1/4 onion, diced
Olive oil
2 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon dry mustard
1/8 teaspoon cayenne pepper
2 cloves garlic
1 pound ground beef (20/10)
1 pound ground lamb
3 tablespoons diced red bell pepper
3 ounces fresh mint leaves, chopped
1 tablespoon minced onion
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
Pinch cayenne pepper

Steps:

  • For the relish: Cook the peppers and onions in some olive oil in a skillet over medium heat until soft. Add the vinegar, sugar, dry mustard, cayenne pepper and garlic. Lower the heat and cook until all the ingredients are cooked down and thick enough to top the burgers, about 15 minutes.
  • For the burgers: Mix the beef, lamb, bell peppers, mint, onions, allspice, cloves, coriander, cumin, black pepper and cayenne pepper. Form into 4 patties.
  • Cook the burgers to your liking in a skillet or on a grill. Serve with the red pepper relish.

1 teaspoon kosher salt

3/4 cup apple cider vinegar

1 small red beet, peeled, thinly sliced
1 large turnip, peeled, thinly sliced
4 tablespoons unsalted butter
6 cloves garlic, minced
3 tablespoons fresh flat-leaf parsley, minced
20 ounces ground lamb (50 percent shoulder, 50 percent leg)
4 cloves garlic, minced
1 medium onion, minced
1 bunch parsley, stemmed, minced
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon cinnamon
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 medium brioche buns
Lettuce leaves
Sliced tomatoes
Sliced onions

Steps:

  • For the tahini-yogurt sauce: In a bowl, whisk together the Greek yogurt, tahini, salt, lemon zest and juice and 1 tablespoon water. Cover and reserve in the refrigerator.
  • For the pickled turnips: In a small saucepan over medium-high heat, combine 1 1/2 cups water with the cider vinegar, brown sugar, salt, bay leaves, garlic, beets and turnips. Bring to a quick boil to dissolve the sugar. Set aside to cool, then refrigerate until ready to serve. Serve the turnips only; discard the beets, bay leaves and pickling brine.
  • For the garlic butter: In a medium saucepan over medium heat, add the butter and garlic and cook until fragrant, 5 to 6 minutes. Add the parsley and mix well. Set aside in a small bowl.
  • For the lamb kofta burger: Prepare a grill or grill pan for medium-high heat.
  • In a medium mixing bowl, add the ground lamb, garlic, onion, parsley, allspice, coriander, cumin, cinnamon, salt and pepper. Mix all the ingredients together to evenly distribute the spices, being careful not to overmix. Divide into six equal portions and shape into a round, tight patties, about 4 inches wide.
  • Place the patties on the grill, spaced 3 inches apart to prevent flare ups. Grill for 3 minutes on the first side to develop a crust. Flip, and cook on the second side until medium-well, 2 minutes. Set aside.
  • Brush the cut sides of the brioche buns lightly with garlic butter and toast on the grill until golden and crisp, 5 to 10 seconds. Flip, and toast the outsides until lightly toasted, another 5 to 10 seconds.
  • To assemble: Layer the bottom buns with a burger, some tahini sauce, pickled turnips, lettuce, tomato and onion. Cover with the top buns and serve immediately.

Steps:

  • In a small bowl, mix together cucumber, garlic, yogurt, and lemon juice; set yogurt sauce aside. Form lamb into about a 1/2-inch-thick patty. Sprinkle both sides with coriander and season with salt and pepper.
  • In a small skillet, heat oil over medium-high. Add lamb patty to skillet and cook 3 minutes. Flip and cook just until cooked through (a little pink in the center is fine), 2 to 3 minutes. Transfer patty to bun and top with yogurt sauce.

1 medium onion, very finely chopped
3/4 cup chopped fresh flat-leaf parsley
1 tablespoon ground coriander
3/4 teaspoon ground cumin

1 1/2 teaspoons freshly ground black pepper
1/4 cup olive oil, plus more for grilling
8 thick medium pita breads with pockets

Steps:

  • Using a fork, mix lamb, onion, parsley, coriander, cumin, cinnamon, salt, pepper, and 1/4 cup oil in a large bowl. Cover and chill at least 1 hour.
  • Prepare grill for medium heat and oil grate. Working one at a time, open each pita pocket by cutting along seam, halfway around perimeter. Spoon filling into pitas, spreading to edges. Close, pressing on filling to seal.

