PLJESKAVICA - TRADITIONAL SERBIAN BURGER RECIPE

Forget about fast food chain places and make yourself a real burger. This big Serbian guy is bursting with flavor!

1 lb (450g) ground beef
1 lb (450g) ground pork
2 teaspoons salt
1 teaspoon sweet paprika
1/2 teaspoon black pepper
1/2 cup sparkling water
2 tablespoons Olive oil
2 medium onions, (finely chopped)
vegetable oil, (for frying)
4 pita bread pockets
Ajvar
Kajmak
onions
pickles

Steps:

  • In a bowl, mix ground beef and pork, salt, sweet paprika, black pepper and sparkling water. Combine with your hands. Brush olive oil on the surface of the meat mixture. It will help us to retain moisture. Cover with plastic wrap and refrigerate for at least few hours or overnight.
  • Add onions to the meat mixture and mix well. Divide to 4 balls and use your hands to pound it to a thin patty. The size should be about 6-7 inches (15-17cm) in diameter.
  • Grill or fry your patties for about 3-4 minutes per side or more, if desired. Take pita pockets and assemble your burgers by spreading ajvar and kajmak and adding onions and pickles as desired. Enjoy!

This pljeskavica recipe makes juicy Serbian pork-lamb-beef hamburgers. Grilling is traditional, but they also can be pan-fried, baked, or broiled.

1 pound ground beef chuck
1/2 pound lean ground pork
1/2 pound lean ground lamb
2 cloves garlic (finely chopped)
1/2 cup onions (finely chopped)
1 1/2 teaspoons salt
1 tablespoon sweet or hot paprika
Whole green onions
Chopped raw onion
Tomato slices
Ajvar Lepinje or Pogacha bread

Steps:

  • Gather the ingredients.
  • In a large bowl, mix together ground beef chuck, ground pork, ground lamb, garlic, onions, salt, and sweet or hot paprika until thoroughly combined. Do not overmix because this will toughen the meat.
  • Refrigerate meat mixture for several hours for the flavors to meld and for the mixture to firm.
  • Heat a grill, indoor grill , broiler or skillet. Using slightly dampened hands, divide meat mixture into 6 portions. Form into thin patties, 9 inches by 1/2 inch or about the size of a small dinner plate.
  • Cook pljeskavice about 7 minutes per side.
  • Serve with green onions or chopped raw onion, tomato slices, ajvar, lepinje, and pogacha bread, although some Serbs place the patty on a large bun like an American hamburger .
  • Enjoy.

LESKOVAC BURGER

This piece of southern Serbian cuisine is probably the most common of all burgers in the south and around Leskovac (where burgers are in most cases NOT considered junk food). There are likely several ways of preparing this both in terms of ingredients and the grilling process. This is a classic burger recipe I memorized from a burger spot in my town and is best prepared either on the grill, or you can make it in your frying pan with just a bit of oil.

500 g ground beef
500 g ground pork
2 onions
2 garlic cloves
1 tablespoon mustard

Steps:

  • Peel and chop up both the onions and the garlic in the food processor until they are even.
  • Meld the minced beef and pork with your hands until they are even and then add the onions and garlic. Make sure they are well spread across the meat.
  • Add the mustard and shape the meat well so that the mustard holds the meat, the chopped onions and the garlic like glue.
  • Split the meat into five or six patties and grill between ten and twenty minutes, depending on how you like your meat done. Season with salt and pepper according to taste.
  • You can use any type of bun you like. I personally prefer the homemade "pita" bun. Traditional condiments include chopped raw onions, kaymak, and ajvar/ljutenica. Enjoy!

EXOTIC LAMB BURGERS

1 1/2 pounds ground lamb
1/4 to 1/2 teaspoon ground cinnamon
Salt and freshly ground black pepper
1/4 cup soft fresh goat's cheese (or cream cheese for kids)
2 tablespoons chopped chives
Roughly chopped fresh mint or cilantro for garnish
Fine mince of hot jalapeno pepper if you wish

Steps:

  • In a mixing bowl combine the ground lamb with the cinnamon and season to taste with salt and pepper. Saute a bit of the mixture to taste if seasoning is right or not.
  • Mix the goat's cheese with the chives.
  • Divide the lamb into 4 portions and shape each one into a patty. Press your thumb in the center to create a pocket in the burger. Take about a tablespoonful of the cheese mixture and set it in the indentation. Enclose the lamb patty around the cheese to enclose it completely. Either grill, broil or saute them for about 4 minutes a side.
  • To serve, spread some cole slaw in the center of a dinner plate and spread around. Center lamb over cole slaw and dust top with mint or cilantro and jalapeno pepper.

1 onion, roughly chopped
2½cm piece ginger, roughly chopped
2 garlic cloves, roughly chopped
handful of fresh coriander
2 tsp ground coriander
2 tsp ground cumin
1 tsp cinnamon
75g ready-to-eat dried apricots, roughly chopped
500g lean lamb mince
wholemeal rolls, lettuce, sliced tomatoes sliced red onion and mayonnaise, to serve

Steps:

  • Blend the onion, ginger, garlic and fresh coriander in a food processor until finely chopped. Add the spices, apricots, lamb and seasoning. Blend until slightly chunky.
  • Shape the lamb mixture into six burgers. Cook under a medium-hot grill for 4-5 mins each side until cooked through.
  • Serve in wholemeal buns with the lettuce, tomato, sliced red onion and mayo.
