LEMON AND LIME CREAM TART

This tart is one of my favorite combinations - Lemon and lime to me is so much more refreshing than just plain old lemon. If you want to bring out the fragrance of the lime even more, simply grate the zest of 4 limes and add to the filling mix at the beginning. This filling isn't made from a curd recipe, it's gently baked in the oven after you have baked the pastry shell blind, so you are left with a really soft and silky filling and a short crisp pastry shell.

1 tart shell, baked blind
8 large free-range eggs
12 ounces caster sugar
12 ounces double cream
7 1/2 ounces lime juice
3 3/4 ounces lemon juice

Steps:

  • With this particular tart, as it has a moist filling, it's important to egg-wash the uncooked tart shell before adding the filling. This adds a sort of waterproof layer and keeps the pastry crisp and short for longer.
  • Whisk together the sugar and eggs in a bowl. When they are well mixed, slowly stir in the cream and the juices. Put the cooked tart shell back into the oven and then pour the filling into it -- I find this reduces spillage. Bake for around 40 to 45 minutes at 180C/350F/Gas 4 or until the filling is set, but still semi-wobbly in the middle (obviously different ovens will cook at different rate so it is good for you to try this tart a couple of times to gauge exactly when you should take it out of the oven). After cooling for an hour, the semi-wobbly filling will have firmed up to the perfect consistency; soft and smooth. If you cut it before it has had time to rest it will pour out or be extremely gooey.
  • You can dust it with a little icing sugar, if you wish. Serve with a huge pile of fresh raspberries or strawberries. Whatever you decide to serve it with should be quite simple so that you let the tart do the talking.

STRAWBERRY AND RASPBERRY TART WITH MEYER LEMON PASTRY CREAM

1 stick (8 tablespoons) cold, unsalted butter
1 cup all-purpose flour, plus more for dusting
1 1/4 cups sugar
1/2 teaspoon kosher salt
4 large eggs plus 1 egg yolk
Ice water, as needed
2 tablespoons cornstarch
2 1/4 cups heavy cream
1 teaspoon vanilla extract
Peel of 1 Meyer lemon (strips removed with a peeler)
3 tablespoons apricot preserves
1 cup raspberries
5 strawberries, hulled and sliced
Freshly whipped cream, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Grate the butter on a box grater and add to the bowl of a food processor with the flour, 1/4 cup of the sugar and the salt. Pulse to combine until the mixture resembles Parmesan cheese. Add the egg yolk and 3 tablespoons of ice water. Pulse to combine until the dough comes together and holds its shape when pressed between your fingers. Turn the dough out onto a floured work surface. Gently knead a few times and bring the dough together into a ball, then flatten into a disc. Roll the dough out evenly into a 1/4-inch-thick circle. Transfer the dough onto a sheet tray and cover with plastic wrap. Place into the fridge to rest for 30 minutes.
  • Remove the dough from the fridge and roll evenly in all directions, making sure it doesn't stick to your work surface and dusting with flour as needed. The dough should be about 1/8-inch thick. Slice the dough in half and transfer to two nonstick 6-inch fluted tart pans with removable bottoms. Press the dough snuggly into the edges ensuring the dough runs fully up the side. Use a rolling pin to trim the excess dough. Line each tart with a piece of foil and fill with baking beans (or I use rice!), making sure the foil is tightly packed to the corners. Transfer the dough to the oven to blind bake for 6 minutes. Rotate the pan, then bake for another 6 minutes. Remove the foil and baking beans and place the tart back into the oven until lightly golden, another 4 minutes. Set aside to cool.
  • Set up an ice bath. Add the cornstarch and 1/4 cup of the heavy cream to a small bowl. Mix to create a slurry and set aside. Add 1/2 cup of the sugar and the 4 whole eggs to a large bowl and beat with a whisk until pale yellow and foamy. Add the remaining 2 cups heavy cream, the remaining 1/2 cup sugar, the vanilla extract and lemon peel to a small saucepan and whisk to combine. Turn the heat to medium-high and bring to a boil, then pour half of the mixture into the bowl with the eggs and sugar and immediately whisk vigorously to combine and temper the mixture. Pour the contents of the bowl into the saucepan and continue to whisk. Add the cornstarch slurry and whisk to combine. Reduce the heat to medium-low and continue to whisk until the mixture begins to thicken and it reaches the texture of pudding, 3 to 4 minutes. You want to continuously whisk to avoid scorching the mixture. Strain through a fine mesh strainer into a bowl. Set the bowl over the ice bath to cool.
  • Place the apricot preserves and a splash of water into a small saute pan. Turn the heat to medium and stir to gently melt the preserves, about 5 minutes. Set aside.
  • To assemble the tart, spoon an even layer of the lemon pastry cream into each tart shell, but not fully to the top. Line the outside of the tart with raspberries and working inward, arrange the inside of the tart with the sliced strawberries. Repeat this process alternating with more raspberries and strawberries. Glaze the top of each tart with the apricot mixture.
  • Serve the tarts with a dollop of whipped cream. Enjoy!

