LAST MINUTE FRUIT SALAD
I had to come up with a last minute salad for a church function and had no time to get to the store to buy ingredients. Luckily, I had lots of fruit in the house and came up with this quick yet colorful and tasty salad. I feel almost silly sharing it, as it is really very easy, but I did get a recipe request and left with a nearly empty bowl. Cook time is actually chilling time.

Steps:
- If you have an egg slicer,us this to slice your berries thinly, otherwise, use a knife to slice into very thin slices.
- Wash kiwfruit and pat dry.
- Using a very sharp knife, slice kiwi thinly- leaving the skin ON.
- Lay each slice of kiwi flat and use the knife point to cut a slit in the ring of skin left on each slice.
- The remaining skin should easily peel off (if it is stubborn, just trace along the outer edge of the slice with your knife)- you'll end up with nice even slices of kiwi.
- In a large decorative serving bowl,gently combine berries, kiwi slices, mandarin oranges, and pineapple chunks- don't stir too hard or you'll crush the fruit.
- Chop cherries and add to the bowl.
- Add just a couple of Tablespoons of each of the the reserved fruit canning juices to taste- not too much, just enough to moisten.
- Add the sugar and gently stir to combine.
- Cover& Chill at least 30 minutes.
- Can be made up to 3 hours in advance- but don't make too early or the fruit will get soggy.

PERFECT SUMMER FRUIT SALAD
The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

Steps:
- Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
- Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.