2 tablespoons chopped fresh oregano leaves
3 tablespoons minced red onion
2 tablespoons whole-grain mustard (recommended: Pommeray)
1 1/2 tablespoons olive oil or other oil
8 silver dollar onion rolls, halved
1 Roma tomatoes, each cut into 4 pieces
8 washed baby red oak leaves, from1 head
1 red onion, shaved in slices
Curry Aioli, recipe follows
8 frill picks
8 large pimento olives
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon roasted granulated garlic
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1 teaspoon kosher salt
1/2 teaspoon ground allspice
1/2 teaspoon dry mustard, such as Coleman's
1/2 teaspoon dried basil
1/4 teaspoon dried red pepper flakes
1/4 teaspoon dried marjoram
2 ounces lemon juice
2 cups mayonnaise, good quality
2 tablespoons minced garlic, minced
1 tablespoon roasted garlic pepper
1 tablespoon curry powder

Steps:

  • In mixing bowl add the ground lamb, minced garlic, Culhanes Spice Blend, oregano, red onion and mustard. Mix the ingredients together gently. Do not overwork the meat or it will become tough. Form the mixture into mini burgers, approximately 2 1/2 ounces each, and put on a pan lined with waxed paper or parchment paper. Refrigerate for 5 minutes.
  • Toast the buns in a large nonstick saute pan, griddle or cast iron pan over low heat. Remove the rolls to a platter. Add the oil to the pan, and when the oil is hot add the lamb burgers. The burgers must caramelize the fats, so do not flip or move them around in the pan. Let fry for about 3 to 5 minutes each side, depending on your desired doneness.
  • To assemble: Put the roll bottoms down first, then add a dollop of Curry Aioli. Top each roll with lettuce, tomato, lamb burger, shaved red onion. Add a dollop of Curry Aioli to the roll top and cover the burger. Secure the roll with a frill pick skewered with an olive on top!
  • Combine the onion powder, garlic powder, granulated garlic, black pepper, white pepper, kosher salt, allspice, mustard, basil, red pepper flakes and marjoram in a small bowl.
  • Add the lemon juice to a blender or mixing bowl, then add all the remaining ingredients. Blend together until the mixture becomes light yellow and fully mixed. Pour into a bowl, then cover and refrigerate to firm up and allow the flavors develop, about 15 minutes. Serve with lamb burger sliders or any other sandwich!

  • Melt butter, mix all incredient except cheese and form into equal size burget patties. Get the grill HOT, cook roughly 4-5 minutes per side. Put cheese on the burgers in time to melt and warm the buns too. These burgers have a lot of liquid so be diligent about the grill flaming too much.

1 tablespoon capers, chopped
6 - 8 large basil leaves, julienned
1/4 teaspoon freshly ground pepper
1/2 cup cornmeal (or flour), for coating
1 tablespoon vegetable oil, for cooking
3 tomatoes, diced
1 red onion, diced
1 teaspoon balsamic vinegar
Salt and pepper to taste
1 teaspoon olive oil
4 Kaiser rolls or hamburger buns, split
2-3 tablespoon soft goat cheese or chevre

Steps:

  • To make the burgers, combine ground lamb, shallot, capers, basil and pepper in a large bowl and mix well. Divide mixture into four burgers. Spread cornmeal over a plate and press burgers into mixture to coat. Preheat barbecue or grill pan and brush with oil. Cook the burgers over a medium to high heat for 6 - 7 minutes each side or until cooked as desired. To make the relish, place the tomatoes and onion into a preheated saute pan with the olive oil. Cook for 5 minutes. Add sugar, vinegar, salt and pepper. Remove from heat and let cool. Grill the buns, cut side down, until lightly toasted. Spread with goat cheese and top with the burgers. Serve with the tomato relish.

LAMB BURGER MIDDLE EASTERN STYLE

I love lamb burgers and I found this one in a Canadian Living magazine. I have tweaked the recipe. Original recipe suggested grilled eggplant to top the burger or you may enjoy grilled zucchini - I am not fond of either I like my tomato on top and mushrooms on the side with any burger. You may substitute Hummus for the yogurt topping. You can make these patties ahead store in the fridge tightly covered or wrap well and freeze them for up to a month.

