4 hoagie buns, split
1 tablespoon butter
1 pound uncooked shrimp (41-50 per pound), peeled and deveined
1/2 cup mayonnaise
2 tablespoons lemon juice
4 teaspoons snipped fresh dill or 1-1/4 teaspoons dill weed
1/2 teaspoon salt
1/4 teaspoon pepper
Optional: Lettuce leaves and sliced tomato

Steps:

  • Hollow out bun bottoms, leaving a 1/2-in. shell (save removed bread for another use). In a large skillet, heat butter over medium heat. Add shrimp; cook and stir 3-4 minutes or until shrimp turn pink., In a small bowl, mix mayonnaise, lemon juice, dill, salt and pepper until blended. Add shrimp; toss to coat. Spoon shrimp mixture into bun bottoms. If desired, top with lettuce and tomato. Replace bun tops.

16 large shrimp - peeled, deveined, and tails on, or more to taste
3 large cloves garlic, smashed, or more to taste
½ teaspoon crushed red pepper flakes, or to taste
2 teaspoons seafood seasoning (such as Old Bay®), or to taste
salt and ground black pepper to taste
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
3 teaspoons lemon zest

Steps:

  • Heat oil in a large skillet over medium-low heat until warm, 2 to 3 minutes. Add shrimp, garlic, and pepper flakes all at once and stir together. Add seafood seasoning, salt, and black pepper and mix until combined.
  • Cook and stir until shrimp are bright pink on the outside and the meat is opaque, 3 to 5 minutes.

1 1/2 pounds large shrimp, peeled and deveined
2/3 cup olive oil
4 cloves garlic, peeled and smashed
2 lemons, juiced
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce
Kosher salt and freshly ground black pepper
1 French baguette, sliced lengthwise in 1/2
Butter Sauce, recipe follows
Sweet Pickle Mayonnaise, recipe follows
Shredded lettuce, for serving
Sliced tomato, for serving
1/2 stick salted butter
1/2 lemon, juiced
1 tablespoon hot sauce
Dash Worcestershire sauce
3/4 cup mayonnaise
2 tablespoons sweet pickle relish
1 shallot, minced
1 tablespoon Dijon mustard
1 tablespoon chopped capers
Dash hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Arrange about 4 shrimp on each skewer and add to a 13 by 9-inch casserole dish.
  • Add the olive oil, garlic, lemon juice, smoked paprika, cayenne, Worcestershire, hot sauce, salt and pepper, to taste, to a measuring cup. Whisk well and pour over the shrimp in the casserole. Cover the dish and let the shrimp marinate in refrigerator for 20 minutes.
  • Preheat the grill to medium-high heat.
  • Grill the shrimp skewers over medium-high heat for about 4 minutes total, flipping once halfway through. Add the baguette to the grill and toast.
  • Remove the shrimp from the grill and add to the butter sauce, discarding the skewers. Toss to coat the shrimp in the Butter Sauce.
  • Spread both sides of bread with the Sweet Pickle Mayonnaise and top evenly with the shrimp, shredded lettuce and sliced tomatoes. Slice the baguette in fourths, if desired, and serve immediately.
  • Melt the butter in a small saucepan on the grill grates. Add the lemon juice, hot sauce and Worcestershire. Stir together with a wooden spoon until well mixed. Remove from heat and set aside.
  • Add all the ingredients to a bowl and mix well. Cover and refrigerate until needed.

FISH AND SHRIMP SANDWICH IN A LEMON YOGURT SAUCE

1 tablespoon yeast
2 cups warmed milk
1/4 cup butter, melted
1/4 cups sugar
4 cups all-purpose flour
1/2 tablespoon salt
4 tablespoons butter, for cooking fish and shrimp
1/2 cup chopped cucumber
1/2 cup grated carrots
1/2 cup chopped celery
1/4 cup chopped black olives
4 tablespoons fresh lemon juice
1 tablespoon lemon pepper
1 tablespoon dill weed
1 tablespoon dried parsley
1/2 teaspoon salt
2 pounds cod fish
2 pounds large shrimp
1 cup grated sharp Cheddar
1 cup lemon yogurt
4 slices bread

Steps:

