FRIED CALAMARI WITH FRIED LEMONS AND LEMON AIOLI



Fried Calamari with Fried Lemons and Lemon Aioli image

Number Of Ingredients 13

1 pound calamari, bodies sliced into 1/2-inch rings and tentacles cut in half
1 1/2 cups buttermilk
1/2 cup mayonnaise
2 teaspoons Dijon mustard
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
Neutral cooking oil, for frying
1 1/2 cups all-purpose flour
3 teaspoons paprika
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 lemons, sliced thin (about 15 slices), plus lemon zest for garnish
1 cup fresh parsley leaves, plus some chopped, for garnish

Steps:

  • For calamari: Soak the calamari pieces in the buttermilk in a bowl for at least 1 hour and up to 4 hours in the refrigerator.
  • For the lemon aioli: Add the mayonnaise, Dijon mustard, lemon zest and juice, salt and pepper to a medium bowl. Stir to combine and adjust the seasoning as needed. Set aside until ready to serve.
  • Preheat a deep-fryer or several inches of oil in a Dutch oven to 375 degrees F.
  • For the flour seasoning: Add the flour, paprika, salt and pepper to a large bowl. Drain the calamari and put into the flour mixture, making sure each piece gets coated with the flour. Dump all the contents into a colander and shake off any excess flour. Line a dish with paper towels and set aside.
  • In batches, add the lemon slices and calamari to the preheated oil and fry, mixing with a slotted spoon to prevent the calamari from clumping together, until golden brown, 2 to 3 minutes.
  • Right before you take the calamari and lemon out of the fryer, toss in the parsley leaves carefully; this will cook very fast and can splatter, so stand back. Take all the contents out of the fryer to the lined dish and season with salt.
  • Serve with the aioli, garnished with the zest and chopped parsley.

1 tablespoon olive oil
1 small white onion, chopped finely
2 garlic cloves, crushed
4 spring onions, chopped
4 cups of cooked calrose rice
1/2 cup grated parmesan cheese
1 tablespoon finely grated fresh lemon rind
1 egg, beaten lightly
1 tablespoon mild English mustard
6 medium calamari, hoods (960g)
1/3 cup olive oil
1 garlic clove, crushed
2 tablespoons lemon juice
2 teaspoons mild English mustard
1/2 teaspoon sugar

Steps:

  • Heat oil in pan and cook white onion and garlic, stirring until onion is soft.
  • Add spring onion, cook stirring until just soft.
  • Combine rice, onion mixture, cheese, rind, egg and mustard in a large bowl.
  • (Can be made ahead to this stage. Cover refrigerate overnight.) Spoon mixture into calamari hoods, securing end with toothpicks.
  • Cook calamari on oiled barbecue, uncovered until browned all over and tender.
  • Serve drizzled with Lemon and Mustard Dressing.
  • Lemon and Mustard Dressing: Combine all ingredients in a jar and shake well.

We love the combination of tender sauteed squid and crispy toasted vermicelli in this quick dish.

Kosher salt and freshly ground pepper
1 cup broken vermicelli
2 tablespoons extra-virgin olive oil
1 small red onion, finely chopped
1/2 jalapeno chile, seeded and minced
2 cloves garlic, thinly sliced
1/2 pound small calamari, cleaned, cut into 1/2-inch-thick rings, and tentacles halved lengthwise
2 to 3 tablespoons ghee
2 teaspoons yellow mustard seeds, toasted and ground
Juice of 1/2 lemon, plus lemon wedges for serving
1 cup fresh flat-leaf parsley, roughly chopped
1/2 cup fresh mint, roughly chopped

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, heat a large saute pan over medium and toast vermicelli until light brown and fragrant, about 3 minutes. Transfer vermicelli from pan to the boiling water and cook until al dente, 3 to 4 minutes. Drain and set aside.
  • Return saute pan to stovetop. Heat oil over medium. Add onion, jalapeno, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until onion is softened, 3 to 5 minutes.
  • Increase heat to medium-high and add calamari, ghee, and ground mustard seeds. Cook, stirring occasionally, until calamari is white and tender, 3 to 4 minutes.
  • Reduce heat to low and add lemon juice and cooked vermicelli to the pan. Season with salt and pepper and stir to combine. Add parsley and mint, then serve with lemon wedges.
