This is one of the easiest and most delicious quick lemon pies you'll ever eat. I first had it at my friend's, Patty, in Tucson.

Number Of Ingredients 4

1 large lemon
1 1/2 cups sugar (or Splenda)
4 eggs
1 frozen pie crust (8-9")

Steps:

  • Cut ends off lemon; slice into 3-4 sections and place in blender.
  • Pulverize.
  • Then add sugar and eggs.
  • Blend well.
  • Pour into 8-9 inch frozen pie crust and bake at 350F for 35-40 minutes.
  • Top with whipped cream or topping of your choice and garnish with fresh raspberries or other berries.

Easy and deliciously lemony. I got this receipt originally off Facebook but made some tweaks and it turned out to be the best lemon pie I've made. I'm not a big fan of meringue so this works perfectly for me.

4 large eggs
1/2 cup melted butter, cooled
2 lemons, juice of
1 1/4 cups sugar
3 tablespoons flour
3 tablespoons cornstarch
1 teaspoon vanilla extract
1 frozen pie shell
powdered sugar, to garnish
sift sugar, flour and corn starch together

Steps:

  • Preheat oven to 350 degrees.
  • Place eggs, butter, lemon juice, sugar mixture and vanilla extract in blender and pulse until smooth.
  • Pour into frozen pie shell and bake for 40-45 minutes or until set. I always put my pie on a cookie sheet to bake.
  • Remove from oven and let cool completely.
  • Dust with powdered sugar.

1 unbaked pie shell

  • Preheat oven to 350 degrees.

This is lemon blender pie and you literally throw all the ingredients in the blender and you've got yourself a fresh, citrusy pie filling that'll keep everyone coming back for more.

½ c butter, melted
1 lemon, sliced into wedges, seeds removed
1 ¼ c sugar
1 tsp vanilla
1 frozen, deep dish, pie crust
powdered sugar, garnish

Steps:

  • 1. Preheat oven to 350º F.
  • 2. Place lemon, sugar, eggs, butter and vanilla into blender, and pulse until mostly smooth.
  • 3. Pour lemon filling into frozen pie shell ( I used deep-dish) and bake for 45 minutes, or until set.
  • 4. Remove from oven and let cool completely, then dust with powdered sugar before serving.
  • 5. Slice, serve enjoy!

This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :)

1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup shredded coconut
1 teaspoon vanilla