  • Combine the lemon zest and sugar in the container of a food processor. Blend until the zest is very fine. 4 cups all-purpose flour
8 ounces unsalted butter
1 teaspoon salt
2/3 cup chilled water
10 whole eggs
10 egg yolks
2 1/2 cups sugar
2 cups fresh lemon juice
5 lemons, finely zested
1 teaspoon salt
2 1/2 pounds unsalted butter
1/2 cup water
1/4 cup sugar
2 tablespoons berry coulis
For the whipped cream:
4 tablespoons berry coulis

Steps:

  • Preheat oven to 375 degrees F.
  • For the tart shells:
  • Combine the flour, butter and salt in a food processor and pulse until the butter is pea-size. Add the water and pulse just until the dough gathers together.
  • Take the dough out and place on a lightly floured work surface. Work gently into a ball, wrap in plastic and refrigerate until well-chilled, about 1 hour.
  • Take the dough out of the refrigerator and place on a lightly floured work surface. Divide into 8 equal portions. Roll each out into a circle to about 1/8-inch thickness, keeping the dough well-floured as you work. Then place each in its own tart mold and trim excess dough.
  • Bake for 10 to12 minutes or until tart shells are lightly brown. Remove from molds and refrigerate tart shells while preparing the lemon curd.
  • For the curd:
  • In large bowl set over double boiler, place eggs, yolks, sugar, lemon juice, zest, and salt over simmering water. Whisk well. Add butter in pieces and stir over medium heat, being careful not to boil, until it is thickened or coats the back of a spoon. Cool.
  • For the coulis:
  • In a medium saucepan simmer berries, water and sugar for 10 minutes. Press through a fine mesh strainer and puree in a blender or food processor. Set aside some coulis for whipped cream, some for berries, and some for plating.
  • To serve:
  • Fill tart shells nearly full with chilled lemon curd and place on an oval plate. Toss fresh berries in coulis and place on tart and directly on the plate. Place coulis artfully next to tart and berries. Whip the cream, adding sugar and coulis to it, then place a dollop on each tart top. Bon Appetit!

Steps:

  • Make crust:
  • Pulse together flour, cornmeal, sugar, and salt in a food processor. Add butter and rosemary and pulse until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle evenly with 4 tablespoons ice water and pulse until just incorporated.
  • Gently squeeze a small handful: If it doesn't hold together, add more water, 1/2 tablespoon at a time, pulsing after each addition and continuing to test.
  • Press dough evenly onto bottom and up sides of tart pan with floured fingers. Smooth dough with a small offset metal spatula or back of a spoon (floured if necessary), then roll a rolling pin over top of pan to trim dough flush with rim. Chill crust until firm, about 30 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. Chill beaters of an electric mixer and a metal or glass mixing bowl in the freezer.

Steps:

  • Lemon Ice Cream Base:
  • Combine whole milk, heavy cream, inverted sugar, egg yolks, granulated sugar, milk powder, and stabilizer in a large stainless steel bowl. Place the bowl over boiling water.
  • Stirring constantly, slowly cook the mixture until a thicker consistency. Add chopped candied lemon zest and lemon oil extract to the mixture. Cool down the mixture over an ice water bath. Cover and refrigerate the ice cream bath overnight. The next day, process in an ice cream maker according to manufacturer's directions.
  • Crumbles:
  • Preheat the oven to 350 degrees F.
  • In the bowl of a stand mixer, cream the butter and sugar on low speed. Add flour, almond flour, and salt and continue mixing on low until fully incorporated, about 3 to 4 minutes. Using your hands, break the dough into small crumbles and place them on a baking sheet. Bake for 8 to 10 minutes or until golden brown. Let cool completely and cover with plastic wrap to keep dry.
  • Meringue:
  • Preheat the oven to 250 degrees F.
  • In a clean, dry mixing bowl, whip the egg whites to soft peaks. On low speed, gradually add the granulated sugar to the meringue, increase the speed, and whip the meringue to stiff peaks. Transfer meringue to a piping bag and pipe out the meringue into long cylinder shapes on a silpat or piece of parchment paper. Dust the tops with the powdered sugar. Bake for 2 hours. Let cool completely. Crumble the meringue and cover with plastic wrap to keep dry.
  • Lemon Tart Ice Cream:
  • Combine eggs, granulated sugar, powdered glucose, and fresh lemon juice in a large stainless steel bowl. Place the bowl over a large pan of boiling water. Stirring constantly, slowly cook the mixture to curd consistency. Place the mixture over an ice water bath and cool down to 100 degrees F. Add butter and combine well. Refrigerate the mixture until very cold.
  • Process the ice cream in an ice cream maker according to manufacturer's directions. Transfer the ice cream to a large mixing bowl and fold in the crumbles and meringue pieces. Then add the lemon ice cream base and fold to combine until the 2 ice creams are nicely marbled. Transfer to airtight containers and freeze until hardened, about 2 hours.

