2 salmon fillets (4 ounces each)
5 teaspoons reduced-fat butter, melted
3/4 teaspoon lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon snipped fresh zest

Steps:

  • Place salmon, skin side down, on a broiler pan. Combine the butter, lemon juice, lemon zest and dill. Brush one-third of mixture over salmon. Broil 3-4 in. from the heat for 7-9 minutes or until fish flakes easily with a fork, basting occasionally with remaining butter mixture.

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

1 pound salmon fillets
¼ cup butter, melted
5 tablespoons lemon juice
1 tablespoon dried dill weed
¼ teaspoon garlic powder
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place salmon in the baking dish. Mix the butter and lemon juice in a small bowl, and drizzle over the salmon. Season with dill, garlic powder, sea salt, and pepper.
  • Bake 25 minutes in the preheated oven, or until salmon is easily flaked with a fork.

½ pound baby red and yellow potatoes, or to taste
1 cup fresh green beans, trimmed, or to taste
2 tablespoons olive oil, divided
2 (6 ounce) salmon fillets
1 clove garlic, crushed
1 sprig chopped fresh dill
½ lemon, sliced
½ lemon, juiced
½ teaspoon freshly ground black pepper
⅓ teaspoon coarse salt
3 tablespoons mayonnaise
1 ½ tablespoons capers, roughly chopped
1 lemon, juiced
½ teaspoon freshly ground black pepper
¼ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add potatoes and green beans, cover, and steam until tender, about 10 minutes. Drain.
  • Brush the shiny side of 2 large pieces of aluminum foil with 1 teaspoon olive oil each. Place salmon skin-side down in the center. Brush remaining olive oil and garlic over salmon. Sprinkle dill on top. Divide lemon slices over salmon; squeeze 1/2 lemon on top. Season with 1/2 teaspoon pepper and 1/3 teaspoon salt.
  • Cover salmon with 2 pieces of aluminum foil, shiny-side down. Roll aluminum foil inwards on all sides to create a pouch. Transfer pouches to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, 10 to 12 minutes.
  • Mix mayonnaise and capers together in a small bowl to make a tartar sauce. Stir in juice from 1 lemon, 1/2 teaspoon pepper, and 1/4 teaspoon salt.
  • Serve steamed potatoes, green beans, and tartar sauce alongside salmon.

4 salmon fillets (6 ounces each)

1 lemon (juiced)
1/4 cup grapeseed oil
2 large salmon fillets (skin on and 1 1/2 inches thick)
2 teaspoons sea salt
1/2 teaspoon coarse ground black pepper
1/2 teaspoon garlic powder
2 tablespoons chopped fresh dill (plus additional for garnish)

Steps:

  • Gather the ingredients.
  • Preheat grill to medium heat.
  • Combine lemon juice and grapeseed oil together in a bowl. Brush liberally onto salmon skin and then onto salmon flesh.
  • Make a rub mixture out of salt, black pepper, and garlic powder. Sprinkle onto salmon and then top with chopped dill.
  • Place salmon flesh-side down onto grill grate. Allow to cook for 2 to 3 minutes, and very carefully using a spatula, work fillets away, on all sides, from the grill grate.
  • Once free, gently turn fillets over. Close cover and allow fish to cook for 8 to 10 minutes, or until it reaches an internal temperature of 145 F to 150 F.

2 pounds salmon, skinned and deboned
2 tablespoons olive oil
1 lemon
½ tablespoon chopped fresh dill, or more to taste
½ tablespoon garlic powder, or more to taste

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them.
