a fork, blend the cream cheese into the hot mixture until it's in tiny pieces.
  • 2. Add the cold water, drained pineapple, and walnuts. Mix well.
  • 3. Pour into a 8 x 8" pan and refrigerate until set.

2 cups seedless red grapes, halved
1 cucumber, chopped
½ cup cooked quinoa, or more to taste
¼ cup chopped fresh mint, or to taste
¼ cup chopped fresh spinach, or more to taste
⅔ cup toasted slivered almonds
1 teaspoon salt
8 teaspoons grapeseed oil
8 teaspoons lime juice

Steps:

  • Toss grapes, cucumber, quinoa, mint, spinach, and almonds together in a large bowl; sprinkle salt over the top.
  • Whisk grapeseed oil and lime juice together in a small bowl; pour over quinoa mixture and toss to coat. Refrigerate until flavors combine, at least 3 hours.

1 package (3 ounces) lime gelatin
1 can (8 ounces) crushed pineapple, drained
1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
1/2 cup chopped pecans
1 package (3 ounces) cherry or strawberry gelatin

Steps:

  • Prepare lime gelatin according to package directions. Refrigerate until partially set, about 1 hour. Stir in pineapple. Pour into an 8-cup bowl or mold coated with cooking spray. Cover and refrigerate until firm, about 3 hours. , In a small bowl, beat cream cheese and mayonnaise until smooth; stir in pecans. Spread over lime gelatin. Refrigerate until firm, about 2 hours. , Prepare strawberry gelatin according to package directions; cool slightly. Carefully spoon over cream cheese layer. Refrigerate until firm about 3 hours or overnight.

This is my grandmother's recipe. My family traditionally serves this during the holidays. Note: Cook time is approximate chilling time.

2 pkg lime gelatin (3 oz. each)
2 c boiling water
1 can(s) crushed pineapple, drained (large)
1/2 tsp prepared horseradish
1 can(s) eagle brand sweetened condensed milk
1 c mayonnaise
1 pt cottage cheese
1 can(s) chopped walnuts

Steps:

  • 1. Dissole gelatin in boiling water; add crushed pineapple. Refrigerate until mixture begins to thicken.
  • 2. Combine the remaining ingredients and add to the gelatin mixture.
  • 3. Chill.

I love mango & lime lemonade...this lovely dish, reminds me of it. A lovely addition to any meal. It's great for cleansing your pallet. This is also good served over lemon, orange or pineapple sherbet. Please note that the chilling time is included in cooking time.

2 mangoes, large, peeled, pitted, cut into thin wedges
1 lime, big, finely shred 1/4, squeeze juice & reserve
1 lemongrass, chopped
3 tablespoons sugar, white
4 scoops ice cream, coconut or 4 scoops vanilla
4 sprigs mint (garnish)

Steps:

  • Place your prepared mango in a serving dish.
  • In a pot add the lime juice, lemongrass and sugar.
  • Heat gently, no boiling until the sugar is completely dissolved.
  • Do not use juice until it is completely cooled.
  • Strain the juice and pour over the mango wedges.
  • Sprinkle with the lime rind, cover, chill for at least 3 hours.
  • Serve in small bowls with a scoop of ice cream or sherbert and garnish with the sprigs of mint.
