1 pound dried lima beans
2 bay leaves
3 tablespoons extra virgin olive oil, divided
1 medium onion, chopped
4 garlic cloves, thinly sliced
1/4 cup chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon chopped fresh oregano
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
Additional chopped fresh parsley

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. , Place beans in a large saucepan; add bay leaves and water to cover by 2 in. Bring to a boil. Reduce heat; simmer, covered, until beans are tender, 1-1/4 to 1-1/2 hours. Drain., In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add next 6 ingredients. Stir in drained beans and remaining oil; toss to combine. Sprinkle with additional parsley.

2 (10 ounce) packages frozen lima beans or 2 (10 ounce) packages fresh lima beans, cooked,drained with cooking liquid reserved
1 tablespoon butter
1 tablespoon all-purpose flour
1 tablespoon firmly packed brown sugar
2 teaspoons dry mustard
2 teaspoons fresh lemon juice
salt and pepper
1/2 cup dry breadcrumbs
2 tablespoons butter, melted
1/2-3/4 cup shredded sharp cheddar cheese
6 slices lean bacon

Steps:

  • Spray 1 1/2 quart casserole dish with non-stick cooking spray.
  • Layer drained lima beans over the bottom of the casserole dish.
  • In a saucepan, melt 1 tablespoon butter over medium heat.
  • Add in the flour and whisk for 1 minute.
  • Slowly add in 1/2 cup reserved bean cooking liquid; whisk until thickened and smooth.
  • Add in the brown sugar, mustard, and lemon juice; stir to combine.
  • Season to taste with salt and pepper and pour over lima beans.
  • In a small bowl, mix together the bread crumbs, melted butter, and cheese.
  • Spoon evenly over the beans.
  • Lay bacon strips over the top and bake in a 350° oven for about 30 minutes or until the bacon is crisp.

1/4 tsp black pepper
1/4 tsp kosher salt
1 pinch flour

Steps:

  • 1. Pour entire can of Lima Beans into skillet on med high heat
  • 2. Add garlic, seasonings, parmesan, and pinch of flour
  • 3. Stir occasionally about five minutes