1 cup minced onion
1/4 cup panko breadcrumbs or 1/4 cup regular breadcrumbs

salt & pepper
1/4 teaspoon hot paprika

Steps:

  • Beat the egg, add ketchup, beat more to completely blend.
  • Stir in the onion, crumbs, dill, parsley, garlic, pine nuts, salt pepper, paprika & cayenne.
  • Add the lamb and mix well (use your hands for easy mixing).
  • Form 3 or 4 patties.
  • Either BBQ or pan fry. Internal temperature should read 160°F.
  • If pan frying brown one side of the patties over high heat, flip, cover with a lid, lower heat to medium and cook the other side,.
  • If you are serving mushrooms add them to the pan when you flip the burger and cover the pan - they will be beautifully browned.
  • Top the burger with yogurt and any condiments you like--tomatoes, pickles, pickled peppers, eggplant, hummus--your choice.

1/3 Pound Ground Lamb
1 Good Quality Bun (I use a good kaiser roll or cibatta roll, whatever you like is good)
1/2 Chorizo Sausage
1 Egg
1/4-1/3 Cup Pickles
1/4 Cup Onions sliced
1 Serrano Pepper
Malt Vinegar
Salt & Pepper
Good Cheese ( any good cheese you like, I used Hoffman's Super Sharp the last time)
Parmeseano Reggiano

Steps:

  • Toast your bun with butter, and roast your serrano pepper. Once roasted blister the pepper in a ziploc bag so that you can peel it. Use the egg to make a scrambled egg patty about the same size as your bun. Slice the Chorizo nice and thin and saute it. Take your pickles, and your serrano, remove the seeds and ribs from the serrano, and chop both the pepper and the pickles finely, then combine them in a side bowl and add salt and pepper and a touch of malt vinegar to the relish. Take your slicd onions and saute them until soft but still with a slight crunch. Prepare your lamb patty, treat each side with malt vinegar salt and pepper, and sear burger on medium high heat. Add cheese in the last 2 minutes to melt on top of burger, and finely grate parmesean on top of cheese. Build your burger from the bottom up, onions, egg patty, lamb patty, sliced chorizo then your relish on top. Enjoy

SPICED LAMB BURGER WITH TZATZIKI

This recipe is another very easy and super quick meal to make that tastes great and is budget friendly.It is on the table in about 30 Min's. I served these on bagels last night but serve with what ever bread you fancy I usually serve mine on Turkish bread but I couldn't get any yesterday. I list 250g of tzatziki as this is the weight of the store bought brand that I buy. Sometimes I do have leftovers, but it does keep in the fridge and you can use the leftovers to dip vegetables in for a nice healthy light lunch the next day. Note: Sumac: A purple-red astringent spice ground from berries growing in the Mediterranean; adds a tart, lemony flavour to food.

  • Combine watercress with lemon juice in another bowl.

400g can chickpeas , drained
200g tub low-fat hummus
2 roasted red peppers , from a jar, wiped dry, then finely chopped
400g lean lamb mince
small bunch mint leaves, half chopped
1 tbsp cumin seeds
drizzle of olive oil
4 large pitta breads
100g tub pomegranate seeds

Steps:

  • Lightly crush the chickpeas in a large bowl with a potato masher. Tip half into another bowl, mix with the hummus and peppers, then set aside. Add the mince to the remaining mashed chickpeas, along with the chopped mint, the cumin seeds and some seasoning. Mix with your hands until well combined, then shape into eight small burgers.
  • Heat the oil in a large frying pan, add the burgers - or fire up the BBQ and brush the burgers with oil - and cook for 5 mins on each side until golden and cooked through. Meanwhile, toast the pitta bread. Split each pitta in half and fill with some red pepper hummus, the remaining mint leaves, two burgers and some pomegranate seeds.

