1 cup vanilla sugar
1 tablespoon fresh lemon juice

Steps:

  • Combine the blueberries and vanilla sugar in a large heavy saucepan. Add 1 cup water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  • Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.

Fresh blueberries make these lemon bars a bit sweeter than usual, and very jammy, but without compromising their essential acidity. The grated lime zest gives the curd another note of citrus complexity. But if you'd rather leave out the lime, use more lemon zest. Or try playing with orange and grapefruit zests. The filling stays pretty soft in these tender bars, so it's best to keep them in the fridge until right before serving, then dust with powdered sugar at the last minute.

1 1/4 cups/160 grams all-purpose flour
1/3 cup/40 grams confectioners' sugar, plus more for dusting
1 teaspoon finely grated lemon zest
1/4 teaspoon fine sea salt
10 tablespoons/140 grams cold unsalted butter, cubed
1 1/2 cups/300 grams granulated sugar
3/4 cup/180 milliliters fresh lemon juice (from 4 to 8 lemons)
3 large egg yolks
2 large eggs
2 teaspoons cornstarch
Pinch of fine sea salt
8 tablespoons/113 grams unsalted butter (1 stick), diced
1/2 tablespoon finely grated lemon zest
1 1/2 teaspoons finely grated lime zest (optional or substitute lemon zest)
3/4 cup/80 grams fresh blueberries

Steps:

  • Heat oven to 325 degrees and line a 9-inch square baking dish with parchment paper so it hangs over the edges on all sides by a few inches. (You may need to use two pieces of parchment.)
  • Make the crust: In the bowl of a food processor, pulse to combine the flour, confectioners' sugar, lemon zest and salt. Add butter and pulse until a crumbly dough forms, about 10 seconds. (Or mix dry ingredients in a bowl and use pastry cutter to cut in butter, clumping the mixture together in your hands until it holds together.) Press dough into prepared pan. Bake until light golden, 25 to 35 minutes.
  • As crust bakes, make the curd: In a medium pot, whisk together the granulated sugar, lemon juice, egg yolks, whole eggs, cornstarch and fine sea salt until well combined. Place over medium heat and stir with a heatproof rubber spatula (or wooden spoon), making sure to scrape around the sides and edges of the pot, until mixture is simmering and thickened, 5 to 10 minutes.
  • Bring mixture to a boil and let cook for about 30 seconds, but no longer than 1 minute. Immediately strain through a fine mesh sieve into a bowl. Stir in butter, lemon zest and lime zest, and stir until butter melts. Stir in blueberries.
  • Pour mixture over crust, then stir to evenly distribute berries. Return to oven, and bake until blueberries begin to burst and curd starts to turn golden around the edges, 33 to 45 minutes. Transfer to a wire rack to cool to room temperature. Chill in the refrigerator until thoroughly cold before cutting, at least 3 hours. Dust lightly with confectioners' sugar right before serving.

1 tablespoon butter
⅔ cup white sugar
2 tablespoons all-purpose flour
3 tablespoons lemon juice

2 egg yolks

2 egg whites
1 ¾ cups fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)

My favorite way to enjoy lemon meringue is with pavlova. The meringue base cools and dries out slowly, creating a crispy, crunchy crust on the outside which contrasts beautifully with a soft, sticky center. Topped with an intense lemon curd filling, fresh blueberries, and a homemade blueberry sauce, this dessert takes a little bit of time to make but is also simple and easy to pull off!

½ cup unsalted butter
4 large eggs
2 tablespoons lemon zest
1 pinch salt
½ cup white sugar
¼ cup lemon juice
cooking spray
1 tablespoon cornstarch
1 cup white sugar
1 pinch cream of tartar
2 teaspoons lemon juice
¼ teaspoon pure vanilla extract
1 cup blueberries
2 tablespoons white sugar
½ cup cold water
½ cup fresh blueberries, or more to taste
1 sprig fresh mint

Steps:

