CREATED by my husband's cousin, this salad appeared in her church's recipe book. Since it's quick and easy to prepare, I make it often for my husband and me now that we're "empty nesters". It's light and attractive. -Nancy Vavrinek, Adrian, Michigan

Number Of Ingredients 4

1 can (8 ounces) crushed pineapple, undrained
1/4 cup lime gelatin powder
1/2 cup cream-style cottage cheese
1 cup whipped topping

Steps:

  • In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

1 pkg White cake mix
1 3oz package lime jello
1 C hot water
1/2 cup fruit juice or water
1/2 Cup drained crushed pineapple
Few drops lemon juice
1 c whipping cream
1/4 c powdered sugar

Steps:

  • 1. Make cake and let cool 2. Dissolve jello in hot water. Add fruit juice, and chill until almost firm. Add pineapple and lemon juice. 3. Put cake together by spreading jello mixture between and top of the cake. Ice the sides with whipped cream. Keep in refrigerator until serving time 1 cup whipping cream 1/4 cup powdered sugar

1 pkg lime jello
1 c hot pear juice
1 c sieved or pureed pears
1 pkg 3 oz. softened cream cheese
1 c heavy whipping cream

Steps:

  • 1. Dissolve 1 package lime jello in 1 cup hot pear juice. (Strain juice from canned pears and add enough water to juice to make one cup.) Juice can be heated in a glass measuring cup in the microwave.
  • 2. Puree the pears in blender. Add pureed pears to the softened cream cheese and blend to a smooth consistency using a mixer. Stir into jello.
  • 3. Whip the one cup heavy cream and fold into the jello mixture. Pour into mold, chill till firm, and unmold.

Number Of Ingredients 13

1 cup butter, softened
1/2 cup confectioners' sugar
2 teaspoons grated lime zest
1-3/4 cups all-purpose flour
1/4 teaspoon salt
FILLING:
4 large eggs
1-1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup lemon juice
2 teaspoons grated lemon zest
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in lime zest. Combine flour and salt; gradually add to creamed mixture and mix well. , Press into a greased 13x9-in. baking dish. Bake just until edges are lightly browned, 13-15 minutes., Meanwhile, in another large bowl, beat eggs and sugar. Combine flour and baking powder. Gradually add to egg mixture. Stir in lemon juice and zest; beat until frothy. Pour over hot crust. , Bake until light golden brown, 20-25 minutes. Cool on a wire rack. Dust with confectioners' sugar. Cut into squares. Store in the refrigerator.
