1/2 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
1/4 cup minced fresh gingerroot
2 tablespoons grated lemon zest
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
TOPPING:
2 tablespoons coarse sugar
2 tablespoons finely chopped crystallized ginger

Steps:

  • Preheat oven to 375°. In a small bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in ginger and lemon zest. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Fill greased or paper-lined muffin cups three-fourths full. In a small bowl, mix topping ingredients; sprinkle over muffins. Bake 14-16 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

2 tablespoons coarsely chopped peeled fresh ginger
1 -2 lemon, well scrubbed and patted dry
1/2 cup butter, at room temperature
1 cup sugar
2 large eggs
1 teaspoon baking soda
1 cup plain yogurt or 1 cup buttermilk
2 cups all-purpose flour
1/4 cup freshly squeezed lemon juice
2 tablespoons sugar

Steps:

  • Preheat oven to 375°; grease muffin cups or use foil or paper baking cups.
  • Finely chop the ginger; finely grate the lemon peel so you have 2 tablespoons.
  • In a big bowl, beat butter and 1 cup sugar with an electric mixer until pale and fluffy.
  • Beat in eggs, one at a time; add ginger and lemon peel.
  • Stir baking soda into yogurt or buttermilk; it will start to bubble and rise up.
  • Fold flour into ginger mixture one third at a time, alternately with the yogurt.
  • When well blended, scoop into muffin cups; bake 18-20 minutes, or until lightly browned and springy to the touch.
  • While the muffins bake, mix lemon juice and the 2 tablespoons sugar in a small dish; stir until sugar dissolves.
  • When muffins are baked, remove from oven and let cool 3-5 minutes in pan.
  • Remove from pan and dip top and bottom in the lemon juice and sugar mixture.

1/4 teaspoon salt
1/2 teaspoon baking soda
4 tablespoons unsalted butter, softened
7 tablespoons sugar
1 egg
1/2 cup buttermilk
3 tablespoons grated fresh ginger
2 lemons, zest of, minced

Steps:

  • Preheat the oven to 375 and butter muffin tins.
  • Mix the flour, salt, and baking soda together. Cream the butter and sugar together in a mixing bowl, add the egg, and beat until smooth. Add the buttermilk and mix until blended, being sure to scrape down the sides.
  • Add the dry ingredients and mix until smooth. Stir in the grated ginger and lemon zest.

Steps:

  • Combine the sugar, ginger, and lemon zest in an electric food processor and process until the ginger and zest are finely ground.
  • Add the butter and process until creamy and smooth.
  • Add the eggs, process, scrape down the sides of the bowl, and process again until smooth.
  • Transfer to a mixing bowl and stir in the buttermilk and the flour mixture.

1 cup white grape juice concentrate
2 large eggs, lightly beaten
¼ cup canola oil
1 tsp vanilla extract
2 tsp minced peeled fresh ginger
2 tsp minced lemon zest
1 cup grated carrot

Steps:

  • 1. Preheat the oven to 375F. Line a standard-size muffin tin with paper liners. 2. In large bowl, combine the whole-wheat flour, flaxseed, oats, ground ginger, and baking soda. Stir in nuts. 3. In medium bowl, combine juice concentrate, eggs, oil, vanilla, fresh ginger, and lemon zest. Whisk to blend. Add the juice mixture to the flour mixture, and stir gently just until the batter is smooth and well blended; do not overmix. 4. Gently fold in carrots. Spoon batter evenly into prepared muffin tin. Bake about 20 minutes, until a toothpick inserted into the center comes out clean. 5. Transfer to a wire rack and let cool 10 minutes. Remove muffins from tin; let cool completely. 1 lemon, zest only
1/2 cup vegetable oil
1/2 cup butter, melted
2 cups buttermilk
4 eggs
5 1/4 cups white flour
1 tsp. salt
2 tsps baking soda
1 1/2 cups white sugar

Steps:

  • Cut ginger crosswise into 1/2 inch chunks. Using a think paring knife, cut yellow only peel of lemon for zest. Puree 1/2 cup sugar with ginger and lemon zest. Stir other 1 1/2 cup sugar together with flour, salt & baking soda. Separately whisk together liquids (oil, butter, buttermilk & eggs). By hand, stir liquid mix into dry mix only till moistened. Fold in ginger and lemon mixture. Fill greased muffin pans 1/2 full to bake at 350 degrees for 25-30 minutes until barely golden around the edges and tops spring back to a gentle touch.
