The next time you're in need of an elegant and simple meal, look no further than your air fryer. We used it to cook a rack of lamb, first coating it with a Parmesan crust to produce a crisp, golden outer layer that helps keep the lamb juicy and flavorful. Cooking a whole rack also helps the meat stay tender as there's less chance of overcooking, plus it makes for a beautiful presentation.

One 8-rib rack of lamb, frenched (1 1/4 to 1 1/2 pounds)
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
1/3 cup panko breadcrumbs
1 large clove garlic, grated
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
Nonstick cooking spray, for the air-fryer basket and lamb
6 large cloves garlic (unpeeled)
2 tablespoons olive oil
1/2 cup mayonnaise
1 teaspoon lemon zest plus 2 teaspoons fresh lemon juice
1 1/2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • For the rack of lamb: Allow the rack of lamb to sit at room temperature for 30 minutes before cooking.
  • Rub the rack of lamb on both sides with 1 tablespoon of the olive oil, then season with 2 teaspoons salt and several grinds of pepper. Set aside on a large plate.
  • Combine the Parmesan, panko, remaining 2 tablespoons olive oil, grated garlic, thyme and rosemary in a large shallow bowl or pie plate. Add the lamb and firmly press the Parmesan mixture onto the meat in an even layer.
  • For the aioli: Place the unpeeled garlic cloves on a piece of aluminum foil, then add the olive oil, a pinch of salt and several grinds of pepper. Fold the sides of the foil upwards and seal into a pouch.
  • Preheat a 6-quart air fryer to 375 degrees F, then spray the basket with cooking spray, Place the lamb, fat-side up, and the garlic pouch into the basket. Spray the top of the lamb with cooking spray. Air-fry the lamb until crust is crisp and deep golden brown and meat is desired doneness, about 18 minutes for medium rare, 20 minutes for medium and 22 minutes for medium-well. (The garlic can cook for the same time as the lamb.) Transfer the lamb to a cutting board, cover loosely with foil and allow to rest for 10 minutes.
  • Meanwhile, carefully open the foil packet. Squeeze out the tender cloves of garlic into a medium bowl and mash with the olive oil from the pouch until smooth. Mix in the mayonnaise, lemon zest and juice and Worcestershire to combine. Season with salt and pepper. Set aside.
  • Once the lamb has rested, slice between the bones into individual chops and serve warm with the aioli.

2 garlic cloves, smashed
1/2 small onion, thinly sliced
3/4 cup coarsely chopped fresh mint
3 tablespoons coarsely chopped fresh savory or thyme
3 tablespoons extra-virgin olive oil
Finely grated zest and juice of 2 medium lemons
1 teaspoon cumin seeds, toasted
1 (7- to 8-pound) leg of lamb, boned and trimmed of all fat (but not tied)
1 tablespoon vegetable oil
For aïoli
1 large garlic clove
1 teaspoon kosher salt
2 cups loosely packed fresh mint leaves
2 large egg yolks
1 1/4 cups canola oil
2 tablespoons fresh lemon juice
2 tablespoons warm water

Steps:

  • Marinate lamb:
  • Stir together garlic, onion, mint, savory, olive oil, lemon zest and juice, and cumin in a baking dish just large enough to hold lamb. Put lamb in dish and turn to coat, rubbing marinade into entire surface. Marinate lamb, covered and chilled, turning once or twice, at least 12 hours.
  • Make aïoli:
  • Mash garlic to a paste with kosher salt using a mortar and pestle (or mince and mash with a large heavy knife), then add 1 cup mint and pound to a paste (or mince and mash with knife). Transfer to a bowl and whisk in yolks, then add half of oil, 1 to 2 teaspoons at a time, whisking constantly. Whisk in lemon juice, then slowly add remaining oil, whisking. Season with salt and pepper and stir in warm water.
  • Working with several leaves at a time, stack remaining cup mint leaves, then roll up and thinly slice crosswise to make a chiffonade (thin strips). Stir mint into aïoli and chill until ready to use.
  • Roast lamb:
  • Preheat oven to 400°F.
  • Wipe all of marinade from lamb and discard. Pat lamb dry and season both sides generously with salt and pepper. Arrange lamb, boned side up, on a work surface and, beginning with a long side, roll up as tightly as possible and tie tightly with string.
  • Heat vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown lamb on all sides, about 8 minutes. Transfer to rack set in roasting pan and roast in middle of oven until an instant-read thermometer inserted into lamb reads an average of 140°F for medium-rare (test in several places, as different muscles cook at different speeds; temperatures should range from 120 to 160°F), 40 to 60 minutes. Let stand 15 to 20 minutes before slicing.
  • Serve lamb with aïoli.

