SPICED COCONUT CHICKEN WITH CORIANDER & LIME



Spiced coconut chicken with coriander & lime image

Make this one-pot coconut chicken for an easy and filling midweek meal. If you want to boost the heat, leave the seeds in one of the green chillies

1 tbsp oil
8 skin-on and bone-in chicken thighs
1 large onion , roughly chopped
4 garlic cloves , grated to a purée
3cm piece ginger , peeled and grated
½ tsp turmeric
2 tsp ground cumin
2 green chillies , halved, deseeded and finely chopped
200g butternut squash , peeled, deseeded and cut into slices (prepared weight)
100g cauliflower florets
225g basmati rice
10g bunch coriander , chopped
2 limes , zested and juiced
2 lime leaves
300ml coconut milk
400ml chicken stock

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a 30cm shallow casserole dish or high-sided frying pan. Fry the chicken thighs, skin-side down, just to get some colour on them (they will take on a deeper colour in the oven). Transfer them to another dish. Fry the onion in the pan until soft and pale gold. Add the garlic, spices and chillies. Cook for 2 mins more, then stir in the squash, cauliflower, rice, half the coriander, the lime zest, half the lime juice, the lime leaves and some seasoning. Put the chicken back in the pan, this time skin-side up, and season that as well.
  • Heat the coconut milk and the chicken stock together until just below boiling point. Pour this around the chicken and put the pan in the oven, uncovered. Cook for 40 mins, or until the chicken is cooked through and the liquid has been absorbed by the rice. Squeeze over the remaining lime and scatter with the rest of the coriander. You could gently push the coriander into the rice, so it's not all on top. Serve immediately.

LIME & CORIANDER CHICKEN

Everyone will think you've used chilli, but the fieriness of this dish is simply crushed black pepper

1 medium chicken (about 1.6kg/3lb 8oz)
3 garlic cloves
2 tbsp black peppercorn
juice 2 limes , plus 1 lime cut into wedges, to serve
bunch of coriander , few nice sprigs reserved, the rest finely chopped

Steps:

  • First, spatchcock the chicken so that it will sit flat on the barbecue. All this means is using a pair of kitchen scissors or a sharp kitchen knife to cut down either side of the parson's nose to completely remove the backbone. Then, place the chicken, breast side up, on a chopping board and push down hard to flatten with your hands. Use a sharp knife to make lots of deep slashes in the chicken, about three in each breast and two in each leg.
  • In a mortar and pestle, crush the garlic and peppercorns together to a grey, mushy paste. Stir the lime juice into the paste, then the chopped coriander. Put the chicken in a dish and massage the marinade into the chicken. Cover with cling film and refrigerate for at least 2 hours, but preferably overnight.
  • To cook the chicken, fire up the barbecue. When the flames die down and the coals are hot and glowing, lay the chicken on the barbecue, skin side up, and sprinkle with salt. You will be tempted to keep prodding it and lifting it up, but leave it alone. After 25 mins, the chicken will look like it's cooked through, but flip it over and give the skin side 10 mins to brown. Lift the chicken onto a chopping board and leave to rest for a few minutes.
  • You can now carve conventionally but I like to get a cleaver and chop it straight down into thick slices. Pile it up on a platter and serve scattered with fresh coriander and lime wedges.

1/4 cup fresh lime juice
2 limes, zested
1 tablespoon toasted ground coriander
2 tablespoons chopped cilantro leaves
2 tablespoons chopped scallions
1 tablespoon honey
1 cup olive oil
2 teaspoons salt
1 teaspoon ground white pepper
12 chicken legs

Steps:

  • Put the lime juice, zest, coriander, cilantro, scallion and honey in the bowl of a food processor and pulse to combine. With the processor running, add the olive oil in a steady stream. Turn the motor off and add the salt and pepper. Pulse to combine. Pour the mixture into a nonreactive bowl and add the chicken legs to it. Toss to coat well and refrigerate for 1 hour.
  • Place a 10-inch cast iron grill pan over high heat for 3 minutes. Put 4 of the chicken legs into the pan and grill 3 to 5 minutes per side, or until the juice runs clear if speared with a knife. Repeat the process with the rest of the chicken. Allow to cool to room temperature and refrigerate until ready to use.

We have one of those electric table-top grills which we often get out for informal parties. It means you can put out a selection of different types of meats and people can cook it the way they like it. It's sociable and fun, and easy with a couple of side dishes of salad, potatoes, pasta, rice, or whatever you fancy. I made this marinade up yesterday to jazz up the chicken breasts I had, and it was delish. Lovely and moist with a nice flavour.