  • For crust:
  • Blend flour, powdered sugar and salt in processor. Add butter; process until coarse meal forms. Add water 1 tablespoon at a time; process until moist clumps form. Gather dough into ball; flatten into disk. Transfer to 9-inch-diameter tart pan with removable bottom. Press over bottom and up sides of pan. Pierce all over with fork. Freeze 30 minutes.
  • Preheat oven to 350°F. Bake crust until golden, about 25 minutes. Cool. Maintain oven temperature.
  • For filling:
  • Whisk first 6 ingredients in medium bowl to blend. Pour into crust. Bake tart until filling is set, about 25 minutes. Cool tart completely in pan on rack. Chill until cold. (Can be made 8 hours ahead. Keep chilled.) Serve with Frozen Lime Cream.

2 large eggs
2 large egg yolks
1 tablespoon (packed) finely grated lemon peel
1/3 cup fresh lemon juice
2 tablespoons dry white wine (such as Sauvignon Blanc)
3/4 cup heavy whipping cream

  • For crust:
  • Butter bottom (not sides) of 9-inch-diameter tart pan with removable bottom. Blend flour, sugar, grated lemon peel, and salt in processor. Add butter; blend until coarse meal forms.   • Melt 6 tablespoons butter in medium skillet over medium-high heat. Whisk in brown sugar. Whisk until mixture bubbles thickly, about 2 minutes. Mix in cracker crumbs; stir 1 minute. Using back of fork, press warm crumb mixture over bottom and up sides of 9-inch-diameter tart pan with removable bottom. Cool crust completely.
  • Pour milk into small custard cup. Sprinkle gelatin over. Let stand until gelatin softens, about 15 minutes. Whisk 1 cup sugar, lemon juice, and lemon peel in heavy medium saucepan to blend well. Whisk in eggs, then remaining 4 tablespoons butter. Whisk over medium heat until custard thickens and just begins to boil, about 5 minutes; remove from heat. Add gelatin mixture; whisk until gelatin dissolves. Let stand until beginning to set, about 10 minutes. Pour warm filling into crust. Chill until filling is firm, at least 3 hours and up to 1 day.
  • Beat cream and remaining 1 tablespoon sugar in medium bowl until peaks form. Pipe or spoon cream over tart. Serve immediately or chill up to 4 hours.

100 grams (1/2 cup) sugar
300 grams (2 1/3 cups) all-purpose flour, plus more for dusting
60 grams (3 each) egg yolks
200 grams (2/3 cup) white chocolate pastilles, couverture
20 grams (3 tablespoons) paillettes de feuilletine
80 grams (1/3 cup) lime juice
250 grams (1 1/4 cups) sugar
100 grams (5 each) egg yolks
50 grams (1 large) whole eggs
Zest of 5 limes
200 grams (3/4 cup plus 2 tablespoons) unsalted butter
1 cup whipped cream
60 to 80 grams (1/4 to 1/3 cup) lemon juice

Steps:

