CREAMY GEMELLI PASTA WITH SHRIMP AND SPRING VEGETABLES



Creamy Gemelli Pasta with Shrimp and Spring Vegetables image

This pasta recipe pairs great with a crisp white wine like a Sauvignon Blanc, Pinot Grigio, or Sancerre.

⅔ (16 ounce) package gemelli pasta
1 ½ cups fresh English peas, shelled
2 medium lemons, halved
2 teaspoons olive oil
1 medium zucchini, diced
2 cloves garlic, minced
⅔ pound uncooked medium shrimp, peeled and deveined
salt and ground black pepper to taste
3 tablespoons creme fraiche
2 tablespoons fresh basil, cut in very thin strips

Steps:

  • Bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, to desired tenderness, 6 to 11 minutes. Drain and reserve 1/2 cup of the cooking liquid.
  • At the same time, bring another small pot of water to a boil. Add peas and boil until slightly softened, 2 to 3 minutes. Drain.
  • Juice 3 of the lemon halves. Slice the remaining half into thin rounds. Set aside.
  • Heat oil in a deep skillet or large pot over medium-high heat. Add peas, zucchini, and garlic; cook for 1 to 2 minutes. Add shrimp and season with salt and pepper. Cook, stirring occasionally, until shrimp are bright pink on the outside and the meat is opaque, 3 to 5 minutes; be careful not to overcook. Remove from the heat.
  • Add cooked gemelli to the shrimp-vegetable mixture. Stir in creme fraiche and lemon juice and season with more salt and pepper as needed. Garnish with lemon slices and basil.

4 ounces uncooked angel hair pasta
8 jumbo shrimp, peeled and deveined
6 fresh asparagus spears, trimmed and cut into 2-inch pieces
1/4 cup olive oil
2 garlic cloves, minced
1/2 cup sliced fresh mushrooms
1/2 cup chicken broth
1 small plum tomato, peeled, seeded and diced
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 tablespoon each minced fresh basil, oregano, thyme and parsley
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute shrimp and asparagus in oil until shrimp turn pink, 3-4 minutes. Add garlic; cook 1 minute longer. Add the mushrooms, broth, tomato, salt and pepper flakes; simmer, uncovered, for 2 minutes. , Drain pasta. Add the pasta and seasonings to skillet; toss to coat. Sprinkle with cheese.

1 (8 ounce) box garlic and olive oil Pasta Roni
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons white wine
1/4 cup chopped onion
1/4 cup chopped zucchini
1/4 cup chopped yellow squash
1/4 cup chopped fresh mushrooms
14 ounces Italian-style diced tomatoes
1 (10 ounce) box frozen mussels, in shell
clams (optional) or shrimp (optional)

Steps:

  • Cook pasta accordiing to directions, reserve spices.
  • Chop veggies while oil and butter are warming in medium hot in saute pan. Quickly saute the chopped veggies 1-2 minutes. Gently stir in reserved spices to the saute veggie.
  • Add frozen muscles (to saute veggies). Turn heat to medium. Start timer for muscles per box directions.
  • When timer goes off, stir in wine. Stir in diced tomatoes to veggie saute pan and heat through and turn heat down to warm until pasta is done.
  • Spoon veggies and muscles over pasta to serve.