LOIN OF LAMB SANDWICH WITH GARLIC AIOLI

1 14 ounce loin of lamb
4 cloves of garlic
8 ounces olive oil
I teaspoon of thyme
1 egg yolk
Salt and pepper
2 Brioche Buns

Steps:

  • In a pan over low heat, slowly simmer garlic in six ounces of olive oil until tender, to impart the taste of the garlic in the oil. This will take about one hour. Let cool, and remove garlic from the oil. In a small bowl, slowly whip the garlic infused oil and the egg yolk. Add salt and pepper to taste, set aside. This will create the aioli. Rub loin of lamb with garlic, thyme, salt and pepper and two ounces of oil and let the meat "marinate" for at least I hour, and most overnight. Once the rub has saturated the loin, grill loin in a heavy skillet on high heat to sear all sides. Make sure the loin is well browned on all sides. Transfer to a 350 degree oven for two to three minutes for medium rare, longer for more well done. Let the loin rest for three minutes before slicing it thinly and filling the Brioche bun. Top with one teaspoon of the aioli and wrap well for the picnic basket.

BOXTY WITH SEARED LAMB LOIN AND WHOLE-GRAIN MUSTARD AIOLI

8 Yukon Gold potatoes
2 to 3 tablespoons white wine vinegar
1 clove garlic, smashed

2 eggs
Olive oil, for frying
2 lamb loins

3/4 cup whole-grain mustard, plus more for brushing the lamb
Olive oil, for coating pan
3/4 cup mayonnaise
1 tablespoon chopped chives
1 tablespoon chopped parsley

Steps:

  • For the boxty pancakes: Preheat the oven to 200 degrees F. Grate 5 of the potatoes on the largest holes of a box grater. Toss with the vinegar and squeeze out the excess water between paper towels.
  • Cut the remaining 3 potatoes into 6 pieces each. Place them in a saucepan with the garlic and cover with water by about 1 inch, sprinkling generously with salt. Bring to a boil, reduce to a simmer and cook until the potatoes are fork tender, 10 to 12 minutes. Drain. While still hot, pass the potatoes through a food mill or mash with a potato masher.
  • Combine the grated potatoes with the mashed potatoes. Beat the eggs and add into the potatoes. Sprinkle with salt.
  • Coat a large saute or cast-iron pan with olive oil over medium-high heat. Make a 1 1/2-inch patty and cook until brown and crispy, 3 to 4 minutes per side. Eat the first pancake to make sure the potato mixture is seasoned perfectly. Season again, if needed.
  • Working in batches, make and cook all the pancakes, blotting on paper towels and seasoning with salt. Hold the pancakes on a sheet tray in the oven to keep warm until serving.
  • For the lamb loin with whole-grain mustard aioli: Sprinkle the lamb with salt and brush with whole-grain mustard. Coat a large saute pan with oil over medium-high heat. When the oil starts to shimmer, add the lamb and sear on all sides, being careful not to burn the brown bits on the bottom of the pan. Cook until a thermometer reads 135 degrees F when inserted into the thickest part of the loins. Transfer to a small sheet tray and tent with aluminum foil. Allow to rest at least 10 minutes.
  • Combine the mustard, mayonnaise, chives and parsley in a medium glass mixing bowl.
  • Thinly slice the lamb. Place a dollop of the aioli on top of the boxty, and top with a slice of lamb and another dollop of the aioli.