  • For the pastry/biscotti crumble: Preheat the oven to 350 degrees F.
  • Beat the butter and sugar in a stand mixer fitted with a paddle attachment on medium speed until light and fluffy. Turn the speed down to low, add the flour and mix to combine. Add the egg yolks and continue mixing until just combined. Turn out onto a floured work surface and lightly knead a couple of times. Wrap in plastic wrap and refrigerate for about 20 minutes. When ready, line a sheet pan with parchment paper and roll out the dough to about 3/8 inch thick. Use a 3-inch round cutter to cut out 6 rounds and place them evenly spaced on one half of the prepared pan. Place the remaining scraps on the other half of the pan and bake until lightly golden, 12 to 15 minutes. Allow to cool completely.
  • For the white chocolate wafer: Microwave the white chocolate at 15 to 20 second intervals, stirring between each, until the chocolate is almost completely melted. When you can still see pieces of the pastilles but it's still mostly melted, remove and continue to stir the chocolate until completely smooth. Gently fold in the feuilletine. Spread out evenly on to a clean dry half sheet pan into a rectangle about 1/8 inch thick. Refrigerate until firm and crisp, about 20 minutes. Once set, use a 3-inch round cutter to cut in to 6 discs and set aside.
  • For the lime curd: Whisk together the lime juice, sugar, egg yolks and eggs in a saucepan over medium heat until just thickened. Add the lime zest, whisk in the butter, then whisk over an ice bath until completely chilled. Fold in the whipped cream and transfer the mixture to a piping bag fitted with a round tip.
  • For the lemon curd: Whisk together the lemon juice, limoncello, sugar, egg yolks and eggs in a saucepan over medium heat until just thickened. Add the lemon zest, whisk in the butter, then whisk over an ice bath until completely chilled. Fold in the whipped cream and transfer the mixture to a piping bag fitted with a round tip.
  • To assemble the lime tarts: Pipe a thin layer of lime curd on the bottom of one of the pastry rounds, then stand some raspberries around the border of the round, nestling them along the edge of the cream. Pipe some more lime curd in the center of the berries to the tops then place a chocolate wafer on top. Pipe a little more curd on top of the wafer to secure 1 blueberry, 1 blackberry and 1 flower to the top for garnish. Repeat 5 more times.
  • To assemble the lemon tarts: Crumble about 1/4 cup of the baked pastry scraps on the base of a small serving dish. Line the outside with sliced strawberries. Pipe the lemon curd in the center of the dish. Garnish with some pomegranate seeds and edible flowers. Repeat 5 more times.
  • To serve: Place a lime tart on one side of a plate and a lemon cream on the other. Repeat 5 more times.

1 1/4 cups all-purpose flour
1/4 cup cornstarch
5 tablespoons confectioners' sugar
7 tablespoons butter
1 teaspoon vanilla extract
2 egg yolks, beaten
1 cup cream cheese
3 tablespoons lemon curd
1 lemon, juice and rind of, grated
confectioners' sugar, to sweeten (optional)
2 cups mixed red berries
3 tablespoons red currant jelly

Steps:

  • Sift the flour, corbstarch and confectioner's sugar together, then rub in the butter until the mixture resembles bread crumbs.
  • Beat the vanilla into the egg yolks, then mix into the crumbs to make a firm dough, adding cold water if necessary.
  • Roll out the pastry and line a 9-inch round tart pan, pressing the dough up the side after trimming. the shell of the tart with a fork and let it rest in the fridge for 30 minutes.
  • Preheat the oven to 400°F Line the shell with waxed paper, and baking beans. Place pan on a baking sheet and bake for 20 minutes, removing beans and paper for the last 5 minutes. When cooked, cool and remove the pastry shell from the tart pan.
  • Cream the cheese, lemon curd and lemon rind and juice, adding confectioner's sugar to sweeten, if desired. Spread the mixture into the tart shell.
  • Top the tart with the fruits. Gently warm the red currant jelly and trickle it over the fruits just before serving.

1 sheet puff pastry, defrosted according to package directions
1 egg
2 -3 oranges
8 tablespoons raw sugar
1/2 cup lemon curd
1/4 cup mascarpone cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Unfold the pastry and cut out a 10 or 11-inch circle. (use a 10-inch tart pan like a cookie cutter to cut out the circle.).
  • Place the circle on a baking sheet that is lined with parchment paper.
  • Prick the base all over with a fork and place in the refrigerator for 15 minutes.
  • Beat the egg, remove the base from the fridge and brush with the beaten egg.
  • Place in the oven and bake for 10 minutes.
  • Cover the pastry round with another baking (cookie) sheet to weigh it down so that the base will stay flat and cook for another 5 minutes.
  • Remove from oven and allow to cool completely.
  • While the base is baking, zest one of the oranges.
  • Then remove the skin from both of the oranges and cut into thin slice.
  • Toss the orange slices with 1 tablespoon of the sugar.
  • Pour 1/3 cup water into a small saucepan and stir in the remaining 7 tablespoons of sugar.
  • Place over medium heat and cook, stirring occasionally to melt the sugar.
  • Add the reserved zest and cook for 10 minutes.
  • Using a slotted spoon, remove the zest from the sugar syrup and place on parchment paper to dry.
  • Mix the lemon curd and mascarpone together.
  • To serve:.
  • Just before serving, spread the cooled base with the lemon/cheese mixture.
  • Arrange the oranges on top and sprinkle with the candied orange zest.