2 chicken breasts
1 lime, juiced
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon salt
100 ml olive oil
handful fresh coriander, chopped

Steps:

  • Slice the chicken into bite-sized pieces (I prefer strips like goujons rather than cubes).
  • In a bowl, mix all the ingredients together and add the chicken.
  • Leave to stand for at least one hour, stirring occasionally.
  • Heat your grill and cook each piece for a couple of minutes, until cooked through.

For the chicken:
1/3 cup milk
1 large egg
2 tablespoons olive oil
1 1/2 cups fine dry bread crumbs
1 teaspoon ground cumin
2 teaspoons paprika
3 whole boneless skinless chicken breasts (about 2 pounds total), halved
2 tablespoons plain yogurt
1 tablespoon fresh lime juice
1 to 2 tablespoons hot water
1/2 cup coriander lime pesto
For the coriander lime pesto:
1 cup packed fresh coriander sprigs, washed well and spun dry
1/2 cup packed fresh flat-leafed parsley leaves, washed well and spun dry
1/4 cup walnuts, toasted brown and cooled
1/3 cup olive oil
3 tablespoons freshly grated Parmesan
1/4 teaspoon freshly grated lime zest

Steps:

  • To make the chicken:
  • In a shallow baking dish whisk together milk, egg, oil, and salt and pepper to taste. In another shallow baking dish stir together bread crumbs, cumin, paprika, and salt and pepper to taste.
  • Set rack about 6 inches from heat and preheat broiler.
  • Dip chicken breasts, 1 at a time, in milk mixture, letting excess drip off, and coat with bread crumb mixture, patting to adhere. Transfer chicken as coated to rack of a foil-lined broiler pan. Broil chicken until cooked through, about 7 minutes on each side.
  • In a small bowl whisk together pesto, yogurt, lime juice, and 1 tablespoon hot water, adding additional hot water if necessary to reach desired consistency. Season pesto with salt and pepper and serve over chicken.
  • To make the pesto:
  • In a food processor blend together all ingredients with salt and pepper to taste until smooth. (Pesto keeps, surface covered with plastic wrap, chilled, 1 week.) Makes about 2/3 cup.

• 2 TBSP Tequila or Margarita Mix

• 4 TBSP Butter
• 1 Garlic Clove (minced)
• 3 TBSP Lime Juice

Steps:

  • 1. Combine all brine ingredients 2. Add chicken to a large ziplock bag and add brine, massaging into chicken 3. Let stand in the refrigerator for 6-12 hours 4. Heat Grill 5. Melt butter in small pan on medium heat. Add garlic, cook until garlic is fragrant and sizzling. Stir in lime juice and bring to a boil. Remove from heat and add cilantro, salt and pepper. 6. Remove chicken from brine, set on grill and cover for 30+ minutes. Turn chicken every 10 minutes and add brine when turning. Cook until internal temperature is 170. 7. Remove chicken and brush with butter mixture. 8. Let sit for 5 minutes before serving.

3 quarts chicken broth (homemade or low-sodium canned)
2 large pieces lime peel
1 tablespoon coriander seed, crushed
4 stalks lemon grass, thinly sliced, or 2 tablespoons grated ginger
1 bay leaf
1 clove garlic
4 stems fresh mint leaves, minced
6 stems fresh coriander, minced
4 whole black peppercorns
1/4 teaspoon dried chili pepper
1/2 teaspoon salt
1 cup coriander leaves
1/2 cup mint leaves
1/2 cup basil leaves
2 tablespoon olive oil
1/2 teaspoon salt
1 teaspoon pepper
1 pound 1/4-inch wide fresh chinese egg noodles
1 leek, rinsed, thinly sliced crosswise
1 medium carrot, peeled and diced
1/2 celery stalk, rinsed and diced
1 cup fresh coriander leaves
1 cup fresh mint leaves
1 lime, quartered

Steps:

  • To make the broth, put the chicken in a stockpot. Add the remaining ingredients and bring to a boil. Lower the heat and simmer for 30 to 35 minutes.
  • Meanwhile, make the coriander pesto: Put the coriander, mint, basil and olive oil in a blender and puree until smooth. Season with salt and pepper. Set aside.
  • Bring a large pot of salted water to a boil. Add the noodles. Cook for 2 minutes. Drain and rinse under cold running water. Set aside.
  • Carefully lift the chicken out of the broth. Set broth aside. Remove skin and shred the meat. Set aside. Strain the broth through a sieve lined with cheesecloth into a clean saucepan. Season to taste.
  • Bring broth to a boil. Add the shredded chicken, leek, carrot and celery. Lower heat and simmer until the meat is warmed, about 5 minutes. Divide noodles into four bowls. Ladle the soup into the bowls. Add a dollop of pesto, garnish with coriander and mint leaves, and place a wedge of lime on each.
