1 ½ cups shredded zucchini
¾ cup white sugar
1 egg
½ cup vegetable oil
1 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon ground cinnamon
2 teaspoons lemon zest

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4 inch loaf pan.
  • In a bowl, beat together the zucchini, sugar, egg, and oil. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan.
  • Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean. Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely.

  • Preheat oven to 350 degrees F. Grease two 9-by-5-inch loaf pans. In large bowl beat together the eggs, oil, sugar and vanilla. Slowly add zucchini. Add lemon zest and mix thoroughly.
  • In a separate large bowl combine flour, baking soda, baking powder, cinnamon and salt. Slowly add zucchini mixture until completely combined. Divide the batter between the prepared loaf pans. Bake until a toothpick comes out clean and the sides have started to brown, about 45 minutes. Let cool on a rack 15 minutes. 1/2 cup pure maple syrup (I use Grade A for baking)
1/3 cup dark brown sugar

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Rub a 8" x 5" loaf pan with olive oil or spray with an oil mister.

  • In a medium bowl, whisk together the olive oil, maple syrup, and brown sugar until blended. Add the eggs and beat until mixed well. Stir in the lemon zest and vanilla.

Since it was summertime and zucchini was coming in droves, this is what I came up with. I based this off of recipe #17123, but made enough changes thought it was worth adding my own version. This would probably be delicious with a lemon glaze as well. Enjoy!!

1 cup all-purpose flour

  • Preheat oven to 375 degrees.

2 c cake flour ** see note to make your own
1/2 tsp salt
2 tsp baking powder
2 eggs
1/2 c oil
1-1/3 c granulated sugar
2 Tbsp lemon juice
1/2 c buttermilk or half 'n half
zest of 1 lemon
2 c grated zucchini
glaze
1 c powdered sugar
2 Tbsp lemon juice
zest of 1 lemon

Steps:

  • 1. NOTE *** if you do not have cake flour on hand you can make your own by following these directions. For every 1 cup of AP flour, remove 2 tablespoons of the flour. Replace with 2 tablespoons of cornstarch. Run through a sifter at least 4 times to be certain the flour and cornstarch are very well blended.
  • 2. Mix flour, salt and baking powder in a medium bowl and set aside. Preheat oven to 350*.
  • 3. In a large bowl, beat eggs until frothy. Add oil and sugar and beat until well blended. Add lemon juice, buttermilk and lemon zest to this mixture and stir to combine. Fold in zucchini until it is thoroughly mixed.
  • 4. Add dry mixture to the wet mixture and blend all together until well combined. Pour batter into greased 11x7 baking dish or divide into 2 loaf pans. Bake at 350 for 35 - 40 minutes.
  • 5. When you pull the bread out of the oven get the glaze mixed together. Put powdered sugar into a small bowl. Slowly add lemon juice until you get a glaze consistency. While the bread is still warm, pour the glaze over top and spread to cover. When the bread cools and the glaze is set up similar to a glazed donut, cut a piece, sit back and enjoy!

1 teaspoon gluten-free vanilla
1 1/2 cups Betty Crocker™ Gluten Free all-purpose rice flour blend
1 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups shredded zucchini
2 tablespoons finely shredded lemon peel
2 tablespoons fresh lemon juice
1/2 cup powdered sugar
2 to 3 teaspoons fresh lemon juice

Steps:

  • Heat oven to 350°F. Lightly grease bottom only of 9x5-inch loaf pan, or spray with cooking spray.
  • In large bowl, beat granulated sugar and eggs with electric mixer on medium speed until well blended. Add oil and vanilla; beat until smooth.
  • In medium bowl, mix flour blend, baking powder, baking soda and salt. Gradually beat into egg mixture on low speed until blended. Stir in zucchini, lemon peel and 2 tablespoons lemon juice. Pour batter into pan.
  • Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to cooling rack; cool completely, about 2 hours.
  • In small bowl, mix powdered sugar and enough lemon juice to make glaze of drizzling consistency. Spread over bread, letting some drizzle down sides. Store covered in refrigerator.

