5 large yams (about 4 1/2 lbs.) or 5 large sweet potatoes (about 4 1/2 lbs.)
1/4 cup sugar
1/4 cup brandy
3 tablespoons butter or 3 tablespoons margarine, melted
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon pepper
1 tablespoon butter or 1 tablespoon margarine, melted
1 tablespoon grated orange rind

Steps:

  • Cook yams in boiling water to cover 45 minutes or until tender; cool to touch.
  • Peel and mash.
  • Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11x7 inch baking dish.
  • Brush top with 1 tablespoon melted butter; sprinkle with orange rind.
  • Bake at 350 degrees for 25-30 minutes.

This version reduces the amount of brown sugar and brandy, uses egg whites in place of whole eggs, and eliminates butter in the yam mixture. Note that Splenda Brown Sugar Blend for Baking may be substituted for the brown sugar, but you will need only half as much.

40 ounces canned yams, drained or 4 2/3 cups mashed sweet potatoes
2 tablespoons brown sugar or 1 tablespoon Splenda brown sugar blend
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons brandy or 1 teaspoon rum extract
1 teaspoon cornstarch
1 teaspoon vanilla extract or 1 teaspoon vanilla essence
1/4 teaspoon salt
4 egg whites
1/2 cup brown sugar or 1/4 cup Splenda brown sugar blend
2 tablespoons light butter
1/4 teaspoon ground cinnamon
1/4 cup pecans, chopped

Steps:

  • MAKE THE YAMS:.
  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, using an electric mixer set on medium speed, beat the yams for 2 minutes, or until well mashed.
  • Beat in the brown sugar, orange juice concentrate, brandy or rum extract, cornstarch, vanilla extract and salt.
  • Add the egg whites and beat until smooth.
  • Transfer to a shallow 2-quart baking dish and smooth the surface.
  • MAKE THE TOPPING:.
  • In a microwaveable bowl, combine the brown sugar, butter, and cinnamon.
  • Microwave on HIGH for 30 seconds, or until melted.
  • Stir until blended.
  • ASSEMBLE CASSEROLE:.
  • Scatter the pecans over the yams and drizzle with the toppping.
  • Bake for 30-35 minutes or until the topping is golden and bubbly.

These nuts are addictive!!! Serve as a delicious snack, super-easy appetizer (great on a Ritz cracker with whipped cream cheese), topping for salads (see my Waldorf Salad recipe #117914) or in candied sweet potatoes. And, they make the perfect hostess gift especially during the Holiday Season! I make a double batch before Thanksgiving and freeze in ziplock bags for use at Christmas and New Years. The kick is up to you, as they are really very mild as written (we think they are perfect this way). Recipe was given to me by my sister, originally from Bon Appetit.

vegetable oil cooking spray
3 tablespoons light corn syrup
1 1/2 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon generous fresh ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 cups pecan pieces (or halves)

Steps:

  • Preheat oven to 325°F Spray baking sheet with nonstick spray. Combine corn syrup and next 4 ingredients in large bowl. Stir to blend. Add pecans; stir gently to coat. Transfer to baking sheet.
  • Place large piece of foil on work surface. Bake pecans 5 minutes. Using fork, stir pecans to coat with melted spice mixture. Continue baking until pecans are golden and coating bubbles, about 10 minutes. Transfer to foil. Working quickly, separate nuts with fork. Cool. (Can be made 3 days ahead- store airtight at room temperature).
  • Makes 1 1/2 cups.
  • NOTE: Recipe is easily doubled, freezes well in ziplock bags.
  • Serve as a snack, topping for appetizers or salads (see my Waldorf Salad recipe #117914) or candied sweet potatoes, -or- give as a gift for the holidays.

1/4 cup butter, melted
1 cup sugar
1/4 cup water
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon cardamom
1/2 teaspoon fresh grated nutmeg

Steps:

  • Preheat oven to 350°F.
  • Butter large cookies sheets.
  • Heat in a saucepan melted butter, water and sugar till sugar is dissolved, add spices and pecans stirring till well coated about 3-5 minutes.
  • Transfer to cookie sheet and bake until golden about 10 minutes.
  • Cool store in airtight containers.

1 cup white sugar
½ cup whole milk
½ cup salted butter, softened
2 eggs, beaten
1 ½ cups brown sugar
1 cup chopped pecans
½ cup salted butter, softened
½ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Put yams in a microwave safe bowl; heat in the microwave oven until softened, about 75 seconds.
  • Transfer cooked yams to a large mixing bowl; add white sugar, milk, 1/2 cup butter, and eggs and beat with a hand mixer until smooth. Pour the yam mixture into the prepared baking dish.
  • Mix brown sugar, pecans, 1/2 cup butter, and flour together in a bowl with a wooden spoon until crumbly, sprinkle over the yam mixture to cover.
  • Bake in preheated oven until golden brown, about 30 minutes.

2 tablespoons brandy (or peach brandy)
