1 tbsp baking powder
1/2 tsp salt
1/2 cup (114g) unsalted butter, melted and cooled
1 & 1/4 cups (250g) granulated sugar, divided
2 large eggs
3/4 cup (188ml) milk
zest of 1 lemon
2 tbsp lemon juice
1 tsp vanilla extract
2 cups blueberries

Steps:

  • Preheat oven to 400F and line a 12 cup muffin pan with paper liners.
  • In a large bowl; whisk together the flour, baking powder, and salt. Set aside.
  • In a medium bowl; whisk together the melted butter and 1 cup of sugar. Then whisk in the eggs, milk, lemon zest, lemon juice, and vanilla.
  • Add the wet ingredients to the dry ingredients, and gently stir using a rubber spatula until just combined. Fold in the blueberries.
  • Divide the batter into the 12 muffin cups. Generously sprinkle the remaining sugar over the tops.
  • Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.

3 cups all-purpose flour
1 ½ cups white sugar
2 lemons, zested and juiced, divided
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
1 cup buttermilk
⅔ cup vegetable oil
2 eggs
2 teaspoons vanilla extract
12 ounces fresh blueberries
2 cups confectioners' sugar
½ cup butter, melted
¼ cup hot water
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line two 12-cup muffin tins with paper liners.
  • Stir flour, sugar, 1 tablespoon lemon zest, baking soda, salt, and nutmeg together in a large bowl.
  • Whisk buttermilk, oil, eggs, lemon juice, and vanilla extract together in a medium bowl. Stir into the flour mixture until just moistened. Fold in blueberries. Spoon batter into muffin cups, filling them about 3/4 full.

LEMON-SUGAR TOPPING
1/3 c sugar
1 1/2 tsp finely grated zest from 1 lemon
MUFFINS
2 c blueberries, fresh or frozen
1 1/8 c sugar plus 1 teaspoon
2 1/2 c all-purpose flour
2 1/2 tsp baking powder
1 tsp kosher salt
2 large eggs
1 1/2 tsp finely grated lemon zest from 1 lemon
1 Tbsp lemon juice, freshly squeezed
4 Tbsp butter, unsalted, melted and cooled slightly
1/4 c canola oil
1 c buttermilk
1 1/2 tsp pure vanilla extract

Steps:

  • 1. FOR THE TOPPING: Stir together sugar and lemon zest in small bowl until combined; set aside.
  • 2. FOR THE MUFFINS: Adjust oven rack to upper-middle position and heat oven to 425-degrees. Spray standard muffin tin with nonstick cooking spray.
  • 3. Bring 1 cup blueberries, 1 teaspoon sugar and ½ teaspoon of lemon zest to simmer in small saucepan over medium heat. Cook, mashing berries with spoon several times and stirring frequently, until berries have broken down and mixture is thickened and reduced to ¼ cup, about 6 minutes. Transfer to small bowl and cool to room temperature, 10 to 15 minutes. Soak 1 teaspoon of lemon zest into 1 tablespoon of lemon juice while the berries cool to room temperature, about 10 minutes.
  • 4. Whisk flour, baking powder, and salt together in large bowl. Whisk remaining 1 1/8 cups sugar and eggs together in medium bowl until thick and homogeneous, about 45 seconds. Slowly whisk in butter and oil until combined.
  • 5. Strain the 1 teaspoon of lemon zest of most it's moisture and add to the mixture -- discard the lemon juice. Whisk in buttermilk and vanilla until combined. Using rubber spatula, fold egg mixture and remaining cup blueberries into flour mixture until just moistened. (Batter will be very lumpy with few spots of dry flour; do not overmix.)
  • 6. Use ice cream scoop or large spoon to divide batter equally among prepared muffin cups (batter should completely fill cups and mound slightly).
  • 7. Spoon 1 teaspoon of cooked berry mixture into center of each mound of batter. Using chopstick or skewer, gently swirl berry filling into batter using figure-eight motion. Sprinkle lemon sugar evenly over muffins.
  • 8. Bake until muffin tops are golden and just firm, 15 to 19 minutes, rotating muffin tin from front to back halfway through baking time. Cool muffins in muffin tin for 5 minutes, then transfer to wire rack and cool 5 minutes before serving.
