LEMON AND THYME LAMB CHOPS
Drag that grill out of storage for spring grilling! Make extra marinade to use on grilled vegetables. Serve with a mint sauce and warmed flatbread.

Steps:
- Stir together olive oil, lemon juice, and thyme in a small bowl. Season with salt and pepper to taste. Place lamb chops in a shallow dish, and brush with the olive oil mixture. Marinate in the refrigerator for 1 hour.
- Preheat grill for high heat.
- Lightly oil grill grate. Place lamb chops on grill, and discard marinade. Cook for 10 minutes, turning once, or to desired doneness.

MARINATED LEMON, THYME AND GARLIC LAMB CHOPS
Made this for dinner last night and it was awesome! I used shoulder lamb chops, but any cut will do. Came out very tender and moist on the barbecue grill. This same recipe can also be used to marinate chicken or pork. It is delicious!

Steps:
- Combine olive oil, lemon juice, thyme and garlic in a shallow dish.
- Season with salt and pepper to taste, place chops in and turn over once to coat the meat.
- Cover and marinate in the refrigerator for at least one hour or up to four hours.
- Cook over high heat on barbecue grill to desired doneness.
