I've served this main dish numerous times for dinner guests and have received many compliments. In fact, every time I make it for my husband, he'll comment, "This is the best chicken I've ever had."

6 boneless skinless chicken breast halves
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons each lemon juice and lime juice
3 tablespoons Dijon mustard
3/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Place chicken in a shallow glass dish. Combine remaining ingredients; pour over chicken. Cover and refrigerate at least 4 hours or overnight. Drain, discarding marinade. Grill chicken over medium-hot heat, turning once, until juices run clear, about 15-18 minutes.

the grated zest (about 2 teaspoons) and juice (about 3/4 cup) of 2 lemons
the grated zest (about 2 1/2 teaspoons) and juice (about 3/4 cup) of 3 limes
1 1/2 tablespoons sugar
1 teaspoon finely chopped garlic
1/4 teaspoon cayenne
1/4 cup vegetable oil
8 whole chicken legs (about 4 pounds)

Steps:

  • In a saucepan whisk together the zests, the juices, the sugar, the garlic, the cayenne, and salt and pepper to taste and simmer the mixture, stirring, for 5 minutes, or until the sugar is dissolved. Whisk in the oil and let the marinade cool.
  • In a large dish arrange the chicken, pricked in several places with a fork, in one layer, pour the marinade over it, and let the chicken marinate, covered and chilled, turning it once, for 1 to 3 hours. Transfer the chicken with tongs to an oiled grill set about 6 inches over glowing coals or to an oiled ridged grill pan set over moderately high heat and grill it, basting it with the marinade for the first 20 minutes (discard any remaining marinade). Turn the chicken over and grill it for 20 minutes more, or until it is cooked through.

The flavors in this easy Crock Pot meal are out of this world. There is a hint of heat from the chili powder, but you really taste the lovely citrus flavor from the lemon and lime. The chicken becomes so tender and juicy. It's guilt free and easy to make... the perfect combination!

3-4 Tbsp chili powder
1-2 tsp salt
1/2 tsp pepper
1/2 tsp cumin
3-4 lb chicken thighs, skinless and boneless (chicken breasts don't work well)
1 large onion, cut in wedges
1/4 c fresh lime juice
1/4 c fresh lemon juice
4 clove garlic, minced
1 can(s) diced green chiles (4 oz)
lime zest from 1/2 of a lime

Steps:

  • 1. Rub the chicken down with the salt and spices and arrange in the Crock Pot.
  • 2. Add the garlic, onion, lime zest, and chilies.
  • 3. Pour juice over all the chicken.
  • 4. Cook on low for 5 hours in your Crock Pot.
  • 5. Top it off with fresh green onion or cilantro. I like to have a spread of sides from tortillas, cilantro-lime rice, sour cream, sauteed zucchini, tomatoes & jalapenos... the flavor possibilities are endless!

THAI-STYLE CHICKEN COCONUT SOUP WITH LEMON & LIME



Thai-style Chicken Coconut Soup with Lemon & Lime image

This soup, reminiscent of Tom Kha Gai, is made with easily found ingredients. Like many a homemade soup, you can vary the soup according to what you have at hand and substitute as I did. You can even substitute turkey for chicken. "Tom-kha-gai" roughly translates to "soup-galangal-chicken." Galangal is a root similar to ginger. Other ingredients of a true Tom kha gai include Keffir lime leaves and lemon grass. There are many more-authentic recipes for Tom Kha Gai on the Web and it is from these I got my inspiration.