I threw this together one Saturday evening and I thought it came out a winner. It has a lovely tang from the hot sauce and ginger/soy. I used a prepared Ginger sauce(1 tbsp) however in the recipe I changed it to 1 Tbsp Teriaki sauce and 1/2 tsp grated ginger because it may not be available everywhere..Just repeat as many times as you wish. Make it as hot as you want or tame it a bit. Great served with oven Fries

6 ounces ground lamb, shaped into two patties
1 tablespoon teriyaki sauce
1/2 teaspoon fresh grated ginger
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, to taste

pepper
4 tablespoons aged cheddar cheese (or your favorite)
1 slice sweet onion
1 slice tomatoes
lettuce leaf
6 sliced mushrooms
1 whole wheat buns or 1 hamburger bun
cooking spray, on the fry pan

Steps:

  • Place the teriaki sauce, ginger, worcestershire sauce,hotsauce cheese, salt& pepper on one of the patties, cover with the other pattie and seal carefully.
  • Slide the sealed pattie into a heated pan (hot temp).
  • Brown for 3 minutes, flip the burger, turn heat down to low medium, cover pan and cook 3 minutes,flip again, add Mushrooms, return cover and continue cooking until done over low heat.
  • (apprx 12 minutes total).
  • Meanwhile toast your bun, butter it if you wish I usually don't.
  • When your pattie is cooked and the bun toasted place pattie on the bun along with all the condiments.
  • Enjoy.

2/3 cup Greek Yogurt
1/2 English cucumber, seeds scooped out, skin peeled off, and cut into chunky half moons
1/4 cup roughly chopped mint leaves
1 bunch roughly chopped chives (about 1/3 cup), divided
3 tablespoons roughly chopped fresh oregano (divided)
3 medium cloves garlic, minced (about 1 tablespoon)
2 teaspoons fresh juice from 1 lemon
Kosher salt and freshly ground black pepper
14 ounces ground lamb
A drizzle of olive oil
2 warm pitas

Steps:

  • 1) Preheat the oven to 350°F. Combine yogurt, cucumber, mint, 3 tablespoons chives, 1 tablespoon chopped oregano, 1 teaspoon garlic, and lemon juice in a small bowl. Season to taste with salt and pepper. 2) In a large bowl, gently combine the lamb, remaining 2 teaspoons garlic,remaining chives, remaining oregano leaves, and 1/2 teaspoon pepper. Form the mixture into two burgers, and drizzle on both sides with olive oil. Season liberally with salt. Preheat a coal or gas grill to high heat. Alternatively, rub a grill pan with olive oil and preheat over medium-high heat until lightly smoking. Grill burgers, turning occasionally, until an instant read thermometer inserted into the center registers 125 to 130°F for medium rare, or 135 to 140°F for medium, 5 to 9 minutes. Transfer to a large plate and tent with foil for 3 minutes 3) Stuff burgers in pita and serve with tzatziki.

1 dash dried oregano, crushed
1 dash garlic powder
1 pinch pepper
1/4 teaspoon onion powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
2 pieces pita bread rounds (6-inch), halved crosswise
1 cup chopped fresh spinach
3/4 cup Chobani plain low-fat yogurt
10 slices medium cucumber, peeled and chopped
2 pieces green onions, thinly sliced
1/2 teaspoon granulated sugar
1 tablespoon chopped fresh mint or 1 teaspoon dried mint, crushed

Steps:

  • Combine spices
  • Form into patties
  • Grill over medium coals or broil about 5 minutes on each side or to desired degree of doneness
  • In a separate bowl, combine yogurt, chopped cucumber, sliced green onion, mint and sugar.
  • Split open each pita half forming a pocket. Place gyro-burger in each pocket; top with chopped spinach and yogurt mixture.

1 clove garlic, finely chopped

1/4 cup unflavored bread crumbs
1/2 tsp coriander (optional)
Salt & Pepper to taste
1 egg (can use whites only)
Feta or goat cheese to melt on top
Toasted pita bread or bun
1 small container plain yogurt
1 tsp chopped mint
2 Tbsp finely chopped cucumber
2 Tbsp finely chopped red onion
Fresh tomatoes (optional)

Steps:

  • Mix ground lamb & spices, and bread crumbs. Add egg to moisten & hold burgers shape.
  • Press into thick burger & grill till medium well done. Best if done on grill. Melt cheese on top if desired. Place on toasted pita bread or bun.
  • Mix yogurt with mint, cucumber and red onion. Top burger with yogurt sauce & optional chopped fresh tomatoes.

