Kosher salt and freshly ground black pepper
1 pound vegetable penne pasta
4 boneless skinless chicken breasts
5 tablespoons olive oil
3 cloves garlic, finely chopped
1 large shallot, finely chopped
1/2 cup freshly squeezed lemon juice
1 1/2 cups trimmed and sliced sugar snap peas
One 10-ounce bag frozen peas
3 cups baby spinach
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley, plus additional leaves for serving

Steps:

  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.
  • Sprinkle the chicken with salt and pepper. Add 2 tablespoons olive oil to a large pan over medium-high heat. Cook the chicken until the internal temperature reaches 160 degrees F, about 5 minutes per side. Remove the chicken and slice it into strips.
  • Add 1 tablespoon olive oil to the pan. Add the garlic and shallot and sprinkle with salt and pepper. Cook until fragrant, 1 minute. Add the lemon juice and sugar snap peas and cook, 2 minutes. Add the reserved pasta water and the frozen peas. Cook until the peas are just cooked through, 2 minutes more.
  • Add the cooked pasta, spinach, sliced chicken, chopped basil, chopped parsley and the remaining 2 tablespoons olive oil. Toss all the ingredients together to coat, season with additional salt and pepper and garnish with parsley leaves. Serve immediately.

8 ounces bow-tie pasta
¼ cup olive oil, divided
1 pound skinless, boneless chicken breast halves, cut into bite-size pieces
2 zucchini, cut into matchsticks
2 yellow squashes, cut into matchsticks
1 onion, chopped
1 red bell pepper, cut into 1/4-inch dice
4 cloves garlic, minced
2 ½ cups low-sodium chicken broth
3 tablespoons cornstarch
5 tablespoons lemon juice
½ teaspoon salt
½ teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Saute chicken in hot oil until cook through, about 5 minutes. Transfer chicken to a plate.
  • Heat remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Saute zucchini, yellow squash, onion, red bell pepper, and garlic in hot oil until slightly tender but still crisp, 5 to 10 minutes. Stir chicken into vegetable mixture.

2 tablespoons plus 2/3 cup canola oil or vegetable oil
3/4 pound skinless boneless chicken breast halves
12 ounces lemon-pepper fettuccine or regular fettuccine
2 1/2 cups snow peas (about 5 ounces), cut into matchstick-size strips
3/4 cup pine nuts, toasted
3/4 cup chopped fresh Italian parsley
3 tablespoons fresh lemon juice
2 1/2 tablespoons Dijon mustard

Steps:

  • Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add chicken and sauté until cooked through, about 5 minutes per side. Cool. Cut chicken crosswise into 1/4-inch-thick strips.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well; transfer to large bowl. Add 1 tablespoon oil; toss to coat. Add chicken, snow peas, pine nuts and parsley; toss to incorporate all ingredients.
  • Whisk lemon juice and mustard in medium bowl. Add remaining 3/4 cup oil in thin stream, whisking constantly. Season to taste with salt and pepper. Toss pasta with enough dressing to coat. (Can be made 3 hours ahead. Cover and refrigerate. Toss before serving.)

3 small bell peppers, sliced

Steps:

  • Mix lemon pepper, thyme, parsley, rosemary, Cajun seasoning, and black pepper in a small bowl.
  • Rub olive oil over chicken tenders.
  • Arrange chicken tenders in a large skillet over medium heat; season with half the seasoning mixture. Cook chicken until halfway cooked, about 5 minutes. Flip and season the other sides with the remaining seasoning mixture; cook until chicken is no longer pink in the center and juices run clear, about 5 more minutes. Remove cooked chicken from skillet.

