Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
- Rinse tilapia fillets under cool water, and pat dry with paper towels.
- Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
- Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

Steps:
- Pat the tilapia dry with paper towels, then season with 1/2 teaspoon salt and a few grinds of pepper. Spread the flour on a plate; dredge the tilapia in the flour, tapping off the excess. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook until golden brown, about 3 minutes per side. Transfer to a plate; tent with foil to keep warm. Wipe out the skillet.
- Heat 3 tablespoons olive oil in the skillet over medium heat. Add the garlic and cook, stirring, until it starts browning, about 2 minutes. Add the chicken broth, wine, and lemon zest and juice. Increase the heat to high, bring to a boil and cook until the liquid is reduced by half, about 5 minutes; season with salt and pepper. Add the butter and whisk until slightly thickened, about 1 minute; stir in the parsley.
- Meanwhile, toss the spinach with the remaining 1 tablespoon olive oil and a few grinds of pepper. Divide among plates, top with the fish and drizzle with some pan sauce. Serve with lemon wedges.
BAKED LEMON-GARLIC TILAPIA AND POTATOES IN FOIL
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray foil with cooking spray.
- Place equal amounts of diced potato and red bell pepper in the middle of each piece of foil and sprinkle with 1/2 of the seafood seasoning. Dot 1 1/2 teaspoons of butter on top of the potatoes.
- Add 1 tilapia fillet to each packet of potatoes. Sprinkle fillet with remaining seafood seasoning. Dot remaining 1 1/2 teaspoons butter on top of the fillets.
- Cut 1/2 of the lemon into thin slices and place 1 to 2 lemon slices on top of each fillet. Seal foil packets and crimp edges tightly.
- Bake in the preheated oven until tilapia flakes easily with a fork, about 25 minutes.
- Open packets carefully and vent steam. Squeeze remaining lemon juice over the tilapia and serve immediately.

- Melt butter on a low flame in a small sauce pan. Add garlic and saute on low for about 1 minute. Add the lemon juice and shut off flame.
- Spray the bottom of a baking dish lightly with cooking spray. Place the fish on top and season with salt and pepper. Pour the lemon butter mixture on the fish and top with fresh parsley. Bake at 400° until cooked, about 15 minutes.

- Pour marinade over all remaining ingredients in resealable plastic bag. Seal bag; turn to evenly coat ingredients with marinade. Refrigerate 30 min. to marinate. Remove ingredients from marinade; discard bag and marinade.
- Preheat grill to medium-high heat. Place 1 fish fillet in center of each of four 18x12-inch sheets of heavy-duty foil; top with one-fourth of the vegetable mixture. Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside.
- Grill 10 min. or until fish flakes easily with fork. Cut slits in foil with sharp knife to release steam before opening each packet. Remove fish and vegetables from each packet to serving plate; drizzle evenly with the reserved liquid from bottom of packet.

- 1. Preheat oven to 400 On a foil lined baking sheet, spray with cooking spray. Salt and pepper fillets. Place fresh rosemary (about 3in pieces.) on each piece of fish. Top rosemary with 2-3 thin sliced lemons. Place garlic cloves around pan near fillets. Add more seasoning if You like. Drizzle with olive oil.
- 2. Cover tent like pan with more tin foil and bake for 15-18min. Mine was perfect. Depending on size. Remove tin foil and serve up with Your favorite side and more lemon wedges and rosemary. Enjoy!!!
- 3. This also can be made in individual foil packets on the grill!

TILAPIA WITH GARLIC & LEMON
Steps:
- Preheat oven 375. Heat in saute pan on medium (5) 1 Tsp olive oil 1 tsp butter most of juice of one-half lemon 1/2 tsp minced garlic (refrigerator) 1 tsp. dried parsley Add 2 fillets. Squeeze rest of lemon on fillets. Sprinkle Cavendar's seasoning on top. Saute 3 minutes. Flip. Saute 3 minutes. Transfer to baking dish, sprayed with PAM. Crush 3 saltine crackers over top. (If available, sprinkle Parmesan cheese on top.) Bake 375 degrees for 6 minutes.

- Preheat oven to 400. Spray a baking dish with cooking spray and place tilapia in dish. Salt and pepper. Melt butter in microwave. Add olive oil, lemon juice, garlic powder salt and parsley and sauté for a few mins. Pour over tilapia. Sprinkle with cayenne to taste. Bake for 13 mins and broil for 2 - 3 mins.
