FAST AND EASY CREAMED SPINACH



Fast and Easy Creamed Spinach image

This is a little easier, a little quicker, a little more contemporary, and believe it or not, a little lighter than traditional creamed spinach. Have all your ingredients ready to go ahead of time. It's a classic steak side dish.

2 teaspoons olive oil
2 (16 ounce) bags fresh spinach
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch freshly grated nutmeg
1 tablespoon butter
2 tablespoons minced shallot
¾ cup heavy whipping cream
1 teaspoon freshly grated lemon zest
2 tablespoons finely shredded Parmigiano-Reggiano cheese

Steps:

  • Pour olive oil into a large soup pot, place over high heat, add spinach, and cover. Cook for 1 minute, uncover, and lightly stir until most of the leaves are bright green and wilted, about 2 minutes. Quickly drain spinach in a strainer and transfer to a plate lined with 4 or 5 paper towels. Once cool enough to handle, squeeze as much liquid from the spinach as possible. Transfer spinach to a cutting board and coarsely chop.
  • Mix salt, black pepper, cayenne pepper, and nutmeg in a small bowl.
  • Place a large skillet over medium heat, melt butter in skillet, and stir shallot in the hot butter until just barely golden and translucent, 3 to 4 minutes. Stir seasoning mixture into shallot mixture and pour in cream. Raise heat to medium-high and reduce cream sauce to about half, about 5 minutes. Stir in lemon zest.
  • Reduce heat to low and toss spinach with cream sauce in skillet. Cook and stir until spinach is heated through and coated, about 2 minutes. Stir Parmigiano-Reggiano cheese into spinach until thoroughly combined; serve immediately.

Healthy creamed spinach, laced with onion and garlic, is one of the yummiest comfort side dishes ever. Keep it light or make it rich. It's up to you.

Number Of Ingredients 11

1 10 oz package chopped frozen spinach ((or 15 cups fresh baby spinach, about 1 1/2 lbs or 16 oz,, roughly chopped))
3 tablespoon butter and oil, any combination ((eg. 2 tbsp butter + 1 tbsp oil))
1/4 cup finely chopped green onions or onion ((about 1/2 medium onion))
1 teaspoon minced garlic - about 1 clove ((or 1/4 tsp garlic powder))
2 tablespoons all purpose flour ((or 1 1/2 tablespoons arrowroot flour for gluten free))
1 1/4 cups milk (fat free, 2% or whole milk)
1/4 cup half and half (10%) cream
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
1/4 cup Parmesan cheese or more, to taste

Steps:

  • COOK SPINACH: Cook frozen spinach in microwave as per package instructions. I add a teaspoon of water and microwave it, covered, for 3 1/2 minutes on High. Drain in strainer, squeezing out as much moisture as possible. It's ok if a little bit remains. Note 1 for using fresh spinach.
  • MAKE CREAM SAUCE: Heat butter and/or oil on medium heat in a medium saucepan. Add onions and sauté gently for 3 minutes. Add garlic and sauté another 30 seconds. Mix in flour to make a roux. Stir for 2 minutes until it turns pale brown. Don't let it get dark. Add any combination of milk and cream that you like to equal 1 1/2 cups/354 ml. I generally use mostly fat free or 2% milk and about 1/4 cup half and half (10%) cream. Stir until thickened, about 5 minutes. Add salt, black pepper and nutmeg (if using) to your taste.
  • COMBINE: Stir in cooked well-squeezed-out chopped spinach. Add Parmesan cheese if using. If mixture is too thick, add more milk until desired consistency is reached. Taste and adjust seasonings. Serve immediately. Note 3 to make ahead.

2 tsp butter
1/2 cup shallots (minced)
1 clove garlic (minced)
2 tbsp flour
1 1/2 cups fat free milk
2 tbsp parmesan cheese
1/4 tsp nutmeg
1/4 tsp fresh pepper
salt to taste
4.4 oz Boursin Light
16 oz bag frozen chopped spinach (thawed and drained of all moisture)

Steps:

  • In a large saute pan, melt butter. Add shallots and garlic and cook on medium about 5 minutes.
  • Add flour to shallots, mix well and cook one more minute.
  • Reduce heat to low and slowly add milk, whisking well.
  • Add parmesan cheese, nutmeg, salt and pepper and mix well.
  • Add boursin light and mix with until smooth.
  • Add spinach and combine well with sauce, cook one minute, until heated through. Adjust salt and pepper if necessary.

1 pound fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)
1 teaspoon olive oil
¼ cup onion (minced)
1 tablespoon butter
⅓ cup heavy cream
2 ounces cream cheese
¼ teaspoon garlic powder
⅛ teaspoon seasoning salt
black pepper to taste

Steps:

  • Wash and dry spinach if using fresh. Remove any tough stems and roughly chop.
  • Cook spinach in a pan with olive oil over medium heat until wilted and cooked through, about 3 minutes. Remove from pan and place in a strainer to drain.
  • Add onion and butter to the pan and cook on medium low heat until onion is softened. Add remaining ingredients and bring to a simmer while stirring until smooth. Simmer 1-2 minutes or until thickened.
  • Squeeze any excess moisture out of the spinach. Add back to the pan and stir to combine. Heat through and serve.

Lightened-Up Creamed Spinach image

10 oz. box frozen spinach, thawed
1 Tbs. unsalted butter
1 Tbs. olive oil
1 medium shallot, finely minced
kosher salt
freshly ground black pepper
freshly ground nutmeg
1/3-cup half and half

Steps:

  • Squeeze spinach hard with your hands to remove as much water as possible. Place spinach on a cutting board, chop it roughly and set aside. Heat butter and olive oil in a large skillet over medium-high until butter foams. Reduce heat to medium, add shallots and cook, stirring, until shallots soften and begin to brown, two or three minutes.
  • Add spinach and season with salt, pepper and nutmeg to taste. Cook, stirring, until ingredients are combined and spinach is heated through. Remove from heat and add half and half, stirring to combine well. Serve immediately.

1 garlic clove, minced
1 tablespoon butter