1 cup olive oil plus 3 tbsp,
divided, plus olive oil for brushing
1 lb boneless, skinless chicken breasts

Cooking Spray
2 red bell peppers, stemmed, seeded and halved
2 yellow bell peppers, stemmed, seeded and halved
1 lb pasta (I prefer Fusilli with
this dish, but any pasta will work)
1 onion, chopped
5 cloves garlic, chopped (or 1 tbsp jar chopped garlic)
1 shallot, chopped
1/2 cup dry white wine
1/4 cup parsley, chopped
2 tbsp basil, julienne
1/2 cup black olives, chopped
1 cup fresh goat cheese (such as Montrachet) crumbled
1/2 cup grated Pecorino Romano cheese (or Parmesan)

Steps:

  • In a bowl whisk together 3/4 cup lemon juice and 1/2 cup olive oil. Season chicken on both sides with salt and pepper. Place chicken in a zip-top plastic bag and pour in lemon juice-olive oil marinade. Marinate for 1 hour, turning bag every 15 minutes. In same bowl combine remaining lemon juice and 1/2 cup olive oil to make a dressing, season with salt and pepper and refrigerate. Spray grill racks well with cooking spray and preheat grill to medium-high heat. Remove chicken from marinade, shaking off excess; discard marinade. Brush chicken and peppers well with olive oil and grill until well browned and cooked through. Place peppers in a zip-top plastic bag until cool enough to handle; remove skins and julienne. Remove chicken to a cutting board and cut into strips. Cook pasta in a large pot of boiling, salted water until al dente; drain. Rinse under cold running water until chilled. Toss with a touch of olive oil to prevent sticking and refrigerate. Meanwhile, heat 3 tbsp olive oil in a large skillet over medium-high heat. Add onion, garlic and shallot and cook until garlic is just beginning to brown. Add wine and reduce until about a tablespoon or so is left in the pan. Add parsley, basil and olives. Season with salt and pepper and remove from heat. Add to dressing, and combine well. Remove chilled pasta from refrigerator. Add chicken, peppers and dressing. Toss well to coat. Add goat cheese and Romano, toss well to coat and serve immediately.

1 1/2 Tbsp olive oil

1 1/2 Tbsp butter
1 Tbsp minced garlic
1 (14.5 oz) can low-sodium chicken broth
1 3/4 cups water
10 oz penne pasta
1 lb thin stalks asparagus, (tough ends trimmed, remaining diced into 1 1/2-inch pieces)
4 oz Neufchatel cheese ((1/3 less fat cream cheese), diced into eight pieces)
1/2 cup finely shredded parmesan cheese
2 tsp lemon zest
2 Tbsp fresh lemon juice
Chopped fresh parsley for garnish ((optional))

Steps:

  • Heat olive oil in a 12-inch saute pan over medium-high heat. .
  • Add chicken, season with salt and pepper to taste and cook until golden brown on bottom, about 4 minutes then rotate and cook until cooked through, about 4 minutes longer. Transfer to a sheet of foil and wrap to keep warm, set aside
  • Melt butter in now empty skillet, add garlic and saute 20 seconds then and broth and water, while stirring to loosen any browned bites from bottom of pan.
  • Season with salt and pepper to taste and bring to a boil, then add pasta. Cover and allow to boil until fairly tender, stirring occasionally, about 8 - 9 minutes.

  • Add in Neufchatel cheese, parmesan cheese, lemon juice and lemon zest and stir until melted. Stir in chicken.
  • Remove from heat, cover and let rest a few minutes if desired to allow sauce to thicken slightly and soak into pasta. Sprinkle with parsley if desired, serve warm.

Number Of Ingredients 11

1 lb grilled chicken breasts (, sliced into strips*)
1 lb dry linguine (, fettucine or spaghetti)
Salt and freshly ground black pepper
1 cup reserved pasta water
6 oz fresh baby spinach (, steamed just until beginning to wilt)
2 Tbsp extra virgin olive oil
3 garlic cloves**, (minced)
1 1/2 tsp lemon zest
2 Tbsp lemon juice
1 1/2 cups part skim ricotta
1/2 cup finely shredded parmesan (, plus more for serving)

Steps:

  • Cook pasta in salted water according to directions listed on package, reserve 1 cup pasta water before draining pasta.
  • Drain water (reserve 1 cup) and return pasta to pot. Set pot over medium-low heat, add olive oil and saute garlic 1 minute, then add lemon zest, lemon juice, ricotta, 1/2 cup hot reserved pasta water and parmesan and toss to evenly coat.
  • Add in more pasta water as desired to thin and season with salt and pepper to taste, cook and toss, about 2 minutes, until ricotta is heated through. Toss in spinach and grilled chicken. Serve warm topped with more parmesan if desired.

