Leftover Turkey and Mashed Potato Pie image

Throwing together leftover turkey and mashed potatoes after Thanksgiving turned out to be one of my best kitchen creations!

Number Of Ingredients 10

3 tablespoons butter
ΒΌ medium white onion, chopped
5 medium carrots, finely chopped
3 stalks celery, finely chopped
salt and ground black pepper to taste
2 cups leftover shredded turkey
2 cups leftover mashed potatoes
1 cup heavy cream
1 cup leftover turkey gravy
5 medium (blank)s biscuits

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a large saucepan over medium heat. Add onion and cook until translucent, 5 to 7 minutes. Add carrots and celery; saute until carrots are just beginning to soften, about 3 minutes. Season with salt and pepper.
  • Lower heat and add turkey; cook and stir for 5 minutes. Add mashed potatoes, cream, and gravy; cook and stir until heated through, about 5 minutes. Pour into a 9-inch pie dish and top with biscuits.
  • Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven and let stand for 5 to 10 minutes before serving.

I always make too much mash, and then struggle to make something interesting with the leftovers (it usually gets turned into soup). Just wanted to share this with people like me! Very yummy, very easy - a good lunch or brunch or, well anytime really. The quantities are very rough - this is about what I used. Just use what you got. Bacon would make this dish supreme...

Number Of Ingredients 7

2 cups leftover mashed potatoes
2 tablespoons yoghurt (my mash had gone a bit hard overnight, milk would work just as well)
3 eggs
1/2 cup grated cheddar cheese
salt
dried thyme, to taste
2 tablespoons crushed garlic (Lots! I used minced from a jar, about 2 tbsp! I like garlic)

Steps:

  • Beat all ingredients together.
  • Heat some oil in a skillet - aim for one which will allow your potato mix to fill it about 1-2" deep. Tip your mash mix in and level it out.
  • Cook on medium heat until you can see from lifting the sides a bit that it's fairly brown underneath.
  • Stick your skillet under a hot grill until the top of your, hmm, let's call it a pie, is lightly browned.
  • Loosen the pie in the skillet, and tip it onto a plate. Eat! Goes nicely with some cherry tomatoes on the side.