  • Prepare lemon curd filling: Cut butter into small pieces and set aside.
  • Separate eggs, placing yolks in a heat-proof bowl and whites in glass, metal, or ceramic bowl. Cover egg whites and leave on the counter to come to room temperature for the meringue.
  • Add lemon zest, salt, sugar, and lemon juice to egg yolks. Whisk until thoroughly combined.
  • Add 1 to 2 inches water to a saucepan over low heat; bring to a simmer. Place bowl of filling over the simmering water. Cook, stirring constantly with a spatula, until mixture is very hot to the touch and thick enough to coat the back of a spoon, 10 to 15 minutes.
  • Stir in butter, 3 or 4 pieces at a time, waiting until butter has melted before each addition. Remove from the heat and pour filling into a bowl to cool, about 15 minutes. Lay plastic wrap on top of the filling, pressing down so it doesn't develop a skin, and place in the refrigerator until well chilled, 2 to 3 hours.
  • Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner, such as Silpat®. Lightly spray with cooking spray.
  • Begin meringue: Mix cornstarch into sugar and set aside.
  • Add cream of tartar, lemon juice, and vanilla to the reserved egg whites. Whisk with a large whisk until very soft peaks form, about 3 minutes. Whisk in sugar mixture, 2 tablespoons at a time, whisking about 1 minute between each addition, until incorporated. When all sugar mixture has been added, continue to whisk until relatively stiff peaks form and whites are firm enough to hold their shape.
  • Use 2 spoons or a piping bag to transfer whites onto the prepared baking sheet, forming a ring of dollops about 8 or 9 inches across. Fill in the middle with meringue, then go back around the edges adding more meringue to build up the outside edge.
  • Bake in the center of the preheated oven for exactly 1 hour. At 1 hour, turn off the oven and crack the door. Let meringue sit in the oven until its cooled completely, about 1 hour.
  • Meanwhile, prepare blueberry sauce: combine 1 cup blueberries, sugar, and water in a saucepan over medium heat; bring to a simmer. Cook, stirring occasionally, until blueberries collapse and liquid thickens, about 10 minutes.
  • Remove from the heat and pass through a fine mesh strainer. Place in the refrigerator until fully chilled, about 45 minutes.
  • Very carefully transfer cooled meringue to a serving platter using 2 large spatulas if necessary; you may get some cracks but that's okay. Use a spoon to crack the center a bit to make room for the filling.
  • Fill the center with chilled lemon curd filling. Place remaining blueberries over top and drizzle with blueberry sauce. Garnish with mint.

1 (9 ounce) reduced fat graham cracker crust
4 cups low-fat vanilla frozen yogurt, softened
1/2 cup undiluted frozen lemonade concentrate, thawed
3/4 cup water
1/4 cup sugar or 1/4 cup Splenda sugar substitute
2 1/4 teaspoons cornstarch
1 1/2 cups blueberries

Steps:

  • Let frozen yogurt soften to a milkshake consistency.
  • Gently stir in thawed lemonade concentrate.
  • Spoon yogurt mixture into graham cracker crust.
  • Cover with plastic and freeze 6 hours or until firm.
  • 30 minutes before serving, place pie in the refrigerator to slightly soften.
  • To prepare Blueberry Sauce, bring water, sugar and cornstarch to a boil in a medium saucepan stirring with constantly with a whisk.
  • Cook 1 minute or until thick, while continuing to stir w/ whisk.
  • Add blueberries.
  • Cook about 2 more minutes or until bubbly.
  • Slice pie and serve each slice with blueberry sauce.

1 1/2 cups sugar
3 tablespoons unsalted butter, room temperature
2 teaspoons grated lemon peel
3 tablespoons all purpose flour
1/2 cup buttermilk
1/4 cup fresh lemon juice
1 1-pound package frozen unsweetened blueberries
3/4 cup blueberry jam

Steps:

  • Preheat oven to 350°F. Separate 1 egg, placing white in small bowl and yolk in large bowl. Beat white with fork until very foamy; brush over inside of crust several times to coat (discard remaining white).
  • Add 1 1/4 cups sugar, butter, and lemon peel to bowl with egg yolk. Using electric mixer, beat mixture until blended and smooth. Beat in remaining 3 eggs, 1 at a time. Beat in flour, then buttermilk and lemon juice. Pour into prepared crust. Bake until filling is golden on top and set in center, about 45 minutes. Cool pie, then chill until cold, at least 2 hours.
  • Toss berries, jam, and remaining 1/4 cup sugar in large bowl to blend. Let toping stand until berries thaw and juices form, stirring occasionally, about 2 hours.
  • Cut around crust to loosen. Cut pie into wedges. Serve, spooning topping over.