Steps:

  • Heat oil in small saucepan; deep-fry thyme briefly, only about 5 seconds til fragrant. Remove thyme from oila and drain on absorbent paper.
  • Prehead oven to moderate.
  • Cut potatoes into 1cm slices; heat 2 tablespoons of the reserved thyme oil in ovenproof/flameproof baking dish; cook potato slices in batches til lightly browned on both sides. Return all potatoes to baking dish; add lamb and roast, uncovered for about 15 minutes or unil cooked as desired.
  • Meanwhile, make aioli.
  • Boil, steam or microwave spinach til just wilted; drain. Heat remaining thyme oil with butter in small saucepan; cook mushrooms and garlic til softened. Cut each lamb rack into 4 cutlets; divide among serving plates with spinach, potato and mushrooms. Top with aioli, garnish with fried thyme and drizzle with vinegar.
  • Aioli: whisk mustard, vinegar, garlic and egg yolks in a small bowl til combined; gradually add oil in a thin, steady stream, whisking constantly, til aioli thickens. Whisk in lemon juice.

2 teaspoons minced garlic
1/4 cup finely diced red onion
1/2 cup crumbled feta cheese
Kosher salt and freshly cracked black pepper
1 tablespoon balsamic vinegar
1 tablespoon pomegranate molasses
1 tablespoon soy sauce
1 tablespoon canola oil
16 small Hawaiian sweet rolls or potato rolls
1/2 medium cucumber, peeled and sliced paper thin
Mint Aioli, recipe follows
Fresh mint leaves, for garnish
4 cloves garlic
1/4 teaspoon sea salt
2 egg yolks, organic if possible
1 teaspoon fresh lemon juice
1/2 teaspoon mustard powder
1/4 cup extra light, extra-virgin olive oil

Steps:

  • Preheat a grill to indirect heat, low setting, approximately 325 degrees F.
  • In a medium bowl, add the lamb, garlic, red onion and feta. Sprinkle with salt and pepper. Mix well with your hands. Form the mixture into 16 small patties (about 2 1/2 inches in diameter and 1 1/4-inch thick). Use your index finger to press a shallow dimple into the center of each patty. Cover and place in the refrigerator until ready to grill.
  • In a small bowl, combine the balsamic vinegar, pomegranate molasses and soy sauce.
  • Oil a paper towel with the canola oil and wipe down the grill grates several times to well coat with the oil. Immediately place the patties on the grill (dimple-side down) and cook for 8 minutes. Turn over, baste the tops with the balsamic mixture and cook for 4 to 6 minutes more (or to 130 degrees F for medium rare and 140 degrees F for medium).
  • Remove from the grill and place on the Hawaiian sweet rolls or potato rolls. Add 2 slices of cucumber and a teaspoon of the Mint Aioli. Serve garnished with mint leaves.
  • Mince the garlic, and then sprinkle the salt on top, and continue to mince and smash the salt into the garlic to form a paste. In a small bowl of a food processor fitted with the steel blade, blend the yolks, garlic paste, lemon juice and mustard powder. Slowly add the olive oil to the yolk mixture in a very slow steady stream until the mixture is emulsified. Add the fresh mint and pepper and pulse until incorporated. Refrigerate.

Preheat the oven to 450 degrees F.

Steps:

  • Coat a sheet pan with olive oil. Combine 1/8 cup of olive oil, garlic, sea salt, pepper and peaches in a shallow bowl. Coat each lamb pop the peach mixture, arrange them on the sheet pan and let marinate for 1 hour. Put the lamb into the oven and roast for about 8 to 12 minutes.

