LEMON-GARLIC LAMB CHOPS WITH YOGURT SAUCE
Steps:
- Make sauce:
- Drain yogurt in a sieve lined with a double thickness of cheesecloth at room temperature 20 minutes. Stir together with garlic, mint, and salt and pepper to taste.
- Prepare chops while yogurt drains:
- Stir together lemon juice, garlic, oregano, and 2 tablespoons oil in a shallow baking dish. Add lamb chops, turning to coat, and marinate 20 minutes. Remove lamb from marinade, reserving marinade, and season with salt and pepper. Heat remaining tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chops in 2 batches, without crowding, about 2 minutes on each side for medium-rare. Transfer to plates. Boil reserved marinade in skillet with water 1 minute and pour over chops.
- Serve chops with yogurt sauce.

- In a small bowl mix together first 7 ingredients. Pour marinade over chops and let marinade 20 min-1 hours.
- Preheat grill pan and grill to desired done-ness (I prefer mine med-rare which takes 3-4 minute on each side).

MARINATED LEMON, THYME AND GARLIC LAMB CHOPS
Made this for dinner last night and it was awesome! I used shoulder lamb chops, but any cut will do. Came out very tender and moist on the barbecue grill. This same recipe can also be used to marinate chicken or pork. It is delicious!

- Combine olive oil, lemon juice, thyme and garlic in a shallow dish.
- Season with salt and pepper to taste, place chops in and turn over once to coat the meat.
- Cover and marinate in the refrigerator for at least one hour or up to four hours.

LEMON-GARLIC LAMB CHOPS WITH MINTED COUSCOUS

- Position an oven rack about 4 inches from the broiler element and heat the broiler on high. Arrange the lamb in a single layer on a rimmed baking sheet. Finely grate the zest from both lemons and then squeeze them to yield 1/4 cup juice. In a small bowl, combine the lemon zest, juice, olive oil, and garlic. Set aside 3 Tbs. of the mixture. Brush one side of the lamb chops with half of the remaining lemon mixture and season with 3/4 tsp. each salt and pepper. Broil for 4 minutes, then flip the lamb, brush the other side with the remaining half of the lemon mixture, and season with 3/4 tsp. each salt and pepper. Broil for 3 minutes more for medium rare or 4 minutes for medium. Let the chops rest, loosely covered with foil, for 5 minutes. While the lamb cooks, bring 1 cup water and 3/4 tsp. salt to a boil in a 1- to 2-quart saucepan over medium-high heat. Stir in the couscous, peas, and reserved lemon juice mixture. Cover, remove from the heat, and let stand until the peas are tender and the couscous has absorbed all of the liquid, at least 10 minutes. - Chop garlic. Pat lamb dry and season with salt and pepper. In a 10-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sear lamb 3 minutes. Turn lamb over and sear 2 minutes more for medium-rare. Transfer lamb to 2 plates. Add garlic, lemon juice, and water to skillet and deglaze over high heat, stirring and scraping up brown bits, 1 minute. Pour sauce over lamb.
LAMB CHOPS WITH ROSEMARY, GARLIC AND LEMON

- Place the garlic in a pestle and mortar and bash until it becomes a paste. You can add some coarse salt that will help the process somewhat. When it is a soft paste, add some olive oil and mix. Add some lemon juice and you are ready to go. Place the lamb chops in a Ziploc bag and pour the marinade over it. Close and leave in fridge for at least ½ hour. although overnight is best! When you are ready to cook the chops, remove from the bag and scrape off the excess marinade. Heat your griddle pan until it is very hot and grill the chops to perfection. Grill chops about 2 minutes or less per side, turning only once. They will cook quickly and are best if kept at medium-rare or under.
LAMB LOIN CHOPS WITH LEMON AND GARLIC
A simple and delicious Greek dish of lamb loin chops!

- Remove chops from refrigerator and pat them dry. Sprinkle both sides with the black pepper, oregano and garlic. Add half of the olive oil and rub both sides well. Let the chops sit at room temperature for about 45 minutes. When ready to cook, sprinkle both sides with the sea salt.
- Heat the rest of the olive oil in a large cast iron pan over medium high heat. When the pan is hot, place the chops meat-side down in the pan, making sure you do not crowd the pan.
- Let the lamb brown, about 3 to 4 minutes on each side depending on the heat of your pan and the size of the chops. Once browned on one side, turn the chops over and brown the other side. Quickly sear the fatty and bone edges of the chops as well. (If you have a grill, use it for even better flavor!)
- Add the slices of lemon to the pan and shake the pan to distribute evenly (the lemon provides the acidity to help deglaze the pan).
- Once all of the sides have browned, lower the heat and continue to cook until the lamb chops are done to your liking. Use an instant read meat thermometer to check. Remove the meat from the pan at 125°F for rare, and 130° to 135°F for medium rare. Some of the chops may cook faster than others, so check them as they cook, and pull them off the pan when ready.
- Place the chops on a plate and cover with foil (this is very important). Let them rest for 10 minutes. Serve with the lemon slices, fresh rosemary and the accumulated pan juices.
