  • preheat oven 350.
  • in a med bowl add cake mix, whipped egg, and Cool Whip mix together until well blended.
  • take a tablespoon of batter and roll into a ball in powdered sugar.
  • place on parchment paper lined cookie sheet.
  • bake for 8 to 10 min.

Light and fluffy lemon cookies made using a cake mix and frozen whipped topping.

1 (8 ounce) container frozen Cool Whip (thawed)
2 eggs
1 (18.25 ounce) package lemon cake mix
1/3 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a baking sheet with nonstick cooking spray or line with a silicone baking mat; set aside.
  • In a large mixing bowl, beat together Cool Whip and eggs.
  • Add the cake mix and mix until combined. The dough will be extremely sticky.
  • Refrigerate for 30 minutes.
  • Drop cookie dough by teaspoons into a bowl containing the powdered sugar and roll to coat.
  • Once the dough is completely coated in powdered sugar, it will be easier to roll into a ball.
  • Place cookie dough on prepared baking sheet and bake for 9-11 minutes, or until the edges are slightly golden brown.

1 (6 ounce) can frozen lemonade concentrate
1 (14 ounce) can sweetened condensed milk

  • In a mixing bowl, combine the crushed crackers, confectioners sugar and melted butter. Press into the bottom of a 9x13 inch pan; reserve 1/3 cup for sprinkling on top.
  • Blend together the lemonade, sweetened condensed milk and whipped topping. Pour over crust and sprinkle with remaining crumb mixture. If desired, garnish with thinly sliced lemons.

FROZEN LEMON WHIP WITH BLUEBERRY SAUCE



Frozen Lemon Whip with Blueberry Sauce image

6 large egg yolks
1/2 cup granulated sugar
1/2 cup fresh lemon juice
3 lemons, zested, plus thin slices for serving
2 cups heavy cream
Blueberry Sauce, recipe follows
Blueberries, for garnish
2 cups fresh blueberries
1/4 cup sugar
1/4 cup freshly squeezed lemon juice
1 lemon, zested

Steps:

  • Line a 6-cup jumbo muffin tin with paper muffin liners.
  • Whisk together egg yolks and sugar in a large bowl until well combined, then add the lemon juice and zest. Pour into a heavy bottomed saucepan and cook over medium-low heat, stirring constantly, until mixture thickens to the consistency of gravy, 8 to 10 minutes, (it should cling to the spoon when you stop stirring). Pour the mixture through a fine mesh sieve placed over a glass bowl. Stir the mixture occasionally to help release some of the heat. Once cooled to room temperature, put plastic wrap directly on the surface of the lemon curd to prevent a skin from forming. Refrigerate until firm.
  • In a large bowl, whip the heavy cream to soft peaks. Whisk the chilled lemon curd to loosen it and fold half the cream into it to lighten. Gently fold in the remaining whipped cream until just blended. Divide the lemon whip between the muffin cups, smoothing the tops. Put the pan on a sheet tray, cover with plastic wrap and freeze for at least 4 hours.
  • To serve, remove muffin tray from freezer and let stand 10 minutes. Serve immediately by placing thin lemon slices on a plate and inverting the lemon whip directly on top of the lemon slices (this prevents sliding on the plate). Drizzle berry sauce over the top and around the frozen lemon whip. Garnish with a few fresh blueberries and enjoy your refreshing cold treat!!!
  • Put the blueberries in a small saucepan with the sugar, lemon juice and zest. Bring to a simmer over medium heat and cook, stirring, until sugar dissolves and berries begin to burst. Cool slightly, then add to a blender and puree. Strain through a fine mesh sieve over a glass bowl and chill, covered, in the refrigerator until ready to use.

3 container s (4 oz. each) lemon chiffon flavored yogurt
1 9- in ch graham cracker crust
1 lemon, sliced thin

  • Blend 1 tub of Cool Whip with 3 containers of yogurt. Pour into pie shell. Use back of spoon to smooth yogurt around the edges of pie shell. Try to mound the center slightly.
  • Use a tablespoon that is clean to spoon about 1/3 of the second tub of Cool Whip on the top of the yogurt mixture. Use the back of the tablespoon to smooth the Cool Whip on top of the pie the same way you put icing on a cake. The additional Cool Whip stops dehydration of the yogurt mixture while being refrigerated.
  • Garnish with thin lemon slices if desired in the middle of the top of the pie. Store in refrigerator for about 1/2 hour and serve immediately. Does not keep as a leftover, the pie crust absorbs the moisture from the yogurt and fruit. Discard if bottom becomes too moist.

1 (8 ounce) container Cool Whip, completely thawed
1 large egg, beaten
1/2 cup powdered sugar (for rolling)

  • Preheat oven to 350° F and line a half sheet pan or cookie sheet with parchment paper or a silicone baking sheet.
  • In a medium bowl combine dry cake mix, and beaten egg. Mixture will be crumbly. Fold in thawed Cool Whip until well combined. Dough will be thick and sticky.

1 1/2 cups graham cracker crumbs
1/4 cup melted butter
3 1/2 ounces lemon pie filling mix
1 (410 g) can Carnation Evaporated Milk, chilled well (use 2/3 of the can and save the rest for another use)
2 tablespoons lemon juice
2 cups well drained sliced peaches

Steps:

  • Mix crumbs and butter together. Reserve 1/4 cup for topping.
  • Press 2 TBS into bottom and up sides of 8 dessert dishes and chill.
  • Prepare pudding mix as for pie. Cool, stirring often.
  • Whip canned milk until stiff. (This works best if you have the bowl and beaters chilled as well. I always chill my milk in the freezer until ice crystals begin to form).
  • Add lemon juice to the whipped milk.
  • Beat cooled pudding until light and fluffy.
  • Fold the pudding and whipped milk together.
  • Spoon into dessert dishes. Top with drained peach slices and sprinkle with remaining crumbs. Chill to serve.
