I have never been a huge fan of lemon....until now. These are always a favorite at the never ending potluck going on in the emergency room I work in. I have been wanting to post these for the last year. I hope you enjoy them too.

¾ cup all-purpose flour
¾ cup white sugar
½ cup unsalted butter, softened
½ teaspoon sea salt
3 eggs
2 tablespoons lemon juice
1 tablespoon lemon zest, plus more for icing
1 cup confectioners' sugar
¼ cup lemon juice
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Beat flour, white sugar, butter, and sea salt together in a bowl using an electric mixer until well mixed. Whisk eggs, 2 tablespoons lemon juice, and 1 tablespoon lemon zest together in a separate bowl; mix into flour mixture and beat on medium speed until smooth, about 3 minutes. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 23 to 25 minutes. Cool until bottom of dish is warm to the touch.
  • Whisk confectioners' sugar, 1/4 cup lemon juice, vanilla extract, and lemon zest (to taste) together in a bowl until smooth; spread over brownies.

One 18.2-ounce box brownie mix, such as Duncan Hines
1/3 cup vegetable oil
1 egg
8 ounces mascarpone cheese, at room temperature
2 tablespoons sugar
2 teaspoons lemon zest (from about 2 lemons)

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square glass baking dish with nonstick cooking spray and line with a strip of parchment paper.
  • Using a rubber spatula, mix together the brownie mix, vegetable oil, egg and 1/3 cup water in a medium bowl until just combined. In a separate medium bowl, whisk together the mascarpone, sugar and lemon zest. Pour half the brownie batter in the bottom of the prepared dish and spread evenly. Dollop half of the cheesecake mixture on top and swirl in. Continue with the remaining brownie batter and cheesecake mix.
  • Bake until the brownie just barely jiggles and only a few crumbs come out on a toothpick inserted in the center, 55 minutes to 1 hour. Cool completely before refrigerating. Serve chilled.

1 (3 ounce) package lemon gelatin
1/2 cup cooking oil
3 eggs
1 cup icing sugar

  • Grease and flour a 13" X 9" pan.
  • Preheat oven to 325°F Beat together the dry cake mix, dry Jello powder, oil, and eggs.
  • Pour into the prepared pan.

  • Brownies:.
  • Preheat oven to 350 degrees and line a 9x13 baking pan with parchment paper.
  • Using a large bowl, whisk together the flour and baking powder.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.

1 (18 ounce) box of duncan hines moist deluxe lemon supreme cake mix
1 cup chunky applesauce (I use Mott's)
1 extra large egg
1 lemon, juice and zest of
2 (16 ounce) boxes of softened cream cheese
2 extra large eggs
1 cup powdered sugar
1 teaspoon lemon extract or 1 teaspoon lemon flavoring

Steps:

  • Preheat oven to 350°.
  • Mix 1st layer ingredients and pour into a greased or sprayed 9x13 cake pan and set aside.
  • Next, mix 2nd layer ingredients and spoon gently over the 1st layer until its covered (this layer can be piped on using a icing bag, I find its easier than spreading).
  • Last, using a butter knife, cut into the layers as if you were swirling it to mix it, so that some of the 2nd layer goes close to the bottom of the pan. (I make several "S" shaped strokes).
  • Bake Brownies for 35 minutes and turn off the oven, but leave Brownies in the oven for 10 minutes more.
  • Remove from the oven and let Brownies cool completely!
  • Slice and enjoy.
  • These Brownies can be refrigerated for up to a week.
  • They are delicious cold and taste like Lemon Cheesecake!

THE "BROWNIE" BATER
3/4 c all purpose flour
3/4 c granulated sugar
1/4 tsp salt
1 stick unsalted butter, softened
2 large eggs
2 Tbsp lemon zest
2 Tbsp lemon juice
TART LEMON GLAZE
1 c powdered sugar
4 Tbsp lemon juice
8 tsp lemon zest

Steps:

  • 1. Preheat oven to 350 degrees. Grease/Spray an 8 x 8 inch baking dish with butter/cooking spray and set aside.
  • 2. In the bowl of an electric mixer fitted with the paddle attachment, beat the flour, sugar, salt and softened butter until combined.
  • 3. In a separate bowl, whisk together the eggs, lemon zest and lemon juice until combined. Pour into the flour mixture and beat at medium speed until smooth and creamy, about 2 minutes.
  • 4. Pour into baking dish and bake for 23-25 minutes or until it is just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing. Do not over-bake or the bars will be dry.
  • 5. When the brownies are cooled completely, make the glaze. Sift the powdered sugar, add lemon zest and lemon juice and whisk together all three ingredients. Spread 1/2 the glaze over the brownies with a rubber spatula. Let the glaze set. Spread the remaining glaze over the bars and let it set.
  • 6. Cut into bars and serve.

6 tbsp butter
1 1/2 (4 oz) bars white chocolate, cut into 1/2 inch squares 1 1/2 cups
1/2 cup sugar
2 large eggs
2 tbsp fresh lemon juice
1 tsp lemon zest
1/4 tsp salt
3/4 cup flour
Icing
1/2 (4 oz) bar white chocolate
2 tsp milk

Steps:

  • 1. For brownies: preheat oven to 350F. Coat an 8x8 inch baking pan with non-stick spray. In a medium microwave safe bowl combine butter adn 1 cup of the white chocolate squares. Microwave on 50% power 1 minute or until butter is nearly melted; stir until smooth. 2. In a mixing bowl and using an electric hand mixer, beat sugar and eggs on medioum speed until creamy. Beat in lemon juice, lemon zest and salt until mixed. Add flour, beat just until combined. Stir in remaining 1/2 cup white chocolate squares. Pour into pan. 3. Bake 22 to 25 minutes or until a wooden toothpick inserted into the center comes out clean. Remove pan from oven and let cool on a wire rack. 4. For the icing: Meanwhile, break 1/2 white chocolate bar into a small microwave safe bowl; add milk. Microwave on HIGH 15 seconds or just until chocolate can be stirred smooth. Drizzle over brownies. Let cool completely. Slice into 16 squares.

3 -4 tablespoons lemon juice

Steps:

  • Brownies: Combine the flour, sugar and salt in a large bowl. Mix in the softened butter.
  • In another bowl whisk the eggs with the lemon juice and zest. Add to the larger bowl and mix well.
  • Pour into greased 8X8 brownie pan. Bake at 350 for 25 minutes or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing. Do not overbake, or the bars will be dry.
  • Remove and let cool, then glaze.
  • Glaze: Stir all glaze ingredients. Spread 1/2 the glaze over the brownies with a rubber spatula. Let glaze set. Spread the remaining glaze over the bars, and let it set. This glaze does not harden like most. Cut into bars, and serve.
  • You can double the recipe and bake in a 9X13 pan for 30 minutes.