  • For the bread: In a bowl, combine the yeast and warmed milk. Mix well and let sit for a couple of minutes until the yeast is foamy. Add the melted butter and sugar. Mix well.
  • Add the flour and salt. Mix well. Turn onto a lightly floured board or counter top and knead well for approximately 4 to 5 minutes. Put the dough in a generously buttered bowl and cover with a clean towel. Let rise for 1 hour.
  • Punch down and place the dough in a buttered 9 by 12-inch bread pan. Cover and let rise for 30 minutes.
  • Preheat oven to 400 degrees F.
  • Place into oven and bake for approximately 45 to 55 minutes. Ovens vary so keep an eye on your bread. Tap on the bottom of your bread, if there's a hollow sound, it is completed. If not, bake a couple of minutes more. Remove from oven, let the bread cool in the pan for 15 to 20 minutes, then remove and cool on a wire rack.
  • For assembly: Melt the butter in a skillet over medium heat. Add the cucumber, carrots, celery, olives, lemon juice, lemon pepper, dill weed, parsley, and salt to the skillet and mix well. Let those ingredients simmer while you dice the fish and shrimp into small pieces.
  • Add the fish and shrimp to the skillet, mix well, and cover with a lid.
  • Place bread on each of 4 plates. Check the fish mixture and add the cheese. Turn off the heat and cover with the lid. In a bowl, pour the lemon yogurt. Add the fish mixture to the lemon yogurt and mix well. Scoop the fish mixture onto the bread to your desired fullness. Serve immediately while the fish is hot.

1 teaspoon kosher salt
12 ounces small or medium raw shrimp , peeled and deveined
1 1/2 teaspoons Old Bay seasoning, divided
2 teaspoons lemon juice, or more to taste
1/3 cup mayonnaise
1/4 teaspoon Worcestershire sauce
1 to 2 ribs celery, chopped
1 to 2 scallions, chopped, about 1/3 cup
2 sandwich rolls, hoagie rolls , or large hamburger buns, split and toasted
3/4 cup shredded iceberg or romaine lettuce (shredded)

Steps:

  • Gather the ingredients.
  • Add the kosher salt to a quart or so of water in a medium pot.
  • Bring just to a simmer and add the shrimp. Stir and cook for 1 to 2 minutes (depending on the size of the shrimp); they should be pink and barely translucent.
  • Drain, rinse briefly under cool water, and pat dry.
  • Place the shrimp in a small bowl and add 1/2 teaspoon of the Old Bay and 1 teaspoon of the lemon juice .
  • Toss to coat and place in the refrigerator for 20 minutes or so, to cool completely.
  • Whisk the remaining Old Bay, remaining lemon juice, the mayonnaise, and Worcestershire sauce together in a medium-size bowl.
  • Add cooled shrimp, celery, and scallions to the dressing and toss gently to coat. Adjust seasoning, adding more lemon juice and salt, if necessary.
  • Serve on toasted rolls or buns with shredded lettuce.

With minimal prep and a quick cook time, this shrimp stew feels elegant for such an easy weeknight meal. You can also take the dish in a number of directions: Substitute the shrimp with an equal amount of flaky white fish or even seared scallops, or stretch the dish into a meal for six by stirring in some butter and serving over cooked spaghetti or rigatoni. A good glug of your best olive oil would also be a welcome.

1 teaspoon fresh lemon zest and 2 tablespoons juice
1 teaspoon sweet or smoked paprika
2 garlic cloves, grated
Kosher salt and black pepper
1 pound peeled, deveined large shrimp (tails removed)
4 tablespoons unsalted butter (1/2 stick)
2 large leeks, trimmed, then halved lengthwise, white and light green parts sliced crosswise 1/2-inch thick (or 1 large onion, minced)
1 (15-ounce) can cannellini beans or other white beans, rinsed
2 cups chicken stock or vegetable stock
2 tablespoons finely chopped fresh parsley (optional)
Toasted bread, for serving (optional)

Steps:

  • Combine lemon zest, paprika, garlic, 3/4 teaspoon salt and 3/4 teaspoon pepper in a medium bowl. Add shrimp and toss to coat.
  • In a large pot, melt butter over medium-high heat. When butter is foaming, add shrimp and cook, stirring occasionally, until pink and starting to curl, 2 to 3 minutes. Using a slotted spoon, transfer shrimp to a plate; set aside.
  • Add leeks, season with salt and pepper, and cook over medium until leeks are soft and starting to brown on the edges, 4 to 5 minutes, stirring occasionally. Add beans and chicken broth and bring to a boil over high. Lower heat and simmer, 8 to 10 minutes. Stir in reserved shrimp and any juices from the plate, parsley and lemon juice, and season with salt and pepper. Serve with toasted bread.