  • Combine the mayonnaise, zest, juice, anchovies and garlic in a food processor and process until smooth.   • For the lamb chops:
  • Combine the rosemary and salt in a food processor and process until combined.
  • Heat the grill to high.
  • Brush the chops on both sides with oil and season with a few teaspoons of the salt and freshly ground black pepper. Place on the grill and grill until golden brown and slightly charred, 3 to 4 minutes. Flip the chops over and continue grilling to medium-rare doneness, 2 to 3 minutes longer. LAMB KIDNEY TORTILLA WITH OREGANO AIOLI

2 lamb kidneys
4 cups milk
1 teaspoon Worcestershire
1 1/2 teaspoons dry mustard powder
1 teaspoon cayenne pepper
1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
Olive oil, as needed
1/2 cup thinly sliced white onion
6 medium russet potatoes, peeled and sliced very thin
10 large eggs
1 cup mayonnaise
1 cup fresh oregano, a little reserved for garnish
1/2 tablespoon smoked paprika
1 teaspoon sherry vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Cut the kidneys in half lengthwise and cover in a bowl with the milk and Worcestershire sauce. Add the mustard powder and cayenne. Let rest in the refrigerator overnight.
  • Preheat the oven or a pizza oven to 425 degrees F.
  • Sprinkle the flour in a bowl with salt and pepper. Remove the kidneys from the milk and dredge in the seasoned flour.
  • Add the butter to a 12-inch cast-iron pan over medium-high heat and let melt. Add the kidneys and sear for 3 to 5 minutes. Flip the kidneys, then transfer the pan to the oven to roast for another 5 minutes. Remove to a plate and let cool.
  • In the same cast-iron pan, heat 2 tablespoons oil. Add the onion and transfer to the oven to soften and begin roasting, about 5 minutes. Remove from the oven and let cool. Reserve the cast-iron pan for cooking more later.
  • Add the sliced potatoes to a baking sheet, then drizzle with 1/2 cup olive oil and sprinkle heavily with salt and pepper. Toss to combine, then add another tablespoon or two of olive oil if needed to make sure each potato is coated. Put the baking sheet in the oven to begin softening and roasting the potatoes, about 5 minutes. Remove from the oven and let cool.
  • Add the eggs to a very large bowl and whisk until beaten and thoroughly combined. Add the cooled kidneys, onions and potatoes to the eggs and gently toss to combine. Add 1/2 cup olive oil to the cast-iron pan and carefully pour in the egg mixture, spreading it in the pan to create an even layer. Transfer the pan to the oven, then cover with a lid (or baking sheet if you don't have a lid) and let cook until set, 20 to 25 minutes.
  • Remove the pan to the stovetop. Invert a cool baking sheet on top of the pan and flip the pan over so that the tortilla transfers onto the baking sheet. Slide the tortilla back into the pan. Put back in the oven and continue to cook, uncovered, until the tortilla is light golden on the underside, tucking the edges under to give it a nice round shape, about 5 more minutes.
  • For the oregano aioli: Mix the mayonnaise, oregano, smoked paprika and sherry vinegar in a bowl and season with salt and pepper.
  • Slice the tortilla into wedges or squares and garnish with the aioli and fresh oregano.

ROAST ILLABO LAMB WITH TOMATO, OLIVES AND AïOLI

1 kg (2 lbs) pink-eye (or baby red-skinned) potatoes, boiled in their skins in salted water for 20 minutes, peeled and quartered
18 large green olives
18 large black olives
Tomato Jam
15 vine-ripened tomatoes, cored
1 Spanish onion, peeled and finely diced
10 cloves garlic, crushed
2 large knobs ginger, peeled and chopped
400 ml (1 2/3 cups) olive oil
1 tablespoon fennel seeds, roasted and ground
1 tablespoon coriander seeds, roasted and ground
1 teaspoon cumin, roasted and ground
6 tablespoons palm sugar
4 tablespoons fish sauce
6 tablespoons red-wine vinegar
Aïoli
125 ml (1/2 cup) extra-virgin olive oil
125 ml (1/2 cup) olive oil
3 cloves garlic
1 teaspoon sea salt
3 egg yolks
juice of half a lemon
freshly ground pepper
Braised vegetables
1 large eggplant
olive oil
10 basil leaves
15 flat-leaf parsley leaves
100 ml (1/2 cup) extra-virgin olive oil
1 small onion, peeled and cut into 0.5 cm (1/4-inch) dice
3 cloves garlic, crushed
sea salt and freshly ground pepper
2 red capsicums (bell peppers), seeded and cut into 0.5 cm (1/4-inch) dice
3 anchovies, minced
2 vine-ripened tomatoes, blanched, peeled, seeded and cut into 0.5 cm (1/4-inch) dice
25 small capers, rinsed
lemon juice

