Since the whole family gathers at Mimi's for Christmas Eve and morning, this strata, from Mulberry Inn & Gardens (B&B) has become the favorite. It bakes nicely while presents are being opened. Remove from frig. when you get up to turn on the tree lights and flip the coffee pot on, about 30 minutes before baking.*** While the original recipe lists American cheese, we replace that with sliced cheddar for more flavor.

16 slices white bread, crust removed
16 slices deli ham, thin
8 slices American cheese
8 slices swiss cheese
3 cups milk
6 eggs, slightly beaten
1/2 teaspoon dry mustard
1/2 teaspoon onion salt
2 cups corn flakes, crushed
1/4 cup butter, melted

Steps:

  • In a 13x9" casserole, layer in the following order:.
  • 8 bread slices.
  • 8 ham slices.
  • 8 American cheese slices.
  • 8 bread slices.
  • 8 ham slices.
  • 8 Swiss cheese slices.
  • Mix eggs, milk, and seasonings.
  • Pour over layers.
  • Combine crushed Corn Flakes and butter.
  • Sprinkle over top.
  • Refrigerate, covered, overnight.
  • Bake at 375 degrees F. for 30-35 minutes, uncovered, or until puffed.
  • Serve immediately.
  • Preparation time does not include overnight refrigeration.

This is yummy comfort food and a great way to use up leftover ham. I don't know where this recipe came from, it's one that my mother made a lot when I was a child.

18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

Steps:

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.
  • Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
  • Top with 6 slices of bread.
  • Combine eggs, milk and seasonings.
  • Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
  • Bake at 300° for 1 1/2 hours.
  • Top each cheese stack with a tomato slice during the last 20 minutes in the oven.

This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

1 tablespoon unsalted butter, room temperature
10 large eggs
2 1/2 cups whole milk
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
1 loaf bread, Pullman or sandwich style, cut into 1-inch pieces
1 pound boiled or baked deli ham, chopped
5 scallions, chopped (1/2 cup)
8 ounces sharp cheddar, shredded

Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
  • Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

12 slices white bread, crusts removed
1 pound fully cooked ham, diced
2 cups shredded cheddar cheese
6 large eggs
3 cups whole milk
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter, melted
1 cup crushed cornflakes

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

Number Of Ingredients 11

1 - 2 Tbsp bacon fat or oil
3 c good cooked ham, cubed into 1/2 - 1 inch pieces
1 large onion, chopped
10 - 12 Tbsp medium thickness - slices of french bread
butter softened, enough to butter both sides of bread
4 oz shredded, provolone cheese
8 oz shredded, cheddar cheese - i use sharp
11 large eggs, beaten
3 c milk
1 tsp each - kosher salt & pepper or to taste
1 tsp dried parsley

Steps:

  • 1. In a medium skillet ( I used my iron skillet ) over medium heat, brown onion & ham in either bacon fat ( what I used ) or oil. Set aside
  • 2. Butter a 9 x 13 baking dish. Set Aside. I then sliced a loaf of french bread, about 1 1/2 inch thickness. Butter both sides of bread and lay in bottom of dish to cover bottom, without overlapping. You may have to cut one in half to fit it in, depending how big your slices are. Layer half the onion and ham mixture evenly over the buttered bread.
  • 3. Sprinkle half the cheeses over the ham. Then, layer with another row of bread. Sprinkle the other half of ham & onions.
  • 4. In a large bowl, beat eggs with milk, salt, pepper and parsley. Pour this evenly over the casserole, making sure to cover all of he bread. Sprinkle the top with remaining cheese and cover. Refrigerate over night.
  • 5. Bake in a 350 degree oven covered for 30 minutes.
  • 6. Remove cover and bake an additional 30 minutes. The last 5 minutes of baking, I broil so to get a golden color on the cheese. Let sit for 5 minutes and cut...delicious!