Glaze ingredients:
2 cups cake flour
1/2 tsp. salt
2 tsp. baking powder
2 eggs
1/2 cup canola oil
1 1/3 cups sugar
2 TB lemon juice
1/2 cup buttermilk
zest of 1 lemon
1 cup grated zucchini
1 cup powdered sugar
2 TB lemon juice
1 TB milk

Steps:

  • Mix flour, salt and baking powder in a medium bowl and set aside. In a large bowl, beat eggs. Then add oil and sugar until well blended. Add lemon juice, buttermilk, lemon zest to this mixture and blend all together. Fold in zucchini until it is mixed well. Add dry mixture to the wet mixture and blend all together until well combined. Pour batter into greased 9x5 loaf pan. Bake at 350 for 40-45 minutes. While still warm, make glaze and spoon over the bread. Let the glaze set up before cutting and serving.

1 cup pure maple syrup
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 lemon, zest of, finely grated
1 1/2 cups grated zucchini or 1 1/2 cups summer squash
1 1/2 cups unbleached flour
1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9" x 5" loaf pan and set aside.
  • Beat the eggs with an electric mixer for 2 minutes.
  • Gradually add the maple syrup, oil, vanilla, and lemon zest.
  • Stir in the zucchini.
  • Combine the unbleached and wheat flours, baking powder, and salt in a large bowl.
  • Make a well in the center, then stir in the zucchini mixture.
  • Blend just until smooth, then turn into the prepared pan.
  • Bake for 50 to 60 minutes, until a tester inserted into the center comes out clean.

This is an adaptation of a recipe I found on simplyrecipes.com. To make it diabetes friendly, I cut back on the oil and replaced the sugar with Splenda. I also swapped one cup of the flour for whole wheat flour so that it won't cause such a blood sugar spike after eating it. The prep time is an estimate. I seem to be slow with prep, but you may find that it doesn't take as long as it takes me.

1 cup whole wheat flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt (omit if using salted butter)
2 tablespoons fresh rosemary, minced
2 eggs
1/4 cup unsweetened applesauce
2 tablespoons unsweetened applesauce
1/4 cup unsalted butter, melted
2 tablespoons olive oil
1 1/4 cups Splenda sugar substitute
1 tablespoon lemon zest
3 cups zucchini, grated and squeezed dry (about 1 pound)

Steps:

  • Preheat oven to 350°F Prepare two 4x9-inch loaf pans, either coating with butter or spraying with baking spray.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, and rosemary.
  • Beat the eggs in a mixer (or by hand) until frothy. Beat in all of the applesauce. Beat in the melted butter and olive oil. Beat in the Splenda. Stir in the lemon zest and grated zucchini.
  • Add the dry ingredients to the wet, a third at a time, stirring after each incorporation.
  • Divide batter/dough into two loaf pans.
  • Bake in a 350°F oven for 45 to 50 minutes. Test after 40 minutes. If you gently press down on the surface of the loaf, it should bounce back, and a bamboo skewer inserted into the center should come out clean.
  • Remove from the oven. Let cool for a few minutes and then remove the loaves from their pans to cool on a rack.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened, divided
1 cup shredded zucchini
1 Tbsp. lemon zest
1/4 cup lemon juice, divided
1/2 cup powdered sugar

Steps:

  • Heat oven to 350°F.
  • Combine first 4 ingredients. Beat granulated sugar, oil eggs and half the cream cheese until blended. Gradually add flour mixture, mixing well after each addition. Stir in zucchini, lemon zest and 3 Tbsp. lemon juice.
  • Pour into greased and floured 9x5-inch loaf pan.
  • Bake 40 to 45 min. or until toothpick inserted in center comes out clean. Cool 15 min. Remove from pan to wire rack; cool completely.
  • Mix powdered sugar with remaining cream cheese and lemon juice until blended; drizzle over bread. Let stand until glaze is firm before slicing bread to serve.