This is one of my favorite pasta dishes. I don't make pasta very often, but whe, I do, I load it up with veggies to cut down on the guilt. I never use frozen veggies for this dish because I find they get mushy during the cooking process. It seems like a lot of ingredients, but it really is quite easy.

1 large boneless skinless chicken breast, cut in medallions
1/2 lemon, juice of
1/2 teaspoon oregano
salt
pepper
1 small shallot, diced
1 large garlic clove, minced
1/2 tablespoon olive oil
1/4 cup white wine
1/2 lemon, juice of, a
1 tablespoon butter
1 tablespoon flour
1/2 cup chicken broth
2 roma tomatoes, diced
1/2 cup cooked broccoli
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh basil leaves
1/3 lb pasta, prepared (I like farfalle)

Steps:

  • Marinade chicken in olive oil, lemon juice, oregano, salt and pepper for 1 hour.
  • In a large skillet, sauté chicken in olive oil until tender, but cooked, about 4 minutes on each side.
  • Remove chicken from skillet and set aside.
  • In the same pan, add shallot and garlic, and sauté until shallot is translucent.
  • Add flour and butter to create the roux and cook for 2 minutes, until flour is cooked.
  • Add wine and chicken broth.
  • Allow to bubble and reduce for 10 minutes.
  • Add lemon juice and veggies, and return the chicken back to the pan and cook for a few minutes.
  • Add pasta to the pan and toss with parmesan cheese and basil leaves.

From a tin of soup - I love tarragon chicken - my kids don't. This way we both enjoy our mid week supper. I seldom have wine - so use water or milk. And I like to use fresh tarragon - simply because I have it, not because I'm snobbish about such things! Serve with vegetables.

150 g pasta, shapes
30 ml vegetable oil
2 onions, sliced
4 chicken fillets, sliced
10 ml Dijon mustard
15 ml lemon juice
150 ml white wine
5 ml dried tarragon
295 g condensed cream of chicken soup

Steps:

  • Cook pasta as pack instructions. Drain.
  • Stir-fry onions until soft. Add chicken and stir-fry for 10 minutes.
  • Stir in remaining ingredients. Simmer for 10 minutes.
  • Stir in pasta and serve.

2 cooked boneless, skinless chicken breasts (sliced into 1 inch dice)
2 zucchini sliced
2 garlic cloves minced
2 tbsp capers
6 tbsp olive oil
1 lemon (rind finely grated then juiced)
grated parmigiano-reggio cheese

Steps:

  • Cook pasta until al dente, then set aside Heat the olive oil over medium heat and saute the garlic. Add the sliced zucchini and saute until slightly tender. Add all the remaining ingrediants into a large serving bowl. Add pasta and toss. Sprinkle with grated cheese and serve immediately

1/2 lb. thin spaghetti, uncooked
1 tsp. zest and 1/4 cup juice from 2 lemons
1/4 cup water
1 Tbsp. WYLER'S Instant Bouillon Chicken Flavored Granules
5 cloves garlic, minced
4 small boneless skinless chicken breasts (1 lb.)
2 Tbsp. KRAFT Grated Parmesan Cheese
2 Tbsp. chopped fresh parsley

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, combine lemon zest, lemon juice, water, bouillon and garlic. Cook chicken in large nonstick skillet on medium heat 3 to 4 min. on each side or until evenly browned on both sides. Stir lemon juice mixture; pour over chicken. Bring to boil; simmer on medium-low heat 5 to 6 min. or until chicken is done (165ºF).
  • Drain spaghetti; place on platter. Top with chicken and sauce; sprinkle with cheese and parsley.