1 1/2 lbs ground lamb
1/2 medium onion, finely minced
1 tablespoon Dijon mustard
1/4 cup fresh parsley, chopped
2 tablespoons of fresh mint, finely chopped
2 teaspoons fresh oregano, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
4 hamburger buns
tzatziki
crumbled feta
thinly sliced red onion
kalamata sliced ripe olives
lettuce
cucumber, slices
tomatoes, slices

Steps:

  • In a large bowl, use a fork to gently combine lamb, onion, Dijon, parsley, mint, oregano, salt and pepper. Gently form into four 1-inch thick patties.
  • Heat grill to high. Place patties on the hottest part of the grill and sear until browned 1-2 minutes per side.
  • Move patties to the cooler part of the grill and continue grilling until desired doneness, 4-8 minutes per side.
  • Place burger on split bun and garnish as desired.

MIDDLE EASTERN SPICED LAMB BURGER

A recipe I found in the Australian Womans Weekly. I made them up for my husband to BBQ and they were absolutely delicious. You can either roast the red capsicums (peppers) yourself or buy them pre-made.

1 tablespoon olive oil
1 loaf Turkish bread, cut into 4 portions, each split in half
1/2 cup hummus
70 g Baby Spinach
150 g roasted red capsicums, sliced thickly (roasted peppers)
1/2 small red onion, sliced thinly
chili sauce (optional)
3/4 cup fresh breadcrumb
2 tablespoons milk
500 g lamb mince
1 medium brown onion, coarsely grated
1/4 cup chopped of fresh mint
1 garlic clove, crushed
2 teaspoons ground cumin

Steps:

  • Place breadcrumbs in a medium bowl and pour the milk over. Add the mince, onion, mint, garlic and cumin. Season well with salt and freshly ground black pepper. Use your hands to mix until well combined.
  • Divide the mixture into 4 even portions and shape each portion into a patty about 15cm in diameter and 1cm thick.
  • Heat the oil in a large non-stick frying pan over medium heat until hot. Add the Lamb Patties and cook for 5 minutes. Turn and cook the patties for a further 2-3 minutes or until just cooked through. Alternatively you can BBQ these on a grill.
  • Meanwhile, preheat grill on high. Place bread portions, cut-side up, on an oven tray and toast under preheated grill for 2-3 minutes or until golden brown. To serve, spread the bottom halves of the bread portions with a little hummus.
  • Top with the spinach, roasted red capsicum, Lamb Patties, onion, remaining hummus, red onion and the chilli sauce. Season with freshly ground black pepper.
  • Cover with top of the bread portions and serve immediately.

ORGANIC LAMB BURGER WITH FRESH MINT YOGURT AND QUINOA



Organic Lamb Burger with Fresh Mint Yogurt and Quinoa image

This dish is a favorite of mine because it is packed with flavor and low on carbohydrates. The addition of quinoa adds so many nutrients and lots of fiber. I love lamb!!

1 cup dry quinoa
1 pound ground organic lamb meat
2 teaspoons ground cumin
Pinch cayenne pepper
1 clove garlic, minced
1 egg
1 small Spanish onion or 1/2 large, diced small
Salt
2 tablespoons vegetable oil
1 cup 0-percent-fat Greek yogurt
2 tablespoons fresh mint, chopped

Steps:

  • Rinse the quinoa in a large fine mesh strainer with cold water, then transfer to a small saucepan. Cover with 2 cups cold water, bring to a boil, and then reduce to a low simmer and cook for 15 to 20 minutes. Remove from the heat, fluff with a fork and let cool before mixing into the lamb.
  • Mix together the quinoa, lamb, cumin, cayenne, garlic, egg, onions and some salt in a large bowl until the mixture comes together and is smooth. Form the mixture into 4 balls, flatten down into patties and place on baking sheets.
  • Heat a large nonstick saute pan over high heat for 1 minute, and then add the oil. Cook the patties until browned, 3 minutes per side, and then cover and cook over low heat for 10 to 12 minutes.
  • Mix together the yogurt and mint in a separate bowl and season with salt.
  • To plate the dish, place the lamb burger over your favorite salad or I recommend a fresh tomato puree. Top each with a dollop of the mint yogurt and serve.
