1/4 cup (1/2 stick) unsalted butter
2 tablespoons minced fresh parsley
2 large garlic cloves, minced
2 teaspoons fresh lemon juice
1 16-ounce salmon fillet with skin
4 thin onion slices
4 thin tomato slices
4 thin lemon slices

Steps:

  • Melt butter in heavy small saucepan over low heat. Add parsley, garlic and lemon juice and simmer 2 minutes.
  • Preheat broiler. Place salmon on large piece of heavy-duty foil; season with salt and pepper. Brush salmon with half of butter mixture. Arrange onion, tomato and lemon slices over. Drizzle remaining butter mixture over. Fold foil over salmon and crimp edges tightly to seal. Place salmon package in broiler pan. Broil 5 inches from heat source until salmon is just cooked through, about 10 minutes.

ONE-PAN SALMON AND CHERRY TOMATO BAKE WITH LEMON AND PARSLEY



One-Pan Salmon and Cherry Tomato Bake with Lemon and Parsley image

An easy one-pan, mid-week baked salmon dish that tastes delicious with plain basmati rice or potatoes.

Steps:

  • Turn oven on to 200 degrees C (Gas Mark 6).
  • In a large oven proof dish, add 1 tbsp of Olive Oil and spread all of the bottom of the dish. Lay the Salmon Fillets in the dish (they should be parallel to each other, but not touching each other).
  • Place the washed Cherry (or Baby Plum) Tomatoes in the same dish, around and in between the salmon fillets.
  • Season the salmon fillets and tomatoes with a generous amount of salt and pepper; sprinkle 1 tsp of Paprika all over the salmon and tomatoes; and finally, sprinkle the chopped parsley all over the salmon fillets (if you still have some left, sprinkle over the tomatoes).
  • Cut the butter into 4 even pieces. Slice the two end of the lemon off, then slice the rest of the lemon into 4 slices. Top each salmon fillet with one piece of butter, then one slice of lemon.
  • Take a large sheet of aluminium foil (large enough to cover the whole dish). Cover the dish with foil, scrunching the sides as tightly as possible (the aim is not to allow any air to escape during the cooking process, so make sure the dish is as tightly covered with foil as possible).
  • Bake in the oven for 25-30 minutes. When ready, take out of the oven, remove the foil from the dish (take care not to get burnt by the escaping steam).
  • Serve the fish and tomatoes on a bed of steamed plain basmati rice, pouring any juices left in the pan on top.

1/2 cup sliced almonds
1 small onion, sliced
1 tablespoon olive oil
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes, drained
1 1/2 tablespoons honey
1 teaspoon grated lemon rind
3/4 teaspoon ground cumin
1 1/2 teaspoons fresh lemon juice
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
8 (4 ounce) salmon fillets
1/8 teaspoon ground red pepper

Steps:

  • Bake almonds in a shallow pan at 350F, stirring occasionally, 5-6 minutes or until toasted. Set aside.
  • Saute onion in hot oil in a skillet 10 minutes or until golden. Stir tomatoes and next 3 ingredients; reduce heat, and simmer, stirring occasionally, 15 minutes. Stir in lemon juice and 1/4 teaspoon each of salt and pepper, keep warm.
  • Sprinkle salmon filets with red pepper, remaining 1/2 teaspoon salt and pepper. Place on a lightly greased rack in a broiler pan.
  • broil 6 inches from heat 10 minutes or until fish flakes with a fork. Serve with tomato mixture; sprinkle with almonds.

2 salmon fillets, thawed
1/2 lemon, juice of
1 tomatoes
1 zucchini
1 yellow squash
3 -4 tablespoons extra virgin olive oil
salt
fresh coarse ground black pepper

Steps:

  • Preheat the over to 325 degrees F.
  • Slice zucchini and yellow squash into thin slices.
  • Dice the tomato.
  • Place the salmon fillet in a glass or ceramic oven-safe casserole dish
  • Drizzle about a tablespoon of olive oil onto the fillet, season with salt and pepper lightly.
  • Lightly cover the fillet with slices of zucchini and yellow squash. Place excess around the fillet.
  • Place the remaining olive oil, lemon juice and diced tomato in a small bowl. Lightly crush the tomato and mix everything together.
  • Pour tomatoes, lemon juice and olive oil mixture over the fillet and vegetables.
  • Season lightly and let bake for about 15-20 minutes.
