8 lime rinds, halved and squeezed, juice reserved for another use
1 cup sugar
ice
2 oz white rum
1 oz lime juice
1 oz lime rind simple syrup
4 fresh mint leaves, plus more for garnish
ginger beer, to taste
1 slice lime, for garnish

Steps:

  • In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there's syrup in the bottom of the bowl.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible. Store in an airtight container in the refrigerator for up to 3 months.
  • In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with ginger beer.
  • Garnish with the slice of lime and mint leaves.
  • Enjoy!

½ lime, cut into wedges
5 raspberries, a nice handful
1 teaspoon sugar
10 fresh mints, a good bunch
¼ cup white rum
club soda

Steps:

  • Throw the lime wedges, raspberries, mint, and sugar into a glass and then, using a muddler or wooden spoon, press down on the ingredients to mush them all together and get all of the juice out of the lime wedges.
  • Add ice and pour in rum (you can just eyeball the amount, if you don't have something handy to measure) and then top the glass off with club soda.
  • If you want it a little more or less sweet, you can always add slightly more or slightly less sugar. It's also delicious with less rum, or no rum at all.
  • Stir well and top with fresh mint.
  • Enjoy!

2 lime wedges
1 fl oz ginger syrup
ice
2 fl oz bourbon
3 fl oz club soda
fresh mint, to serve
lime wedge, to serve
1 cup fresh ginger, peeled and chopped
1 cup sugar
2 cups water

Steps:

  • In a small saucepan, combine ginger syrup ingredients and bring to a boil. Lower to a simmer and cook for 10 minutes.
  • Strain through a sieve and cool.
  • Place the mint and one lime wedge in the bottom of tall glass. Muddle well and add 1 ounce (30 ml) of ginger syrup. Add the second lime wedge and muddle again.
  • Top off glass with the bourbon, ice, and club soda. Stir well and garnish with a lime wedge and a few mint leaves.
