2 cups potato chips, coarsely crushed (or use Ritz cracker crumbs)
2 (7 ounce) cans albacore tuna in water, drained (I use StarKist with Omega 3)
1/2 cup frozen petite sweet peas (or use green olives, sliced)
2 tablespoons minced onions
1 (4 ounce) jar pimientos, sliced
1 (10 3/4 ounce) can condensed cream of celery soup (I use reduced fat)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F Lightly grease a 2 quart casserole dish. Spread 1 cup crushed potato chips (or crackers) evenly on bottom of casserole dish.
  • Next, layer 1 can of tuna, ½ of peas, ½ of onions, red pimientos and ½ of soup. Sprinkle cheddad cheese on top of this.
  • Repeat layering with tuna, peas, onion, pimientos and soup. Finish with a layer of chips, and top shredded cheese.
  • Bake in preheated oven for 20 to 25 min, or until bubbly and golden brown.

This is my kids' favorite tuna casserole, which is very simple to make and very easy on the budget. NOTE: I also like to add a cup of frozen peas on top of the tuna layer...(That is optional)

16 ounces medium noodles (I use Amish Noodles, that I find in the pasta section of my grocer.)
2 (6 ounce) cans albacore tuna in water
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup mayonnaise (I use Hellman's)
10 3/4 ounces whole milk (1 soup can full)
8 ounces shredded cheddar cheese
2 cups Ritz crackers, smashed
3 tablespoons butter or 3 tablespoons margarine
salt & pepper

Steps:

  • Cook noodles according to package directions, undercooking just slightly. Drain.
  • In a 13 x 9 inch greased casserole dish, arrange cooked noodles evenly on the bottom.
  • Add both cans of tuna with juice from can, evenly on top of noodles.
  • Salt and pepper to taste.
  • Mix both cans of soup and the mayonnaise with 1 10.7 ounce can full of milk and stir until smooth.
  • Add soup mixture evenly on top of casserole.
  • Add shredded cheddar cheese evenly on top.
  • Add smashed Ritz crackers evenly on top. Dot the top with the butter or margarine.
  • Bake, uncovered, in a 350 degree (preheated) oven for 35 minutes, until top is slightly golden brown.
  • Let sit for 5 minutes.

3 c uncooked wide egg noodles
2 can(s) (6 1/2 oz) tuna, drained,flaked
1 can(s) (8oz) sliced water chestnuts, drained
1/2 c celery
1/3 c chopped green onions
1/2 c mayonnaise
1/2 c dairy sour cream
1/2 tsp thyme leaves
1/4 tsp salt
1 medium sliced zucchini
1 c monterey jack cheese
IF DESIRED
3-4 slices fresh tomato

Steps:

  • 1. Cook noodles to desired doneness as directed on package. Drain and rinse with hot water. Heat oven to 350. Grease 2 quart casserole. In large bowl, combine noodles, tuna, water chestnuts, celery, onions, mayonnaise, sour cream, thyme, and salt.
  • 2. Spoon half of tuna mixture into prepared casserole; top with 1/2 cup sliced zucchini. Repeat layers. Arrange tomato slices on top of casserole; sprinkle with cheese. Bake for 30-40 minutes or until hot and bubbly.

1 can (10 3/4 ounces) condensed cream of celery soup
1 can (5 ounces) evaporated milk (2/3 cup)
1 can (6 ounces) tuna packed in water or 1 can (5 ounces) chunk chicken, drained
1 can (10 3/4 ounces) condensed chicken and rice soup
1/4-1/2 cup dry bread crumbs or crushed potato chips