Steps:

  • Preheat the oven to 180°C (350°F).
  • To make the Tomato Jam, place the tomatoes on a baking sheet in the preheated oven for 20 to 30 minutes. Put the tomatoes through a food mill. In a food processor or bar mix (blender) purée the onion, garlic and ginger with 100 ml (1/2 cup) of the olive oil. Add the ground fennel, coriander and cumin to the onion mix.
  • Place a heavy-based pot on the stove and pour in the remaining olive oil. Add the paste, and cook for 30 minutes over low heat or until the paste caramelises. Put in the palm sugar and allow to caramelise. Add the fish sauce and reduce slightly. Add the vinegar and cook for 1 minute, then the tomato juice. Stir, and cook slowly for 2 hours. You should be left with a thick, spicy and sweet jam with no liquid. To store, place in a sterilised jar, cover with a film of oil and refrigerate.
  • To make the Aïoli, first combine the olive oils. Crush the garlic and salt together in a mortar and pestle. Whisk in the egg yolks, add the lemon juice and continue whisking while adding the olive oils in a thin stream until the emulsion thickens. Taste and adjust the seasoning if necessary.
  • To make the Braised Vegetables, peel the eggplant and cut the skins into 0.5 cm (1/4-inch) cubes (reserve the flesh for another use). Pour the olive oil into a heavy-based saucepan. Add the eggplant skins and fry until golden brown. Remove, and add the basil and parsley. Fry until dark green and crisp. Remove and strain the oil, reserving it for another use. Pour the extra-virgin olive oil into the pan and heat. Put in the onion, garlic and sea salt, and cook until soft. Add the capsicums (bell peppers) and anchovies, and cook for a further 2 minutes. Add the tomatoes, herbs and capers, and return the eggplant to the pan. Add the lemon juice and taste for seasoning. Cook for 1 minute, then remove and set aside.
  • Preheat the oven to 200°C (400°F).
  • Trim any excess fat off the lamb legs, leaving the shank on. Rub all over with sea salt and olive oil, and place in a roasting pan in the preheated oven for 10 minutes. Turn the lamb and add the potatoes. Cook for a further 15 minutes. Turn off the oven, remove the potatoes and cover the lamb loosely with foil. Leave the oven door open, and rest the lamb for 15 minutes.
  • In a pot combine the braised vegetables with the tomato jam in a 3:1 ratio. Add the olives and potatoes. Heat through, but don't boil.
  • Remove the lamb from the oven. Divide the vegetables and potatoes between 6 large white plates. Carve the lamb and place on top of the vegetables. Spoon over the aïoli, and grind over some pepper. Serve immediately.

ROSEMARY LAMB KEBABS WITH TAPENADE-ROSEMARY AïOLI

6 small onions, each cut into 6 wedges
12 10- to 12-inch metal skewers or bamboo skewers, soaked in water 30 minutes
Tapenade-Rosemary Aioli

Steps:

  • Whisk wine, oil, rosemary and garlic to blend in 13 x 9 x 2-inch glass baking dish. Season with salt and pepper. Add lamb and toss to coat with marinade. Let stand at room temperature 2 hours or cover and refrigerate overnight.
  • Prepare barbecue (medium-high heat). Thread lamb alternately with onion wedges onto skewers. Grill lamb kebabs to desired doneness, turning frequently, about 12 minutes for medium-rare. Transfer kebabs to plates. Serve with Tapenade-Rosemary Aioli.
