Number Of Ingredients 14

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups butter, room temperature
1 1/2 cups granulated sugar
1 1/2 cups light-brown sugar, packed
3 eggs
1 tablespoon vanilla extract
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Steps:

  • Heat oven to 350°F.
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
  • For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
  • Bake in 350°F oven 17 to 20 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool.

3 c self rising flour (you can skip baking soda & powder)
1 Tbsp cinnamon
3 stick butter, room temperature
1 1/2 c sugar
1 1/2 c light brown sugar, packed
3 eggs
1 Tbsp vanilla extract
3 c semisweet chocolate chips
3 c old-fashioned rolled oats
2 c sweetened flake coconut
2 c chopped pecans (8 ounces)

Steps:

  • 1. Preheat oven to 350 F. Mix flour, cinnamon and salt in bowl

Laura Bush's cowboy cookies, a classic chocolate chip cookie that's been beefed up with oats, pecans, coconut and cinnamon, beat Tipper Gore's ginger snaps by a mile. Here is an adaptation of that winning recipe.

Steps:

  • Preheat oven to 350ºF. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside. In a second bowl, beat the butter on medium speed until smooth. Add the sugar and brown sugar and beat for another 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla. Stir in the flour mixture, blending until just combined. Add the chips, oats, coconut, and pecans and stir until fully incorporated. Drop by rounded tablespoon onto an un-greased baking sheet, making sure to allow plenty of room between cookies. Bake for 10-12 minutes or until the edges are set and golden brown. Allow the cookies to cool on the pan for 1-2 minutes before placing on a cooling rack. Enjoy!