3 to 4 cup(s) chicken broth (preferably homemade to avoid a too-salty soup)
1 bunch(es) fine rice noodles, ramen noodles or vermicelli
1 can(s) straw mushrooms, drained and cut in half (other canned or thinly sliced raw mushrooms may be substituted)
1/2 cup(s) red bell pepper, julienned
1 medium lemon, juice only (optionally add the zest)
1 medium lime, juice only (optionally add the zest but this can be bitter)
8 ounce(s) cooked chicken, roughly chopped
1 tablespoon(s) thai fish sauce (nam pla, sometimes called thai seasoning sauce)
2 to 3 dash(es) tabasco (as a substitute for thai chiles)
1 to 2 tablespoon(s) grated fresh ginger
1 can(s) coconut milk, unsweetened (light okay)
1 to 2 tablespoon(s) brown sugar (if needed to adjust tartness)
2 cup(s) fresh spinach, basil or cilantro, coarsely chopped

Steps:

  • In a medium soup pot, bring chicken broth to a simmer and add the noodles. Let the noodles simmer slowly as you prepare and add the other ingredients. Note: if you are using fresh mushrooms, slice them thinly and give them a five-minute head start in the boiling broth before adding the noodles.
  • Add the rest of ingredients (but not the spinach, cilantro, or basil) to the broth. Simmer slowly.
  • After the mixture has simmered for about 5 minutes, taste and adjust the seasoning with Thai fish sauce (for saltiness), Tabasco and ginger (for heat) and brown sugar (for sweetness). If you wish to add a stronger taste of lemon or more bitterness from the lime, add in some zest of each.
  • As soon as the noodles are done, add the spinach, cilantro or basil. Simmer one more minute and serve hot.

SOUTHWEST ALFREDO WITH LEMON-LIME CHICKEN

This is a recipe I have been playing with for years and have finally perfected. It's a flavorful spin on your ordinary Alfredo sauce and it only takes about 45 minutes total! I have to make it for my mom every time she is in town.

4 frozen boneless skinless chicken breasts (from Costco)
1/2 cup lemon juice
1/4 cup lime juice
2 garlic cloves, minced
2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
1/2 cup olive oil
2 roasted red peppers
1/2 red onion, grilled in herb butter
6 ounces fettuccine pasta
6 tablespoons butter
1 cup heavy cream
1/4 cup of pasta water
1/2 cup parmesan cheese
3 tablespoons butter
salt (to taste)

Steps:

  • Preheat oven to 450°F.
  • Place frozen chicken in a glass baking dish. In a bowl whisk together juices, garlic, oregano, salt, pepper flakes, and oil.
  • Pour over chicken and bake for 20 minutes.
  • While chicken cooks, grill onion.
  • In a food processor puree roasted red pepper and onion. Set aside.
  • When timer goes off for the chicken pull it out, turn, and baste. Return to oven for 20 minutes.
  • At this time start to boil the water for the pasta and cook to package directions.
  • When pasta is done DRAIN OVER A MEASURING CUP, this will give you your 1/4 cup of pasta water.
  • In same pot melt the 6T. of butter on low. Add pepper mixture and heat for 1 minute.
  • Add pasta and toss to coat. Add parmesan, salt, 3T. butter, pasta water, and heavy cream.
  • Cook on LOW for about 5-10 minutes, stirring occasionally until it reaches your desired thickness.
  • By this time the chicken should be done. While the sauce cooks cut the chicken into slices or bite size pieces.
  • Pile pasta on your plate, sprinkle with parmesan and chicken.
  • Enjoy!

½ cup lemon juice
¼ cup lime juice
¼ cup vegetable oil
4 skinless, boneless chicken breast halves - cut into bite-size pieces
Italian seasoning to taste
seasoned salt to taste

Steps:

  • In a large bowl, whisk together the lemon juice, lime juice, and oil. Place chicken pieces in the mixture, and marinate at least 1 hour in the refrigerator (preferably 2 hours).
  • Preheat the oven broiler. Fit a roasting pan with a lightly greased wire rack. Fill pan with water to just below the level of the rack.
  • Remove chicken from marinade, arrange on the wire rack, and season with Italian seasoning and seasoned salt. Transfer remaining marinade to a saucepan, and bring to a boil.
  • Broil chicken 10 minutes in the preheated oven, basting frequently with the boiled marinade. Turn chicken, season again with Italian seasoning and seasoned salt, and continue broiling and basting 10 minutes, or until well browned and juices run clear.
