GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
LIME GELATIN AND COTTAGE CHEESE SALAD
This lime jello salad offers everything people adore (or cannot abide) about over-the-top congealed salads. Not everyone enjoys a congealed salad, not even when they harbor fond memories of a grandmother or other family members serving these molded creations on special occasions. That just means there's more for the rest of us.

- Dissolve gelatin in boiling water in a large bowl. Add ice water, and stir until ice melts and gelatin mixture cools. Stir in pineapple. Cover and chill 45 minutes or until slightly set. The mixture should be the consistency of uncooked egg whites.
- Stir together cottage cheese, mayonnaise, sweetened condensed milk, horseradish, lemon juice, and salt in a medium bowl; stir into gelatin mixture. Fold in nuts.
- Pour into mold, if desired. Cover and chill overnight.

- Dissolve jello in 1 cup hot water and pour into blender. Put blender on medium speed and add 1 cube of cream cheese at a time; blend until smooth.

- 1. Dissolve 1 package lime jello in 1 cup hot pear juice. (Strain juice from canned pears and add enough water to juice to make one cup.) Juice can be heated in a glass measuring cup in the microwave.
- 2. Puree the pears in blender. Add pureed pears to the softened cream cheese and blend to a smooth consistency using a mixer. Stir into jello.
- 3. Whip the one cup heavy cream and fold into the jello mixture. Pour into mold, chill till firm, and unmold.
