Chicken Curry Soup recipe with Coconut and Lime. Here, lime juice replaces the traditional lemongrass, which can be hard to find. The result is a quick, authentic-tasting Thai-style soup. If coconut milk is unavailable, substitute 1 3/4 cups half and half mixed with 3/4 teaspoon imitation coconut extract.

1 14 1/2-ounce can low-salt chicken broth
1 13 1/2- to 14-ounce can unsweetened coconut milk
1/2 tablespoon curry powder
1 jalapeño chili, seeded, minced
4 boneless skinless chicken breast halves, cut into 3/4-inch pieces
2 tablespoons fresh lime juice
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
1 cup freshly cooked white rice
Lime wedges

Steps:

  • Bring chicken broth, coconut milk, curry powder and chili to simmer in heavy medium saucepan over medium heat. Add chicken and simmer until chicken is just cooked through, stirring occasionally, about 5 minutes. Mix in lime juice. Season with salt and pepper.
  • Transfer soup to bowl. Sprinkle green onion and cilantro over. Spoon rice into each bowl. Ladle soup over. Serve, passing lime wedges separately.

8 green onions, sliced

2 pounds boneless skinless chicken thighs, cut into 1/2-inch pieces

  • Place the first 9 ingredients in a 4- or 5-qt. slow cooker; stir in chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Skim fat; stir in cooked rice. Cook, covered, on low 15-30 minutes or until heated through. Sprinkle servings with cilantro.

1 (14 ounce) can unsweetened coconut milk
1/2 tablespoon curry powder
1 jalapeno chile, seeded and minced

2 tablespoons fresh lime juice
salt and pepper
1/4 cup green onion, chopped

6 lime leaves (2 finely chopped and the centre vein discarded)
1 thumb-sized red chilli (deseeded if you don't like it too hot)
6 lemongrass stalks, tough outer leaves removed, finely chopped
3cm piece ginger , peeled
small pack coriander , stems for the paste, reserve the leaves to serve
2 tbsp soft brown sugar
3 tbsp tamarind purée
2 tsp vegetable oil
400ml can coconut milk
8 boneless, skinless chicken thighs , halved
zest and juice 2 limes
100g fine green bean
2 small mangoes , peeled and cut into 3cm pieces
cooked jasmine rice , to serve

Steps:

  • Blend the chopped lime leaves with the rest of the curry paste ingredients in a food processor.
  • Heat the oil in a large saucepan, add the curry paste and cook on a medium heat for 2-3 mins. Pour in the coconut milk and bring to a simmer. Add the chicken, lime zest and juice, then season and cover. Gently simmer for 30 mins until the chicken is tender.
  • Remove the lid and cook for a further 10 mins. Add the green beans, mangoes and whole lime leaves and cook for 5 mins. Add the coriander leaves just before serving with hot jasmine rice.

3 TBS peanut oil
4 (4 oz) skinless chicken thighs
2 cloves garlic, minced
3 TBS red curry paste
2 (13.5 oz) cans coconut milk (do not shake before opening!)
3 TBS brown sugar
2 TBS Thai fish sauce
2 TBS lime juice (~ 1 lime)
1 small sweet potato, peeled and cut into chunks
1 small can pineapple chunks, drained
1/2 cup frozen peas
Fresh, chopped basil or cilantro, for garnish
1 TBS chili-lime salt
2 TBS lime juice (~ 1 lime)

Steps:

  • 1. Open coconut milk. Scrape 2 TBS coconut solids from tops of cans. Add coconut solids and peanut oil to medium saucepan and heat over medium-high heat. Add chicken thighs and cook on both sides until brown and crispy, about 3-4 minutes per side. Remove chicken from pan and set aside. 2. Add minced garlic to skillet and saute one minute. Add curry paste, and saute 2 minutes, blending paste with garlic and oil and scraping up any browned bits. 3. Add remainder of coconut milk and solids to saucepan and mix well, scraping any browned bits. Add brown sugar, fish sauce, and 2 TBS lime juice, mixing well. Bring to a boil, and add browned chicken thighs to pan, making sure curry covers thighs. Reduce heat to low and cover pan. Simmer about 20 minutes. 4. Uncover pan and add sweet potato chunks. Cover pan and simmer another 20 minutes. 5. Remove chicken thighs from pan. Remove meat from bone and cut into large pieces. Return chicken to pan along with peas. Simmer another 5 minutes. 6. To make chili-lime sauce, combine chili-lime salt with lime juice, and put into 4 individual dipping bowls. Serve curry hot with sticky white rice and chili-lime sauce on the side (for dipping chicken pieces into). Sprinkle chopped basil or cilantro over for garnish. Makes 4 servings. Each serving = 16 Weight Watchers points.

2 tablespoons coconut milk
1 tablespoon Thai red curry paste
1 tablespoon honey

1 tablespoon roasted peanuts, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Spread the wings on two large rimmed baking sheets, then drizzle with olive oil, the juice of 1 lime and some salt and pepper, and toss to evenly coat. Bake the wings until browned and crisp, about 40 minutes.

  • 1. Preheat the oven to 425 degrees. Rinse the wings under cool water and pat dry. Place the wings in a bowl and drizzle with olive oil, salt and pepper - toss to coat. Spread the wings out on a baking sheet and roast for 25-30 minutes, until the skin gets crisp and brown and the meat is tender.

  • 1. Preheat oven 425 degrees. Line a large baking sheet with wax paper. Line the chicken wings skin side up on the baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 20 minutes then turn on the broiler and broil about 3 to 5 minutes until golden.

1 large chicken , about 1.8kg/4lb
50ml Thai fish sauce
400g can low-fat coconut milk
2 lemongrass stalks, bashed
4 lime leaves , torn
thumb-sized piece ginger , roughly sliced
100ml coconut cream
2 tbsp green Thai curry paste
2 x 400ml cans low-fat coconut milk
100g palm sugar
1 tbsp fish sauce
6 lime leaves , torn
2 lemongrass stalks, bashed
1 thumb-sized piece galangal or ginger, sliced
100g sugar snap peas
good handful beansprouts
handful coriander , leaves picked
handful Thai basil , leaves picked
Cucumber salad (see recipe in 'Goes well with' section) lime wedges and cooked rice, to serve

Steps:

  • The night before, pierce the chicken skin all over with a skewer, place in a non-metallic dish and pour over the fish sauce. Give it a good rub, cover and leave in the fridge overnight.
  • The next day, heat oven to 220C/200C fan/gas 7. Mix the coconut milk with the lemongrass, lime leaves and ginger. Drain the chicken of any excess fish sauce, pour the coconut mixture over and cover with foil.
  • Cook in the oven for 15 mins, then turn down the oven to 200C/180C fan/gas 6, remove the foil and bake for 1 hr or until the juices run clear when a skewer is pushed into the thickest part of the thigh. Lift the chicken onto a board, cover with foil and leave to rest.
  • Meanwhile, make the dressing. Melt the coconut cream in a pan and continue cooking until almost starting to brown. Add the curry paste and cook for 1 min until fragrant, stirring all the time. Add the coconut milk, palm sugar and fish sauce, and bring to the boil. Add the torn lime leaves, lemongrass and galangal, and cook for 20 mins, stirring frequently until the flavour intensifies.
  • Take off the heat and add the sugar snap peas and beansprouts. Taste and season with more fish sauce or sugar if needed. Pour the curry dressing into a serving dish, and sprinkle over the coriander and Thai basil.
