1 (18 ounce) box lemon cake mix (any brand)
1 large egg
1 (8 ounce) container COOL WHIP Whipped Topping
4 cups powdered sugar

Steps:

  • preheat oven 350.
  • in a med bowl add cake mix, whipped egg, and Cool Whip mix together until well blended.
  • take a tablespoon of batter and roll into a ball in powdered sugar.
  • place on parchment paper lined cookie sheet.
  • bake for 8 to 10 min.

Light and fluffy lemon cookies made using a cake mix and frozen whipped topping.

1 (8 ounce) container frozen Cool Whip (thawed)
2 eggs
1 (18.25 ounce) package lemon cake mix
1/3 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a baking sheet with nonstick cooking spray or line with a silicone baking mat; set aside.
  • In a large mixing bowl, beat together Cool Whip and eggs.
  • Add the cake mix and mix until combined. The dough will be extremely sticky.
  • Refrigerate for 30 minutes.
  • Drop cookie dough by teaspoons into a bowl containing the powdered sugar and roll to coat.
  • Once the dough is completely coated in powdered sugar, it will be easier to roll into a ball.
  • Place cookie dough on prepared baking sheet and bake for 9-11 minutes, or until the edges are slightly golden brown.

1 box Lemon* Cake Mix (preferably with pudding in the mix)
1 (8 ounce) container Cool Whip, completely thawed
1 large egg, beaten
1/2 cup powdered sugar (for rolling)

Steps:

  • Preheat oven to 350° F and line a half sheet pan or cookie sheet with parchment paper or a silicone baking sheet.
  • In a medium bowl combine dry cake mix, and beaten egg. Mixture will be crumbly. Fold in thawed Cool Whip until well combined. Dough will be thick and sticky.
  • Using a small cookie scoop (about 1.5 tablespoon scoop) drop the dough balls into a bowl of powdered sugar, and roll to coat. Place the dough balls onto the prepared cookie sheet about two inches apart.
  • Bake for 10- 12 minutes or until slightly set and tops are cracked. Cool on pan for 5 minutes then transfer to wire racks to cool.
